This is a simple but tasty macaroni salad made with zesty white pepper, jalapeno, and green onions.

1 (8 ounce) package uncooked elbow macaroni
¾ cup mayonnaise
2 tablespoons cider vinegar
1 teaspoon sugar
1 teaspoon kosher salt
¼ teaspoon white pepper
¼ cup green onions, sliced
2 jalapeno peppers, seeded and chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and rinse under cold running water.
  • In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, pepper, green onions and jalapeno peppers. Stir in the macaroni. Refrigerate until chilled before serving, at least 30 minutes.

3/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
2 teaspoons soy sauce
1 teaspoon hot sauce (such as Tabasco)
1 small red onion, diced, soaked in ice water at least 1 hour and up to 12 hours
1 large red bell pepper, diced
3 scallions (green parts only), thinly sliced
Kosher salt
12 ounces elbow macaroni
1 sprig dill, leaves finely chopped
4 sprigs basil, leaves torn

Steps:

  • Make the dressing: In a large bowl, whisk the mayonnaise, mustard, vinegar, soy sauce and hot sauce until smooth. Drain and dry the red onion and stir it into the dressing along with the bell pepper, scallions and a generous pinch of salt.
  • Make the pasta: In a large pot, bring 4 quarts of water to a rolling boil. Add a generous amount of salt. Add the pasta and cook, stirring from time to time, until al dente (chewy but not hard or raw tasting), 6 to 10 minutes. Drain; do not rinse the pasta. Spread it out on a large baking sheet to cool slightly, 5 to 10 minutes.
  • While the pasta is still warm, add it to the bowl with the dressing and let sit at room temperature, 10 to 15 minutes. Cover and refrigerate until ready to serve. Stir in the dill and basil just before serving and taste for seasoning.

3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper

Steps:

  • In a large bowl, combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

Why only "kinda" Amish? Good question - shows you're paying attention. While the recipe from which this was adapted proudly proclaimed to be Amish Macaroni Salad, I found it to be much too sweet and not eggy enough for our tastes. After playing a bit with proportions and trying different types of vinegar and mustard, this is what resulted -- and although it's only Kinda Amish, it is, indeed, Very Deelish. You may save one hard cooked egg and slice it to arrange on the top, then sprinkle with paprika. Or you can just put all of the eggs in the salad and mix in some paprika too, and garnish with a few little tufts of fresh parsley. Or, for the presentationally-impaired like myself, just use all the eggs right in the salad, and forget the paprika and parsley. Parsley's always a little bit suspicious in my book anyway - once I got some parsley from a salad bar and it was plastic. Yeah, it was part of the decoration, but you know, they could warn people. "Attention Restaurant Patrons: Salad Bar Decorations Are Non-Edible. Everything Else Is Okay To Eat. No, Really. We Mean It." Oh, by the way, you'll want to prepare this a day ahead, and chill overnight in a padlocked refrigerator. Otherwise, it'll vanish long before you planned to serve it.

1/4 cup distilled white vinegar
1/2 cup sugar
2 tablespoons prepared yellow mustard (no other kind will taste right!)
1 lb elbow macaroni

8 -10 hardboiled egg, diced (big chunks are okay by me, but chop them small if you like)
paprika or parsley (optional)

Steps:

  • Combine mayonnaise, vinegar, sugar and mustard; Chill in refrigerator until needed.
  • Cook macaroni as directed on package, just until tender; drain and cool.
  • Combine macaroni with celery, carrots, onions and eggs.
  • Pour mayonnaise mixture over all and stir to mix well.
  • Refrigerate overnight in tightly sealed container.
  • It may seem a bit wet at first, but after it chills overnight, it's just right.
  • There's no salt in this recipe-- if you must, add 1/2 teaspoon to the mayonnaise mixture.
  • We're not sodium restricted and we like it just fine without.

1 pound elbow noodles
2 celery ribs, finely diced

1/2 cup shredded carrots (from 1 medium carrot)
1/2 cup finely diced red onion
1 cup mayonnaise
1/2 cup sour cream or plain Greek yogurt
1/4 cup apple cider vinegar or white vinegar
1 tablespoon granulated sugar
1 tablespoon Dijon or yellow mustard
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon black pepper, plus more as needed

Steps:

  • Bring a large pot of salted water to a boil. Cook noodles until a little past al dente, then rinse under cold water and drain. Once the noodles are cool enough to handle with your hands, transfer them to a large bowl.
  • Add the celery, bell pepper, carrots and onion to the cooled noodles; toss to combine.
  • Prepare the dressing: In a medium bowl, whisk together mayonnaise, sour cream, vinegar, sugar, mustard, salt and pepper.

I vary it with diced ham, turkey or chicken as well. The recipe is easy to double and the serving amount really depends on what you intend on having it for a side dish or a buffet type item.Enjoy!

2/3 cup sour cream (i use low fat)
1/3 cup mayonnaise (i use light here too)
2 tablespoons fresh parsley, chopped
2 tablespoons sweet pickle relish
1 tablespoon spicy brown mustard
1/4 teaspoon white pepper (although black works fine here)
4 cups cooked elbow macaroni (about 8 oz uncooked)
1 cup sliced green onion
1 cup frozen peas, thawed
1 cup shredded sharp cheddar cheese (i use reduced fat)
1/2 cup diced baby carrots
1/2 cup green pepper
1/2 cup sliced celery

Steps:

  • Combine first 6 ingredients in a large bowl; stir well.
  • Add macaroni and remaining ingredients.
  • Toss well to coat.
  • Cover and chill for at least 2 to 4 hours before serving.
