PORK ROAST WITH SAUERKRAUT AND KIELBASA

Number Of Ingredients 12

1 32 ounce jar sauerkraut, drained, plus 1 1/2 cups sauerkraut (about 1/2 pound)
1/4 cup firmly packed dark brown sugar
1 teaspoon caraway seeds
1 2 pound boneless pork loin roast
salt and pepper to taste
2 tablespoon canola oil
1 small onion (sliced thin)
2 Golden Delicious apples (peeled, cored, and cut into wedges)
1 tablespoon fresh thyme
1 tablespoon minced garlic
1/2 cup beer
1 pound kielbasa (cut into 3-inch pieces)

Steps:

  • Cover the bottom of a slow cooker with the sauerkraut. Sprinkle with the brown sugar and caraway seeds.
  • Season the pork loin roast generously with salt and pepper.
  • Heat canola oil in a large skillet over medium-high heat. Add the pork and cook, turning frequently, until browned on all sides, about 10 minutes. Place the pork on top of the sauerkraut.
  • Return the skillet to medium-high heat, add the onion, apples, thyme and garlic and sauté until the onion and apples are lightly browned, about 5 minutes. Transfer the apple mixture to the slow cooker and arrange around the pork.
  • Return the skillet to medium-high heat, add the beer and bring to a simmer. Stir to dissolve the caramelized meat juices on the pan. Pour over pork loin in slow cooker. Top with remaining 1 1/2 cups of sauerkraut.
  • Cover and cook on low until the pork is fork-tender and shreds easily, 8 to 10 hours. In the last hour of cooking, arrange kielbasa pieces around the edges of the slow cooker pot.

1 (2 pound) boneless pork loin roast
2 tablespoons olive oil
2 sprigs fresh thyme leaves
salt and pepper to taste
4 pounds sauerkraut
1 pound kielbasa, cut into 3-inch pieces

Steps:

  • Preheat the oven broiler. Place the roast in a roasting pan, brush with olive oil, sprinkle with thyme leaves, and season with salt and pepper. Place under the broiler for 10 minutes, until lightly browned in several places.
  • Place 2 pounds sauerkraut in a slow cooker. Arrange kielbasa pieces around the edges of the slow cooker pot, and place the roast in the center. Cover with remaining sauerkraut.
  • Cover slow cooker, and cook roast 6 hours on High.

1 lb low-fat kielbasa, cut into 1/2 inch thick slices
1 large onion, chopped
2 Red Delicious apples or 2 yellow golden delicious apples, cored and cubed
1 (16 ounce) can sauerkraut, rinsed and drained
1 (13 3/4 ounce) can reduced-sodium chicken broth
1/4 teaspoon caraway seed

Steps:

  • In 4 or 5-quart sauce pot, cook sliced kielbasa and onion over medium-high heat 5 minutes; stirring frequently or until browned.
  • Add apples and cook stirring frequently about 1 minute.
  • Stir in sauerkraut, chicken broth and caraway seeds.
  • Reduce heat to low; cover and simmer for 20 minutes or until apples are tender and flavors blended.

I grew up asking for sauerkraut instead of candy as a child, and my grandfather always made it for me. This is my version of what he would make.

1/2 cup butter
1 medium onion, diced
2 garlic cloves, minced (four if you are a garlic lover)
1/2 teaspoon thyme leaves
1/4 teaspoon ground sage
ground black pepper, to taste
3 potatoes, peeled and diced (try to use a waxy potato like Yukon gold (russets will disintegrate in the baking process)
1 (16 ounce) bag sauerkraut, from the deli aisle (not canned please)
1 lb beef kielbasa, cut into 1/2 inch pieces (two if you're an insane sausage lover)

Steps:

  • Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
  • This brings out the sweetness of the onions.
  • Simmer for about 10 minutes.
  • Add minced garlic and simmer 2 more minutes.
  • Add next 3 ingredients.
  • Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
  • Bring to a simmer on the stove top.
  • Cover loosely with foil and place in a preheated 225°F oven for 3 hours.

1 small red onion, thinly slicef

This is one of my Fathers favorite meals. Please make sure you get fresh, not smoked kielbasa for this. If you cannot find the Bavarian Kraut, just use the regular and up the brown sugar by 1 tablespoon and add 1/2 t. caraway seeds. It is savory, yet a tiny bit sweet. Very satisfying and filling. It makes ALOT. I often freeze the leftover cabbage mixture in small containers to use later as topping for sauages or hot dogs, even on a rueben sandwich.

6 kielbasa (or more, non smoked)
4 lbs rolled boneless pork roast
1/2 medium cabbage, chopped
1 (16 ounce) can sweet bavarian sauerkraut
1 (28 ounce) jar sauerkraut (I use Gundlesheim barrell kraut)
1 medium onion, sliced
3/4 cup julienned carrot
garlic powder
3/4 cup dry white wine
3 -4 tablespoons brown sugar
3 (15 ounce) cans whole potatoes, drained
salt and pepper

Steps:

  • Preheat oven to 375.
  • Coat a large roaster with non stick cooking spray.
  • Cut kielbasa links into three pieces each, and place in prepared roaster.
  • Add chopped cabbage, the sauerkrauts and juices, carrot, onion, garlic powder, brown sugar, wine and salt and pepper. Mix well.
  • Add potatoes and mix again.
  • Remove rope from roast. Cut roast into thirds.
  • Season meat as you prefer and brown well on all sides in a skillet with a little oil.
  • When roast pieces are browned, nestle them into the cabbage mixture.
  • Cover roaster.
  • Cook 2 1/2 hours.
  • Stir occassionally.

Heat a small skillet over medium high and add the butter, mushroom and onions. Saute these for about 5 minutes until they are softened. Reduce the heat to low, add the bullion cube, pepper, and 1/2 cup of water. Stir until the bullion cube is dissolved.
  • In a casserole dish add the drained kraut and contents of the skillet, mix to combine. Top with the links of fresh kielbasa nesting it in the kraut a little bit. Bake covered for at least one hour. Uncover and bake for another half hour to an hour. Until the kielbasa is brown and the edges of the kraut are a little crispy and browned. Serve with prepared horseradish or sauce and rye bread if desired.
