Keto Creamy Broccoli with Bacon image

Broccoli cooked in a creamy garlic butter sauce and topped with cheese and bacon. This flavorful creamy dish is a delicious keto side or a whole meal on its own!

1/2 cup raw bacon (about 4-6 slices) (chopped into small pieces (optional))
1 tablespoon butter
4-5 cloves garlic (minced or crushed)
3 cups broccoli florets
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper (optional)
salt and pepper (to taste)
1 cup heavy cream (or light cream or half & half)
1/2 cup shredded mozzarella (or cheddar, or your favorite melting cheese)
1/4 cup parmesan cheese (optional)

Steps:

  • Pre-heat oven to 400F. In a large pan over medium-high heat, cook chopped bacon for 2-3 minutes or until almost crispy.
  • Remove bacon from pan and to the same pan, add the butter, garlic, broccoli, garlic powder, crushed red pepper and a dash of salt and pepper. Sautee for 2-3 minutes or until the garlic is fragrant. Add the heavy cream, cheese, and cooked bacon.
  • Transfer to preheated oven and cook for 12-15 minutes or until the cheese is bubbly and the broccoli is cooked to desired doneness. Serve as a side or eat as a main meal!

Delicious keto broccoli simmered in a creamy, cheesy garlic sauce and topped with crispy bacon.

6 strips of bacon
5 cups broccoli florets (about 2 heads)
3 cloves of garlic, minced
1 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • In a large pan over medium-high heat, cook bacon for about 5 minutes until crispy. Drain, chop and set aside.
  • To the same pan, in about 2 tbsp of reserved bacon fat, saute broccoli for about 5 minutes. Add the garlic, and saute for 1 minute more until the garlic is fragrant.
  • Add the heavy cream, and simmer for about 3 minutes for crisper broccoli, or about 6 minutes for softer broccoli. (In the second case, cover with the lid to keep the cream from reducing too much.)
  • Add the cheeses and stir to melt. And salt and pepper to taste. Add back the broccoli, and serve.

1/2 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons butter
8 ounces cream cheese
4 1/2 cups chicken broth
1 cup heavy whipping cream
16 ounces frozen chopped broccoli
1 cup sharp cheddar cheese, shredded

Steps:

  • 1. Add butter, cream cheese, garlic powder, onion powder & paprika to a large pot over medium heat. Stir frequently until melted and blended together.
  • 2. Add heavy cream and chicken broth, stir to combine. Bring to a boil over medium high heat, stirring occasionally. Once boiling allow to boil 5-8 minutes.
  • 3. Add broccoli, stir and return to a boil. Once boiling reduce to simmer and cover. Cook for an additional 20 minutes.
  • 4. Remove from heat, add cheddar, salt and pepper to taste. Stir and Serve.
  • This makes 6 - 1 cup servings at 4.1 net carbs.
