Keto Scotcheroos are a chewy no-bake peanut butter rice krispie bar with a butterscotch chocolate topping. My version is low carb, high protein, ketogenic, and a THM:S.

For The Keto Corn Syrup
3/4 cup Water
1 cup Allulose
1/2 tsp. Butter Extract
1/2 tsp. Vanilla Extract
Pinch of Salt
1/2 tsp. Xanthan Gum
For the Cereal Base
1 1/2 cups High Key Chocolate Cereal
1 1/2 cups High Key Vanilla Cereal
1/2 cup Creamy Peanut Butter {no sugar added}
1/2 cup Keto Corn Syrup
For The Chocolate Butterscotch Topping
3/4 cup Lily's Milk Chocolate Chips
1/2 cup Creamy Peanut Butter {no sugar added}
2 tsp. Butterscotch Extract

Steps:

  • First, make the Keto "Corn Syrup".
  • Add the allulose and water to a saucepan over medium heat and bring to a boil, stirring constantly.
  • Let simmer for 15 minutes until the quantity is reduced by half. Remove from the heat and whisk in the salt, xanthan gum, butter extract, and vanilla extract. Set aside to cool for 20 minutes.
  • To make the base:
  • Stir together the chocolate and vanilla cereals, 1/2 cup creamy peanut butter and 1/2 cup of Keto Corn Syrup.
  • Press into the bottom of a bread pan lined with plastic wrap, foil, or sprayed with coconut oil cooking spray. Place in the refrigerator to cool.
  • Place 1/2 cup peanut butter and lily's chocolate chips in a microwave safe bowl and heat for 30 seconds at time, stirring after each interval until smooth.
  • Add in the butterscotch extract, then smooth over the cereal base.
  • Place in the refrigerator to cool 1 hour, then cut into 10 pieces.

This is my mom's recipe. What's different about how I make it is the method not the ingredients. Using the microwave is key to not overcooking! I get requests to make these all the time and am consistently told that these are the best scotcharoos people have ever had. Enjoy!

Number Of Ingredients 6

1 cup sugar
1 cup creamy peanut butter
1 cup light corn syrup
6 1/2 cups Rice Krispies
1 cup semi-sweet chocolate chips
1 cup butterscotch chips (nestle is best in my opinion)

Steps:

  • In large bowl mix sugar, peanut butter and corn syrup.
  • Microwave on high for 3 minutes. Check every 30 sec. after 2 minutes. Mixture is done when it starts to boil.
  • Stir in rice krispies until well coated.
  • Spray 9x13 pan with non-stick spray.
  • Spread evenly in pan.
  • Melt chocolate and butterscotch chips in microwave on high for 1-2 minutes (watch carefully and stir every 30 seconds - do not overcook!).
  • Spread chocolate sauce over rice krispies.
  • Allow to cool (may even put in fridge or freezer for a few minutes) and cover.

  • Line 8×8 baking pan with parchment paper, allowing paper to overhang edges slightly to allow for easy removal.
  • In a saucepan over medium heat, combine SunButter and butter until melted. Mix in crushed pork rinds, shredded coconut, and salt. Remove saucepan from heat and stir in monk fruit sweetener, syrup, and vanilla extract. Pour mixture into prepared baking pan and, using a silicone spatula, press into even layer. Transfer pan to refrigerator to chill for 1 hour, 30 minutes.
  • With about 15 minutes left of base layer chilling, in a food processor, pulse monk fruit sweetener until powdered. Set aside.
