Spicy King Prawns image

This wonderful shrimp recipe is by Nadia Roden from Party By the Pyramids. It is healthy and super fast. If you have all of the ingredients ready ahead of time, you can prepare the dish quickly, as guests arrive.

1/2 cup extra virgin olive oil
8 garlic cloves, minced
1 tablespoon sweet paprika
1 teaspoon sweet paprika
1 tablespoon ground cumin
1 1/2 teaspoons ground ginger
1/2 teaspoon cayenne pepper
3 lbs large shrimp, shelled and deveined
salt
1 cup coarsely chopped fresh cilantro or 1 cup flat leaf parsley

Steps:

  • Heat the olive oil in a very large skillet. Add the garlic, paprika (One Tablespoon plus One teaspoon), cumin, ginger and cayenne and cook over moderate heat until fragrant, about 1 1/2 minutes. Add the shrimp and cook, stirring, until they turn pink, 2 to 4 minutes. Season with salt and stir in the cilantro.
  • Transfer to a platter and serve.

An easy way to give a tasty zing to king prawns (jumbo shrimp). Tasty, healthy, can be done on an indoor grill or George Foreman, also will be a hit at BBQ's! We usually have this for dinner with salad and summer vegetables or a jacket potato. A great light tatsty meal for a summer evening.

80 ml olive oil
60 ml tomato ketchup
2 large garlic cloves, minced
2 tablespoons balsamic vinegar
2 tablespoons dried tarragon
1/2 teaspoon salt
2 teaspoons dried chili pepper flakes
300 g raw king prawns, peeled and de-veined

Steps:

  • Mix all ingredients except the prawns together in a bowl.
  • Add the prawns and stir thoroughly until they are well coated in the marinade.
  • Place, covered, in fridge for one hour.
  • Skewer the prawns - about 5 per skewer.
  • Cook for 6-8 minutes until prawns are pink all the way through. Use any leftover marinade for basting during cooking.
  • N.B: The cooking time is on a George Foreman - BBQ or grill may vary.

24 wonton wrappers
12 green shrimp, sheeled, deveined, cut in half and twisted into bundle
12 coriander leaves
2 1/2 cm fresh ginger, peeled and chopped
1 chili pepper, seeds removed and chopped
100 ml white wine
200 g unsalted butter
2 tablespoons light soy sauce
1 tablespoon lemon juice
salt and pepper
18 green shrimp, shelled and cleaned
4 shallots, finely diced
24 coriander leaves
salt and pepper

Steps:

  • To Make Ravioil:.
  • Spread 12 wonton wrapper on a flat surface.
  • Place prepared prawns in centre, coriander leaf on top.
  • PAint edge with water and place anotehr wonton wrapper on top.
  • Press edges together and cover with tea-towel. Set aside.
  • To make sauce:.
  • Put ginger, chilli in a saucepan and pout in wine.
  • Simmer mixture until reduced by half.
  • Turn heat low and gradually whisk in butter.
  • Add soy sauce, lemon juice, salt and pepper.
  • Set aside.
  • To cook prawns:.
  • Put whole prawns in steamer and sprinkle with ginger, shallots, coriander leaves, salt and pepper. Steam for 3 minutes.
  • To cook ravioli:.
  • Drop ravioli a few at a time into boiling salted water and cook 3 minutes. Drain.
  • To serve:.
  • Place 2 ravioli on plate, spoon over sauce and top with 3 prawns.
