BLACK FOREST CHOCOLATE CHIP & CHERRY COOKIES

An excellent cookie for chocolate and cherry lovers alike. As you may know, the appellation 'Black Forest' does in fact refer to a forest of that name found in Germany, where the Black Forest Gateau was believed to have originated. Since then chefs have used their imagination to apply the combination of chocolate and tart cherries, customarily soaked in Kirschwasser (also credited to that region, where tart morello cherries grow) to a number of different desserts and delicacies. That being said, this delicious cookie is very adaptable to suit different tastes. It can be made without the chocolate (just add an extra 1/2 cup or so of cherries), extra chocolatey (add 2/3 cup unsw cocoa powder to the batter with the flour), kid friendly (soak the cherries in juice or a simply syrup), or easily halved. These cookies are very moist and chewy, which I love, but if you prefer crunchier cookies you may want to use a different batter base. This recipe is adapted from Dede Wilson's "Chocolate Chip Cookies". Cook time includes chill time. Cheers!

1 2/3 cups dried tart cherries, coarsely chopped
1/2 cup kirsch (it will be sweeter with the liqueur) or 1/2 cup cherry flavored liqueur (it will be sweeter with the liqueur)
2 2/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, room temperature (2 sticks)
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 large eggs
3 cups bittersweet chocolate chips (15 oz)

Steps:

  • Microwave the cherries and Kirsch on high for about a minute. Let them sit for 15 minutes to plump the cherries and cool down.
  • Whisk flour, baking soda, and salt together in a medium bowl.
  • In a large bowl with an electric mixer on medium-high, beat (using the flat paddle attachment) butter until creamy, about 2 minutes.
  • Add sugars gradually, beating until light and fluffly, about 3 minutes. Scrape down the bowl as needed.
  • Beat in extracts and then eggs.
  • Turn the mixer down to low and add the flour in three increments, scraping down the bowl frequently. Do not overmix - I usually turn off the mixer and hand mix the last remains.
  • Stir in the chocolate chunks, the cooled cherries, and up to 1 tbsp of the kirsch (discard, or drink, the rest!).
  • Cover the bowl and chill for at least 2 hours
  • Preheat the oven to 375°F Line two cookie sheets with parchment paper or grease them.
  • Drop chilled dough by rounded tablespoon at 2 inch intervals (they spread out a good bit) onto the sheets.
  • Bake for about 12 minutes (give or take based on your 'chewiness' preference), or until the edges and tops turn golden brown. Remove from the oven, cool for several minutes, and enjoy!

Inspired by the nostalgic candy, this indulgent dessert is both familiar and elegant. Almond paste fortifies the rich aroma of the cherries, while kirsch adds cherry and floral notes. High-quality candied cherries, such as Luxardo or Amarena, work best here for flavor, but you can also use cocktail maraschino or glace cherries in a pinch.

1 cup all-purpose flour (see Cook's Note)
1/2 cup Dutch-process cocoa
1 teaspoon baking powder
1/2 teaspoon kosher salt
6 tablespoons almond paste
1/2 cup sugar
6 tablespoons unsalted butter, at room temperature
1/2 teaspoon pure vanilla extract
1 large egg
1 1/2 teaspoons kirsch, optional
30 well-drained good-quality cherries in syrup (about one 14-ounce jar), such as Luxardo, cherry syrup reserved for the glaze
1/2 cup sugar
4 ounces dark chocolate chips

Steps:

  • For the cookies: Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Whisk together the flour, cocoa, baking powder and salt in a bowl until evenly combined; set aside. Break the almond paste into small pieces in the bowl of a stand mixer, add the sugar and beat on low speed until the paste forms small crumbles in the sugar, about 2 minutes. Add half the butter and continue beating until the mixture starts forming large clumps and wiping the sides of the bowl. Add the remaining butter, increase the speed to medium high and beat until pale and fluffy, about 3 minutes. Add the vanilla, egg and kirsch if using and beat until smooth. Add the dry ingredients and beat on low until the dough just comes together.
  • Scoop 30 tablespoon-size portions of dough, roll into balls and divide between the prepared baking sheets, spacing them evenly apart. Press a cherry in the center of each dough ball, then refrigerate the cookies on the baking sheets for 30 minutes.
  • Bake, rotating the baking sheets from top to bottom and front to back halfway through, until the cookies are puffed and set at the edges, 12 to 15 minutes. Cool the cookies on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely.
  • For the glaze: Combine the sugar, 2 tablespoons of the reserved cherry syrup and 1/4 cup water in a small saucepan and bring to a boil, stirring to dissolve the sugar. Remove the saucepan from the heat, add the chocolate chips and stir slowly until smooth.
  • Using a teaspoon, spoon the chocolate glaze over the cherry of each cookie, letting it drip down the sides. Allow the glaze to set before serving, about 10 minutes. Store the cookies in a single layer in an airtight containers for up to 5 days.

200 g Unsalted Butter
200 g Dark Chocolate
3 Large Eggs
275 g Golden Caster Sugar
90 g Plain Flour
35 g Cocoa Powder
200-300 g Cherries ((de-stoned and halved))
350 g Opies Black Cherries in Kirsch
200 g Dark Chocolate Chips
100 g Dark Chocolate
Triple Chocolate Curls

Steps:

  • Preheat your oven to 180C/160C Fan and line a 9″ Square baking tray with parchment paper.
  • Melt together the Butter, and Dark Chocolate in a heatproof bowl over a pan of boiling water, or in the microwave for 1-2 minutes until melted. Leave to the side to cool to room temperature!
  • Using an electric whisk/stand mixer, whisk together the Eggs & Golden Caster Sugar for a few minutes until the colour has turned pale, is very mousse like, and is double the original volume of the amount of eggs + sugar!
  • You will know its done because when you lift the whisk up out of the mix it should leave a trail for a couple of seconds before disappearing!
  • When whisked, pour the cooled chocolate mix over eggs and fold together carefully. It might take some time, but be patient - you don't want to knock out the air you made up on the previous step!
  • Once completely combined, sift the cocoa powder and plain flour on top of the chocolate mix and then fold together again - still be careful to not knock out the air!
  • Drain the Black Cherries in Kirsch from their jar, and keep the liquid. Fold through the Cherries in Kirsch, the fresh cherries, the chocolate chips, and 4tbsps of the Kirsch liquid from the jar.
  • Bake in the oven for 35-40 minutes! Once baked, leave to cool in the tin completely.
  • If you are decorating them, drizzle over the 100g of melted Dark Chocolate, and then sprinkle on some triple chocolate curls, and maybe even a dash of icing sugar! Enjoy!

2 cups all purpose flour
1/4 cup sugar

1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
3 ounces semisweet chocolate, coarsely grated
1/2 cup chilled whole milk
1 large egg
Cherries
1 1/2 pounds fresh Bing cherries, stemmed, pitted, halved
1/4 cup sugar
1 tablespoon kirsch (clear cherry brandy)
1/3 cup cherry jam
Topping
1 1/2 cups chilled whipping cream
2 tablespoons sugar
1 tablespoon kirsch

Steps:

  • For biscuits:
  • Preheat oven to 400°F. Line large baking sheet with parchment paper. Combine flour, sugar, baking powder, and salt in large bowl; whisk to blend. Add butter and rub in with fingertips until mixture resembles coarse meal. Mix in chocolate. Beat milk and egg in small bowl to blend. Gradually add milk mixture to dry ingredients, tossing until dough comes together in moist clumps. Gather dough together. Turn out onto lightly floured surface and gently knead 5 turns to combine. Shape gently into 8-inch-long log. Cut log crosswise into 8 rounds; shape each into 2 1/2x3/4-inch round. Arrange rounds on prepared baking sheet.
  • Bake biscuits until bottoms are golden and tester inserted into center comes out clean, about 15 minutes. Cool on rack 15 minutes. (Can be made 6 hours ahead. Cool completely. Wrap in foil and rewarm in 350°F oven 10 minutes before continuing.)
  • For cherries:
  • Combine cherries, sugar, and kirsch in medium bowl. Let stand until sugar dissolves and juices form, tossing occasionally, about 3 hours. Strain cherry juices into heavy medium saucepan. Mix in jam. Cook over medium heat until jam melts and juices form thick syrup, stirring often, about 8 minutes. Mix syrup into cherries. (Can be made 2 hours ahead. Let stand at room temperature.)
  • For topping:
  • Beat cream, sugar, and kirsch in large bowl until peaks form. Cover and refrigerate up to 2 hours.
  • Cut warm biscuits horizontally in half. Place bottom halves in shallow bowls. Spoon cherry mixture and cream over. Cover with biscuit tops and serve.
