GREEN BEANS WITH NEW POTATOES
This easy green bean with potatoes recipe from Paula Deen is a classic side dish perfect for entertaining. Ingredients include fresh green beans, onion, bacon grease and salt pork. Prep time is about 10 minutes and cooking time is 10 minutes on the stovetop.

- Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
- Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
- While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.

- Wash the beans, remove the tips, and break all beans in half. Set aside.
- Melt butter in large saucepan or dutch oven. Add onion and saute until transluscent.
- Add the broken beans, salt and pepper to taste and saute. When the beans begin to soften, add the ham or bacon, and continue to saute for 1-2 minutes.
- Pour in the chicken broth, reduce heat, cover, and simmer for 15-20 minutes, until beans are soft.

SOUTHERN GREEN BEANS AND POTATOES

Steps:
- Wash the potatoes under cool running water. Set aside.
- Place a couple inches of cold water in your sink. Add the green beans.
- Swish the beans around to wash them, removing any leaves or debris.
- Lift the beans out of the wash water. Place in a colander to drain.
- One at a time, snap the ends off the beans, removing any strings as you go.
- Discard the end pieces.
- Snap each bean into bite sized pieces.
- Place the beans in a large stock pot and cover with water by about 3 inches.
- Add the red potatoes. Cut them into quarters if preferred.
- Add the bacon grease.
- Add the sugar.
- Place on stove top over Medium High heat and bring to a boil.
- Reduce the heat to Medium and let cook for one hour.
- Add the black pepper.
- Add the salt. Stir well.
- Continue to cook the beans and potatoes until done as desired.
- Enjoy!
POLE BEANS AND NEW POTATOES
Simple yummy southern tasting side dish. Pole beans are larger than everyday green beans (Kentucky wonder is a favorite variety). Try to find tender beans that do not have a heavy "string"; they will cook in the same amount of time as the potatoes.

ROSETTA'S GREEN BEAN AND POTATO SALAD

- Put the potatoes in a large pot; add water to cover by 2 inches. Cover the pot and bring to boil over medium-high heat. Cook until the potatoes are cooked through, about 30 minutes. Drain and let cool slightly.
- Meanwhile, bring another large saucepan of water to a boil; salt generously. Blanch the green beans until crisp-tender, 2 to 3 minutes. Drain and then shock in an ice water bath to stop cooking.
- When cool enough to handle, cut the potatoes into 1 1/2-inch chunks and place in a large serving bowl. Add the green beans, red onions and tomatoes and toss together. In a small bowl, whisk together the vinegar, olive oil and dried basil. Pour about three-quarters of the dressing over the salad and toss to combine. (The potatoes should break up a bit and coat the salad.) Add salt and pepper to taste. Serve at room temperature, garnished with torn basil.

- Place the ham hock('s) and onion into a 4 quart Dutch oven and fill half way full with water.
- Season water with salt, pepper and garlic powder and bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot.
- Discard bones and skin.
- Add the green beans to the Dutch oven and simmer for 20 minutes, then add the potatoes. Simmer for 10 to 15 minutes more, or until they can be easily pierced with a fork.

KENTUCKY WONDER BEANS
These are an old soul food heirloom favorite in the garden and what I remember eating frequently as a child. I grew the pole variety this summer and they are super prolific/productive. They taste like nothing you buy in a store - super meaty, tender, long-lasting flavor. And now they are a favorite in my own family. The beans will cook in this semi-salty broth, and won't be as salty as is the broth.

- Note: The recipe called for a 1-inch chunk of streak-o-lean (lean salt pork), but the website doesn't recognize. You can use streak-o-lean if you can find it, ham hock, pork belly, or bacon.
- Pinch off the ends of the beans, and if necessary, remove any strings. Snap the beans into 1-1/2 inch pieces, rinse well in a colander and transfer to a large pot.
- Add the cooking meat, salt and pepper and enough water to cover by 1 inch. Bring to a boil, reduce heat to low, cover, and simmer the beans slowly until tender but still slightly firm, about 1 hour.
- Meanwhile, rinse the potatoes to remove any grit, cut away a strip of peel around the center of each with a vegetable peeler.
- Add the potatoes to the beans, stir and continue to simmer until tender, about 30 minutes, adding more water if needed.
- Drain and serve hot in a large bowl.
