This vegetarian curry brings together classic flavours of south-west India, including freshly grated coconut and green chilli

1kg mix of vegetables including aubergine, carrot, okra, plantain, potato and squash , prepared appropriately and cut into chunks
2 tsp turmeric
5 small green chillies , 4 chopped, 1 left whole but split lengthways
1 tsp ground cumin
1 tsp ground coriander
200g/7oz freshly grated coconut (see step-by-step prep guide)
1 small onion , chopped
10 curry leaves
150ml plain yogurt

Steps:

  • Place all the vegetables in a saucepan and cover with 500ml water. Add the turmeric and a pinch of salt and bring to the boil. Simmer for 20-25 mins until tender.
  • Meanwhile, blend 4 chillies, the cumin, coriander, half the coconut, the onion and some seasoning in a food processor.
  • When the vegetables are tender, add the paste, curry leaves and remaining chilli and simmer for 5 mins. Stir in the yogurt and very gently simmer for 1 min. Scatter with remaining coconut and serve.

2 large onions, finely chopped
2 tablespoons vegetable oil
1 teaspoon cumin seed
1 teaspoon mustard seeds (the black kind, if possible)
8 medium potatoes, quartered
1 1/2 teaspoons fresh ginger, crushed
1 large garlic clove, minced and crushed
1 tablespoon ground cumin
1 tablespoon whole coriander seed, crushed
2 chili peppers (I will used a lesser amount of crushed red pepper flakes.) or 1 teaspoon cayenne pepper (I will used a lesser amount of crushed red pepper flakes.)
1/2 teaspoon turmeric
1 teaspoon salt
4 cinnamon sticks
6 cloves
4 ounces tomato paste
1/2 lb fresh green beans, trimmed
1/2 small cauliflower, broken into pieces
1 medium eggplant, cut into chunks
8 ounces green peas (fresh or frozen)
8 ounces leafy greens, chopped (small bunch, fresh or frozen, kale, spinach, collards, swiss chard, etc.)
1 (15 ounce) can chickpeas, drained (garbanzo beans)

Steps:

  • Preheat oven to 350°F.
  • In a large, heavy skillet or pot, brown onions in moderately hot oil along with the cumin seeds and mustard seeds.
  • Add the potato pieces and stir to coat each piece with spices.
  • Add remaining spices and continue to stir for several minutes.
  • Thin the tomato paste with 2/3 cup of water and stir into the pot.
  • Add vegetables, one at a time, cooking for a minute or so between each addition, add chickpeas last.
  • If your pot isn't oven proof transfer mixture to one that is and cover with a lid or seal with foil, and bake for about 45 minutes, checking after the first 20 minutes.
  • The consistency of this curry should be thick, rather than watery, but add more liquid if needed to prevent burning. Stir occasionally to keep ingredients from sticking to the bottom of the pot.
  • Serve over rice or with Indian bread.

2 onions, finely chopped
2 tablespoons peanut oil (any neutral oil)
1 teaspoon whole cumin seed
1 teaspoon black mustard seeds
8 medium potatoes, quartered (ideally a waxy potato like yukon golds, peeling is optional)
1 1/2 teaspoons fresh ginger, minced (or finely grated)
2 garlic cloves, minced
1 tablespoon ground cumin
2 teaspoons ground coriander (you can crush whole ones, I just don't like the woody pieces)
2 chili peppers (or 1 tsp cayenne pepper)
1 teaspoon turmeric
1 teaspoon sea salt
4 whole cinnamon sticks (2-3-inch pieces)
6 whole cloves
4 ounces tomato paste
1/2 lb green beans, trimmed and cut into 2-inch pieces
1/2 small cauliflower, cut into florets
1 medium eggplant, diced (peeling optional)
1/2 lb fresh green peas, shelled (or use frozen green peas, about 1 cup)
1 bunch fresh spinach, torn (use any leafy green like kale or collards, etc.)
1/2 cup cooked chickpeas (optional)

Steps:

  • Pre-heat oven to 350 degrees. In a large, heavy skillet or pot, brown the onions in moderately hot oil along with the cumin seeds and mustard seeds. Watch out for popping mustard seeds!
  • Add the potato pieces, and stir to coat each piece with the spices. Now add the remaining spices and continue to stir for several minutes.
  • Thin the tomato paste with about 2/3 cup of water. Stir into the pot.
  • Add vegetables, one at a time, cooking for a minute or so between each addition, and put in the chickpeas last. You may opt to put the leafy greens in now or just before serving.
  • If your pot is not oven proof, transfer mixture to one that is. Cover with a lid or seal with foil and bake for about 45 minutes, checking after the first 20 minutes.
  • The consistency should be rather thick, but add liquid if necessary to prevent burning. Stir occasionally to prevent sticking.
  • You'll want to fish out the cloves and the cinnamon sticks before serving over rice or with flat bread like roti or naan.

I found this in the newspaper under recipes for a presidential inauguration party. The caption was "A vibrant Kenyan Vegetable Curry could please a president with African roots, as well as anyone who likes the way each vegetable keeps its distinct flavor when baked instead of boiled." I don't have a dutch oven, so I just did the first part in a large skillet then transferred the food into a casserole dish. I love being a vegetarian!!!

I made this recently and we loved it. A rich, fragrant, but not overly 'burny' curry. Because we are not great meat eaters, I used half the chicken, the full amount of sauce, and I added a few sauteed shrimps right at the end. If you don't have garam masala, try a curry powder that you like, I do keep roasted garam masala in my pantry. I also let the curry sauce cook for longer than the recipe states, you should never rush a curry if you have the time! I served this over steamed basmati rice. 30 minutes refrigeration time is included in the preparation time. This recipe is taken from The Australian Womans Weekly "New Curries", and the following is how they describe it. "Kenyan cooking is a fusion of East African and Middle Eastern methods known by the name of swahili cooking, a word which identifies the culinary influences of traders arriving by sea from the Arabian peninsula upon the indigenous population. This curry uses the pungency of paprika, coriander and turmeric in the chicken marinade, to complement the green chilli and fenugreek in the curry."

40 g fresh ginger, grated
6 garlic cloves, crushed
2 teaspoons ground turmeric
1/2 cup lemon juice
1/3 cup vegetable oil
1 teaspoon ground cumin
3 teaspoons garam masala
1 tablespoon ground coriander
1 teaspoon paprika
1 teaspoon chili flakes
1/4 cup plain yogurt
1 kg chicken thigh fillet, cut into 3 cm pieces
600 g brown onions, chopped coarsely
2 teaspoons chili powder
2 teaspoons ground fenugreek
800 g tinned crushed tomatoes
1 stick cinnamon
2 long green chilies, finely chopped
300 ml cream
1 tablespoon honey
1/4 cup coarsely chopped coriander leaves

Steps:

  • Combine half the ginger, half the garlic, half the turmeric, half the lemon juice and half the oil in a large bowl with ALL the cumin, garam masala, ground coriander, paprika, chilli flakes and yoghurt.
  • Add the chicken, turn to coat in marinade.
  • Cover and refrigerate for at least 30 minutes.
  • Preheat oven to very hot (220C/425F).
  • Cook chicken in lightly oiled shallow flameproof baking dish, uncovered, 10 minutes.(With the marinade).
  • Heat remaining oil in large saucepan, cook onion, chilli powder, fenugreek, remaining ginger, garlic and turmeric, stirring, until onion softens.
  • Add tomatoes (with their juice), cinnamon, green chillies and remaining lemon juice.
  • Simmer, covered, for 10 minutes.
  • Stir in cream and honey, simmer, uncovered, for one minute.
  • Add chicken to curry, simmer about 5 minutes or until chicken is cooked through.
  • Remove from heat, stir in fresh coriander, serve over basmati rice, garnish with fresh coriander.

1 lb lean ground beef
1 1/2 teaspoons curry powder

Steps:

  • In a deep medium-sized frying pan, saute onions and ground beef in oil until meat is browned. Skim fat.

  • Stir and add water and salt to taste.
  • Simmer 20 minutes over medium heat to blend flavors. Serve over rice, spaghetti or with chapatis.
