CRISPY CHICKEN TAQUITOS

Vegetable oil, for frying
2 cups shredded rotisserie chicken
1 cup shredded mild white Cheddar cheese
1/2 teaspoon ground cumin
1/2 cup chunky prepared salsa, plus more for serving, optional
Eight 6-inch flour tortillas
1/2 cup sour cream, for serving, optional

Steps:

  • Add enough oil to a heavy bottom straight-sided pan to come 2 inches up the sides. Heat over medium heat to 350 degrees F on a deep-fry thermometer.
  • Meanwhile, mix together the chicken, Cheddar, 1/2 cup salsa and the cumin in a medium bowl. Spoon about a 1/4 cup of the mixture into the center of each tortilla. Roll the tortillas tightly around the filling and secure with a toothpick.
  • Working in batches of 2 or 3 at a time, place the taquitos in the hot oil and fry, flipping as needed to brown evenly, until crispy and golden brown, about 3 minutes. Using tongs, remove the taquitos to a paper-towel lined plate to drain. Continue with the remaining taquitos. Serve alongside salsa and sour cream for dipping, if desired.

This baked version of taquitos is healthier and less mess in the kitchen than the traditional fried ones. The flavorful chicken filling makes great tacos as well. Serve with salsa, sour cream and guacamole. Leftover chicken or a rotisserie chicken is perfect for the filling.

1 tablespoon olive oil, more for brushing tortillas
1 cup chopped onion
2 garlic cloves, chopped
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon sea salt
1/4 cup chopped cilantro
2 cups shredded cooked chicken meat
2 cups low-sodium gluten-free chicken stock
12 (6 inch) corn tortillas
1 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 425°F and oil a baking sheet. Heat olive oil over medium heat in a skillet. Add onion and cook until starting to soften and turn translucent, 3 to 5 minutes. Add garlic, cumin, paprika and salt. Stir to combine and cook 2 to 3 minutes longer, until fragrant. Take from heat and stir in cilantro and chicken. Set aside.
  • Bring chicken broth to a simmer in a skillet or pot wide enough to hold tortillas. When broth simmers, dip tortillas briefly, one at a time, just to soften, 1 to 2 seconds. Lay tortilla on a work surface and spread 2 or 3 tablespoons chicken mixture over bottom third. Top with a tablespoon of cheese and roll up. Place seam side down on the baking sheet. Repeat with remaining tortillas. Spray or brush tortillas lightly with oil and bake until crisp and lightly browned, 12 to 15 minutes. Serve immediately.

Easy homemade Chicken Taquitos made with shredded chicken, cheddar cheese, and a creamy salsa blend rolled in tortillas and baked or fried until crispy.

2 cups cooked shredded chicken ((I use rotisserie))
6 ounces cream cheese (, softened)
1/4 cup salsa (, your favorite kind)
1/4 cup sour cream
1 cup shredded cheddar cheese
1 cup baby spinach leaves (, chopped)
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
salt and freshly ground black pepper (for taste)
15-20 corn or flour tortillas
guacamole, sour cream, salsa, hot sauce

Steps:

  • Add cream cheese, salsa and sour cream to a mixing bowl and stir until smooth. Add remaining ingredients (except the tortillas) and toss to combine. Taste and add more seasoning, if needed.
  • For corn tortillas, heat a non-stick griddle over medium high heat. Cook tortillas for about 15 - 30 seconds on each side until soft and pliable. Remove tortillas to a plate covered with tinfoil to keep them warm and pliable.
  • Place a large spoonful of filling in a line along each tortilla and roll tightly. Secure with a toothpick if needed.
  • Baked Taquitos: Preheat oven to 425 degrees F. Spray the tops of the tacos with cooking spray , or brush them lightly with oil. Bake for 15-20 minutes or until the shells are crispy.
  • Fried Taquitos: Add about 1 1/2 inches of oil to a large skillet and heat to medium-high. Once hot (the tortillas should sizzle immediately when added to the oil). Fry the taquitos in small batches, for a few seconds on each side, rotating them as they cook, until they are golden and crispy on all sides. Place them on a paper towel lined plate.
  • Serve taquitos with guacamole, salsa and sour cream.

2 tbsp. chili powder
1 tbsp. salt
1 tbsp. ground cumin
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. ground black pepper
5 c. shredded rotisserie chicken (from 2 chickens)
2 c. shredded Monterey Jack cheese
2 (4 oz.) cans chopped green chiles, drained
20 (6-inch) soft flour tortillas
20 toothpicks
Canola oil, for frying
Sour cream, guacamole, and salsa, to serve

Steps:

  • In a large bowl, stir together the chile powder, salt, cumin, garlic powder, onion powder and black pepper. Add the chicken and toss to coat. Stir in the cheese and green chiles.
  • Working with 1 tortilla at a time, spoon about 1/3 cup of the chicken mixture onto the center of the tortilla. Use your fingers to press the chicken mixture into a tight line across the middle of the tortilla. Tightly roll the tortilla around the filling; secure the tortilla in place using one toothpick. (Weave the toothpick through the tortillas where they overlap to close, parallel to the roll). Repeat with the remaining chicken mixture and tortillas.
  • Preheat the oven to 250°. Heat 1/2-inch of oil in a large cast iron skillet over medium heat until it registers 375°. Fry 4 taquitos, turning occasionally, until golden brown on all sides, 1 to 2 minutes. Transfer to a paper towel lined baking sheet; keep warm in oven. Continue frying until all taquitos are cooked. Serve hot with sour cream, guacamole, and salsa.

1/3 cup cream cheese
1/4 cup green chili salsa
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon granulated garlic or 1/4 teaspoon garlic powder
3 tablespoons chopped cilantro
2 tablespoons sliced green onions
2 cups shredded cooked chicken
1 cup grated monterey jack pepper cheese
16 small corn tortillas
kosher salt
cooking spray

Steps:

  • Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
  • Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
  • You can prepare up to this step ahead of time. Just keep the mixture in the fridge.
  • The corn tortillas are harder to roll without cracking. For the corn tortillas: work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.
  • Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.
  • Then roll it up as tight as you can.
  • Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.
  • Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown. Makes around 16 taquitos.

12 (6 inch) soft taco flour tortillas
2 cups mozzarella cheese, grated
4 ounces cream cheese, softened
1/3 cup frank's hot sauce
1/3 cup milk
2 tablespoons butter
1 teaspoon cajun seasoning
1 teaspoon garlic powder
2 tablespoons vegetable oil
blue cheese dressing
celery rib

Steps:

  • Preheat oven to 425 degrees.
  • In a small sauce pot over medium low heat, melt butter.
  • Add cajun seasoning, garlic powder. Stir to combine and cook for 1 minute.
  • Add cream cheese and stir until melted and completely combined with butter and spices.
  • Wisk in hot sauce and milk and simmer for 5 - 8 minutes. Add salt to taste. Combine chicken and sauce. Cool.
  • Lay out a tortilla; fill with about 1/4 - 1/3 cup chicken and 2 tablespoons of mozzarella cheese.
  • Tightly roll up taquito and place seam side down on a greased baking sheet; repeat until chicken is gone. Note: To keep the tortillas rolled, place a few dabs of water on the overlapping end.
  • Brush taquitos with vegetable oil on all sides.

This is one of my kids favorite recipes. We all love taquitos and since we can change use our choice of cheese and fillings they think they're better than the frozen taquitos in the store.

2 cups cooked chicken, shredded
1 (10 ounce) can mild enchilada sauce
1 cup mozzarella cheese (or a shredded blend) or 1 cup monterey jack pepper cheese (or a shredded blend)
1/2 cup onion, minced
1 (4 ounce) can green chilies, diced
1 teaspoon garlic salt
3/4 cup vegetable oil
24 corn tortillas
oil (for deep frying)
sour cream
salsa
guacamole

Steps:

  • In a large bowl combine chicken, enchilada sauce, cheese, onion, chilies and garlic salt. Mix well and set aside.
  • In a small skillet, heat oil. Use tongs to dip each tortilla in oil for about 5 seconds on each side. Drain on paper towels. Keep warm.
  • Place 2 tablespoons of chicken mixture onto each tortills. Toll tortillas as tightly as possible and hold closed with a toothpick.
  • Heat additional oil in skillet. Deep fry taquitos until browned (about 1-5 minutes depending on how crisp you want them). Drain on paper towel and serve with sour cream, salsa, or guacamole.
  • Serve 2 taquitos per person.
  • To freeze: Prepare taquitos as directed. Allow to cool and place on a baking sheet. Freeze until firm and then transfer to a freezer bag.
  • To serve: Microwave to thaw and reheat.

1 1/2 lbs leftover chicken or 1 1/2 lbs carnita meat
4 tortillas, flour or 4 prepared taco shells
mixed salad green
tomatoes, diced
jalapeno, nacho, sliced
onion, diced
1/2 cup shredded cheese
1 cup mayonnaise, light
1/3 cup 2% low-fat milk
2 jalapenos
3 ounces green chilies
1/3 cup cilantro leaf
1 (1 ounce) hidden valley ranch packet dry ranch dressing mix
2 teaspoons garlic powder
1/2 tablespoon lime juice

Steps:

  • Put all dressing ingredients into a food processor and blend well.
  • Refrigerate dressing overnight for best results.
  • Thaw leftover chicken or carnita meat.
  • I use the Infomercial tortilla shell pans to make my shells with flour tortillas or you can use prepared taco shells.
  • In a large skillet, heat meat with onion and season as needed.
  • Fill tortilla shell with green salad, tomatoe, jalopenos, meat mixture, and cheese.
