KETO MEATBALL CASSEROLE

When I am craving comfort food, this Meatball Casserole is one of my favorite meals. Serve it with a salad made of peppery arugula for a complete meal.

Number Of Ingredients 13

2 pounds ground beef
1 teaspoon salt
1/2 teaspoon ground pepper
2 eggs (beaten)
2 teaspoons gelatin (optional)
1/4 cup beef broth
1 cup finely grated parmesan
1/3 cup almond flour
1 tablespoon minced garlic
1 teaspoon Italian seasoning
1 cup ricotta cheese
2 cups keto marinara (or Rao's marinara)
16 ounces mozzarella cheese (fresh, grated, or a combination)

Steps:

  • Preheat oven to 400 degrees.
  • Place the ground beef in a large bowl and sprinkle with salt and pepper.
  • Beat the eggs in another small bowl and sprinkle with the gelatin. Set aside for 5 minutes.
  • Heat the beef broth until just warm but not hot, and add to the gelatin mixture. Whisk to combine.
  • Add the gelatin mixture to the ground beef and stir in parmesan, almond flour, garlic, and Italian seasoning. Use a small cookie scoop to form into meatballs.
  • Place the meatballs in a single layer on two baking sheets. Bake for 15 minutes, flipping halfway through.
  • Remove from the oven and drain on a rack. Alternatively, you can air fry the meatballs for 9 minutes.
  • Arrange the meatballs in a casserole dish.
  • Dollop with ricotta cheese.
  • Top with marinara and top with cheese.
  • Bake for 15 minutes. Allow to cool slightly before serving.

1 lb ground beef
1 lb Italian sausage
1 cup shredded mozzarella cheese
⅓ cup shredded parmesan cheese
⅔ cup crushed pork rinds
1 egg
2 cloves garlic, minced
2 teaspoons McCormick dried minced onion
2 teaspoons McCormick dried minced garlic
2 teaspoons McCormick dried Italian seasoning
1 teaspoon salt
1 teaspoon pepper
1 can crushed tomato
¼ cup red wine, such as Cabernet Sauvignon
1 ½ cups shredded cheese blend, mozzarella and provolone

Steps:

  • Preheat the oven to 400°F.
  • Combine all the ingredients for the meatballs and mix thoroughly. Then, roll mixture into 24 separate meatballs.
  • Heat an oven-safe skillet over medium heat. Drizzle one tablespoon of oil in the skillet. Then, place meatballs into the skillet and cook for 2-3 minutes. Flip and cook for another 2 minutes.
  • Place the skillet into the preheated oven and bake for 10 minutes.
  • Carefully remove the skillet from the oven and pour the crushed tomatoes and wine over the meatballs. Return the skillet to the oven and bake for another 10 minutes.
  • Once the sauce is bubbling, sprinkle the cheese over the top and bake for an additional 8 minutes until the cheese is melted.
  • Serve warm.

1/4 cup seasoned bread crumbs
3 tablespoons grated parmesan cheese
1 lb ground beef
1 loaf Italian bread, cut into 1 inch slices
8 ounces cream cheese, softened
1/2 cup mayonnaise (not low-fat or lite)
1 teaspoon italian seasoning
1/4 teaspoon pepper
2 cups shredded mozzarella cheese, divided
1 (28 ounce) jar spaghetti sauce
1 cup water
2 garlic cloves, minced

Steps:

  • Preheat oven to 400.
  • In a bowl, combine onions, bread crumbs and Parmesan cheese.
  • Add beef and mix well.
  • shape into 1-inch balls; place on a rack.
  • In a shallow baking pan, bake for 15-20 minutes or until no longer pink. (Or cook in a skillet on medium heat.).
  • Reduce oven temperature to 350.
  • Meanwhile, arrange bread in a single layer in an ungreased 13x9x2" baking dish.
  • (All of the bread might not be used.).
  • Combine cream cheese, mayo, Italian seasoning and pepper; spread over the bread.
  • Sprinkle with 1/2 cup mozzarella.
  • Combine sauce, water and garlic; add meatballs.
  • Pour over cheese mixture; sprinkle with remaining mozzarella.
  • Bake, uncovered at 350 for 30 minutes or until heated through.

Use a cookie scoop to form the meatballs so they are all the same size, rolling them around in your hands, and arrange on a baking dish or cookie sheet. You should get about 15 to 16 large meatballs.
  • Bake meatballs for 20 to 25 minutes, or until fully cooked. Remove meatballs, draining any excess grease, and arrange cooked meatballs in a baking dish.
