CREAMED GREEN PEAS

Good little side dish, especially if your kids (or even you) don't normally care for peas, and want a way to eat them.

Number Of Ingredients 9

1 lb fresh green peas
1/2 cup salt water
1/4 cup butter
1/2 teaspoon sugar
salt and pepper
1 dash nutmeg
1 cup heavy cream
2 tablespoons flour
1 teaspoon fresh minced parsley

Steps:

  • Boil water in a medium sauce pan, and add peas, allowing to cook about 5 minutes Drain peas, and saute with butter and sugar until peas are good and tender (about 10 minutes).
  • In a small mixing bowl, mix cream together with flour until smooth.
  • Add to peas along with salt, pepper, nutmeg, and parsley.
  • Allow this all to simmer about 5 minutes before serving.

1/2 tablespoon oil
1 small onion, finely chopped
6 cardamom pods (green or white)
1 cup plain yogurt, blended
1/2 teaspoon ground turmeric
2 cups cooked kidney beans
1 1/2 teaspoons sea salt
2 teaspoons garam masala
1/2 teaspoon cayenne
2 tablespoons finely chopped fresh cilantro

Steps:

  • Heat the oil in a medium-size saucepan over medium-high heat. Add the onion and cardamom pods, and stir-fry until the onion turns light brown around the edges, 3 to 5 minutes.
  • Stir in the blended yogurt and continue to cook, uncovered, stirring occasionally, until the watery liquid evaporates from the yogurt and leaves behind reddish-brown curd like pellets, 12 to 15 minutes.
  • Sprinkle in the turmeric and incorporate it into the tart sauce. Add 2 cups water and the beans, salt, garam masala, and cayenne. Bring the curry to a boil. Then lower the heat to medium and gently boil the sauce, uncovered, stirring occasionally, until it has thickened, 10 to 15 minutes.
  • When ready to serve, garnish.
  • with a bunch of chopped fresh cilantro, and serve with some plain or Jeera Rice!

Fresh green beans are served with a creamy mushroom sauce and crumbled goat cheese in this easy side dish recipe.

3 tablespoons olive oil, divided
1 cup thinly sliced shallot
1 pound fresh green beans, trimmed
2 tablespoons water
½ teaspoon kosher salt, divided
¼ teaspoon ground black pepper, divided
2 cups sliced cremini mushrooms
1 tablespoon fresh thyme leaves
3 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup low-fat milk
½ cup crumbled goat cheese

Steps:

  • Heat 2 tablespoons olive oil in a 12-inch nonstick skillet over medium-high heat. Add shallots; cook until deep golden, stirring occasionally, 4 to 5 minutes. Drain shallots on paper towels, reserving drippings in skillet.
  • Add green beans, water, 1/4 teaspoon salt, and 1/8 teaspoon pepper to reserved drippings. Cook over medium-high heat, covered, for 2 minutes. Cook, uncovered, until beans are crisp-tender and starting to blister, stirring occasionally, about 6 minutes more. Transfer to a platter; keep warm.
  • For mushroom sauce, add the remaining 1 tablespoon oil to the skillet. Add mushrooms; cook and stir over medium heat for 1 minute. Add thyme, garlic, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook until mushrooms are golden, stirring frequently, about 2 minutes more. Mix in flour; gradually stir in milk. Cook and stir until thick and bubbly. Continue cooking and stirring for 2 minutes more.
  • Pour mushroom sauce over beans and top with sauteed shallots and crumbled goat cheese.
