This perfectly flavored lime cake topped with a creamy lime frosting is just the right combo of sweet and tart. Every bite bursts with fresh lime flavor that just feels like summertime!

Steps:
- Mix the lemon cake mix according to package directions, EXCEPT substitute half of the water with lime juice, (i.e. if you need 1 1/2 cups of water, use 3/4 cup water and 3/4 cup lime juice) and add the box of lime jello.
- Prepare your pan(s) with cooking spray, or by using our wax paper technique found above.
- Cook according to package directions.
- While cake is cooking, prepare the frosting by placing the powder sugar, premade frosting, and lime juice in a bowl. Beat until smooth.
- Once the cake has cooled, remove from pans and take off wax paper if used.
- Frost your cake, and enjoy!

- In a large mixing bowl, whisk together cake mix and pudding mix. Keep aside.
- In another mixing bowl, add eggs, oil, water, sour cream, lime zest, lime extract and mix until smooth.
- Dump the dry mixture into the wet mixture and mix until just combined.
- Pour batter in a greased and floured loaf pan (Dimensions: 9×5). You can also use 2 smaller loaf pans or even a 10-12 cup bundt pan.
- Spread batter evenly with a spatula.
- Bake at 350 degrees for 50-55 minutes or until an inserted toothpick in the center comes out clean. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch cake pan or one 10 inch bundt pan.
- In a large bowl stir together; lemon cake mix, lemon instant pudding, water, oil, eggs, and 5 tablespoons key lime juice, mixing well. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes. Pour key lime glaze over cake while still warm.

- 1. Preheat oven to 350°F. Grease and flour 10-inch Bundt® or tube pan. 2. For cake, combine cake mix, pudding mix, eggs, oil, water and 1/4 cup Key lime juice in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed 2 minutes. Pour into pan. 3. Bake at 350°F for 50 to 60 minutes, or until toothpick inserted into center comes out clean. Cool in pan 25 minutes. Remove cake from pan onto cooling rack. Return cake to pan. Poke holes in top of warm cake with toothpick or long-tined fork. 4. For glaze, combine 2 cups confectioners' sugar, 1/3 cup key lime juice, water and melted butter in medium bowl. Pour slowly over top of warm cake. Cool completely. Invert onto serving plate. Dust with additional confectioners' sugar. Garnish with lime slices and strawberry slices, if desired.
KEY LIME BUNDT CAKE
This is a take on Key Lime Cake III, but after some experimenting, I find this recipe is moister, more flavorful, and easier to make.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch Bundt® pan.
- Combine cake mix, cream cheese, gelatin mix, limeade, vegetable oil, eggs, lime zest, and lime juice for cake in a mixing bowl; mix until smooth and well combined. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes. Remove from the oven and let cool to room temperature, 30 minutes to 1 hour.
- Beat butter and cream cheese for glaze in a bowl with an electric mixer until light and fluffy. Add powdered sugar and Key lime juice and mix until well combined.
- Turn the pan over and remove the cooled cake onto a serving plate. Pour glaze over the cake and garnish with crushed graham crackers and more lime zest.
- Refrigerate for at least 1 hour before serving.

KEY LIME CAKE
Subtle yet distinctive, the difference between Key Lime juice and regular lime juice comes through in this delicious cake. Because of its pale green color, this cake resembles a lemon cake...unless you add a few drops of green food color to the cake or glaze! The recipe came from a local paper years ago. My mile high altitude requires a longer cooking time, so you may have to adjust the timing on this.

- Preheat oven to 350°.
- Spray bundt pan with cooking spray.
- Combine cake mix, lemon pudding, eggs, water, lime juice and oil; beat two minutes at medium speed of an electric mixer, stirring down sides occasionally.
- Pour batter into prepared bundt pan; bake in preheated oven as directed on box.
- Cool cake in pan for ten minutes, remove from pan.
- When cool, drizzle with glaze.
