LIGHT KIELBASA APPLE ONION SKILLET

Light Kielbasa Apple Onion Skillet image

Quick (and healthy) Light Kielbasa Apple Onion Skillet recipe - A low fat and low carb dinner with a savory-sweet punch!

Provided by Sommer Collier

Categories     Main Course

Time 20m

Number Of Ingredients 8

14-16 ounces low-fat turkey kielbasa sausage
1 large sweet onion, (peeled and sliced)
2 large Fuji apples, (sliced into thin wedges)
1-2 sprigs fresh rosemary
1 tablespoon butter (or coconut oil, optional)
1/2 cup Musselman's Apple Butter
2 tablespoons Musselman's Apple Cider Vinegar
Salt (and pepper)

Steps:

  • Preheat a large skillet to medium heat. Add the butter or oil. (If using a good nonstick skillet, no butter is needed.) Slice the onion and apples. Then cut the kielbasa into 1/2 inch rounds. Remove the rosemary leaves from the stems and roughly chop.
  • Once the skillet is hot, sear the kielbasa pieces for 2-4 minutes, until brown on both sides. Remove from the skillet and set aside.
  • Next add the onions to the skillet. Sear for 2 minutes to soften, then add the apples and rosemary. Allow the apples and onions the cook until soft and brown, but not mushy. Stir gently as to not smash the apples, about 5-7 minutes. Salt and pepper liberally.
  • Add the sausage back to the skillet, along with the Musselman's Apple Butter, apple cider vinegar, and 1/2 cup water. Simmer and stir to thicken the sauce for 2-3 minutes. Taste, then salt and pepper as needed. Serve warm.

KIELBASA WITH GOLDEN ONIONS AND APPLE

Kielbasa with Golden Onions and Apple image

Sweet caramelized onions and a tart Granny Smith apple are a perfect balancing act, especially when combined with rich smoked sausage.

Time 50m

Yield Makes 6 (main course) servings

Number Of Ingredients 9

2 pound smoked kielbasa (preferably beef and pork), cut crosswise into 3-inch lengths
2 tablespoons olive oil
3 large onions, chopped (6 cups)
1/2 teaspoon salt
1 teaspoon black pepper
1/2 stick (1/4 cup) unsalted butter
1 large Granny Smith apple
1 3/4 cups reduced-sodium chicken broth (14 fluid ounces)
Accompaniment: mashed potatoes

Steps:

  • Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean. Add remaining tablespoon oil to skillet and brown remaining sausage in same manner, transferring to bowl as cooked.
  • Wipe skillet clean again, then cook onions with salt and pepper in butter over moderate heat, stirring occasionally, until golden brown, 15 to 20 minutes. Meanwhile, peel, core, and finely chop apple. Stir apple and broth into onion mixture and simmer briskly, uncovered, stirring occasionally, until apple is tender, 6 to 7 minutes. Add sausage and simmer, stirring, until heated through, about 1 minute.

TRUE BANGERS AND MASH WITH ONION GRAVY

True Bangers and Mash with Onion Gravy image

Bangers and mash gets its name because sausages used to burst (or bang) while cooking, due to rusk (dried bread) being added to the meat. Mash, meanwhile, refers to the mashed potatoes. This recipe was a staple at our home in Dublin at Halloween. It is a very cheap, very traditional supper, and one that truly requires good sausage. Try to use a good quality sausage or perhaps even a bratwurst. Please note that this is a very thin gravy, as is traditional. It will still be very liquidy.

Time 1h5m

Yield 4

Number Of Ingredients 10

4 links pork sausage
2 pounds potatoes, peeled and cubed
¼ cup butter
2 tablespoons milk
1 teaspoon dry mustard powder
salt and ground black pepper to taste
1 tablespoon butter
2 large onions, chopped
6 cups beef broth
2 cups red wine

Steps:

  • Preheat oven to 200 degrees F (95 degrees C).
  • Cook the sausage links in a skillet over medium-low heat until browned on all sides, about 5 minutes per side; transfer to an oven-safe dish and move to the preheated oven to keep warm.
  • Place potatoes into a saucepan over medium heat, cover with water, and boil gently until potatoes are tender, 10 to 15 minutes. Drain and allow to steam dry for a minute or two. Mix in 1/4 cup of butter, milk, dry mustard, salt, and black pepper; mash until fluffy and smooth. Set aside.
  • Melt 1 tablespoon butter in a skillet over medium-high heat; cook the onions until translucent and just starting to brown, about 8 minutes. Pour in the beef broth and red wine; boil the mixture down to about half its volume, about 10 minutes. Season with salt and black pepper. To serve, place a sausage onto a serving plate with about 1/2 cup of mashed potatoes. Pour the onion gravy over the sausage and potatoes.
