2 medium eggs
1 tbsp milk
40g kimchi
1 slice of wholemeal bread , toasted
1 spring onion , finely sliced
pinch of togarashi , to serve (optional)

Steps:

  • Beat the eggs and milk together with a pinch of salt. Pour into a non-stick pan over a low heat. Leave untouched for 30 seconds, then lift the pan a little and swirl the eggs around. Cook for 2 mins more, then fold through the kimchi, breaking up the eggs to scramble them.
  • Serve the kimchi scrambled eggs on the toast, and top with the spring onion and tograshi, if using.

Kimchi is punchy and potatoes are mellow, but together, they play off one another like the characters in an opposites-attract love story. Though universally adored for their comforting, creamy texture, potatoes often feel stodgy as the main ingredient of a meal, but pairing them with tangy, spicy kimchi lightens them up. Cut your potatoes into small cubes to ensure they don't take too long to cook. Hash just does not feel complete without eggs, which make this a handy one-pan meal. Finishing the dish with a drizzle of mayonnaise (preferably Kewpie, but other brands are fine, too) and a sprinkle of furikake lends a playful edge, or you can make it even more fun to eat by wrapping up piles of the hash in nori, which adds a nice crunch and will remind you of a sushi roll.

5 tablespoons extra-virgin olive oil
1 red onion, thinly sliced
2 garlic cloves, finely chopped
1 cup napa cabbage kimchi, undrained and roughly chopped
2 pounds Yukon gold potatoes, scrubbed and cut into 1/2-inch cubes
4 large eggs
Mayonnaise, for garnish
1 tablespoon furikake or toasted white sesame seeds, for serving
1 scallion, finely chopped

Steps:

  • Heat a large skillet over medium-high. When hot, add 2 tablespoons oil and the onion. Cook for 4 to 5 minutes, stirring every minute or so, until softened.
  • Add the garlic, kimchi, potatoes and another 2 tablespoons oil, and toss to combine. Cover, reduce heat to medium, and cook for 5 minutes. Lift the lid, stir, cover and cook for another 6 to 8 minutes, until the potatoes are tender.
  • Remove the lid, stir the potatoes, then make 4 divots without reaching the bottom of the pan. Drizzle a little of the remaining oil into each divot and crack an egg into each. Cover and cook for 4 to 5 minutes or until eggs are just set.
  • Drizzle with mayonnaise, then sprinkle with furikake and scallions. Serve warm.

The unique taste and texture of radish kimchi pairs surprisingly well with scrambled eggs. I've made this dish for many skeptics, and they've all loved it. The "4-6 pieces of radish" refers to the root, but I usually include a few pieces of radish green too. You can find radish kimchi at many Asian food stores.

4 white mushrooms
4 -6 pieces radishes, from jar of radish kimchi
1/4 cup cheddar cheese, shredded (optional)
2 teaspoons vegetable oil

Steps:

  • Cut the pieces of radish root in half lengthwise and slice into thin crescents. Chop the mushrooms and some radish kimchi greens.
  • Heat the old over medium high heat. When hot, add the mushrooms and saute for 1-2 minutes. Add the radish root and greens and saute for another minute.
  • Reduce the heat to medium. Add the egg and cheese (if using) and season with pepper. Scramble until cooked through.

Perfect as a unique, spicy breakfast or a savory snack, this kimchi stew-inspired scramble combines kimchi and soft tofu with eggs. Here, Chef Michael Lewis piles it on buttery, skillet-toasted rustic bread, but you could just as easily serve it atop steamed white rice.

3 tablespoons unsalted butter, divided, plus more as needed
2 slices rustic bread (about 1 inch thick)
3 large eggs
flaky sea salt, preferably Maldon brand
2 ounces kimchi
2 ounces silken tofu
1 scallion, trimmed and thinly sliced on a bias

Steps:

  • In a skillet over medium-low heat, add 1 tablespoon butter. When melted and foamy, add bread slices in an even layer. Toast until golden, about 1 minute, then flip and toast the other side, another minute. Add more butter as needed for both sides to turn golden brown and toasty. Set aside.
  • Crack eggs into a small saucepan. Over medium heat, use a rubber spatula to stir and scramble the eggs; add 1 tablespoon butter and a pinch of salt. Continue stirring vigorously; once the butter has melted and the eggs start to set, keep stirring while moving the pan on and off the heat at intervals. (This is the secret to creamy, tender scrambled eggs.) Remove from heat just before the eggs are fully cooked, and stir in remaining tablespoon of butter. Fold in the kimchi and tofu and stir well to combine.
  • Place toasted bread on a serving plate and top with kimchi scrambled eggs. Garnish with scallions and serve immediately.

This was a breakfast staple in my house growing up. My dad fries up Spam until crispy, adds some kimchi for flavor, and scrambles in a few eggs. We serve it over rice with seaweed seasoning, but salt and pepper work great too.

½ cup Spam®, diced
3 large eggs
1 tablespoon olive oil
¼ cup kimchi, diced
1 tablespoon unsalted butter
2 cups white rice, steamed
kosher salt, to taste
furikake, for garnish - optional

Steps:

  • Dice the Spam into small cubes.
  • Crack the eggs into a small bowl and beat to combine.
  • Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the Spam and cook until golden brown and crispy, stirring often, 3-4 minutes.
  • Reduce the heat to medium-low, add the kimchi, and cook until fragrant, 2-3 minutes. Push mixture to one side of the pan and melt the butter in the empty side. Reduce the heat to low, add the eggs, and cook, stirring frequently, until scrambled to your desired doneness. Stir in the kimchi and spam until well combined.
  • Add the rice to 2 serving bowls and divide the scrambled egg mixture between the bowls. Top with furikake, if desired.
