HOMEMADE OAT FLOUR PIZZA CRUST
This healthy, super easy, hand-held oat flour pizza crust is made with just two main ingredients and is versatile enough to go with both traditional tomato-mozzarella toppings and less-traditional pizza situations such as a bbq chicken pizza or Hawaiian pizza. Dairy and gluten free friendly too!

Steps:
- Preheat oven to 400ºF and heat a large skillet (on the stove) over medium heat that has been sprayed with nonstick cooking spray.
- Add all crust ingredients to the bowl of a food processor or the pitcher of a blender. Blend until smooth.
- Pour mixture onto heated skillet; shape with the back of a spoon into a circle and spread for desired thickness. Cook for about 5 minutes and until edges start to brown and mixture is pretty set.
- Crust should be lifting some when it is ready to flip. Use a spatula to flip crust over in the pan and cook the other side for about 2-3 minutes.
- Spray a baking pan with nonstick cooking spray and transfer crust from skillet onto the pan.
- Add sauce and all desired toppings. Bake 10 minutes until cheese is melted and edges of the crust are slightly browned.
- Serve up and enjoy!

I got this recipe from a friend many years ago, and it makes a good, easy pizza crust. I believe those Fleishmann's packets equal about 2 or 2 1/2 tsp of yeast.

Steps:
- Mix and knead by the method of your choice (I like to use the bread machine).
- Let rise until doubled.
- Roll/spread it out into pizza pan.
- Spread a thin coat of olive oil over the crust to keep it from rising too much while you add the sauce and other toppings.
- Bake at 425 degrees for 15 minutes or until done.

- Preheat your oven to 450 degrees F and place a pizza stone inside (if using). My pizza stone is small, so I just used a regular pizza pan.
- If you're not using pre-riced cauliflower, put cauliflower florets in a food processor and pulse until very fine crumbs remain. Alternatively, you can grate the cauliflower using a cheese grater.
- Place cauliflower in a microwave-safe bowl, cover it with a paper towel and microwave for 5 minutes. Remove the cauliflower and let it cool. You can place it in the freezer for a couple of minutes to speed up the process.
- Once cool, wrap the cauliflower in a dishtowel and squeeze until it is completely dry. It is very important to get all of the moisture out.
