EASY CHEESY POTATOES
These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

Steps:
- Preheat oven to 375˚F and grease a 9x13 inch baking dish.
- If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
- Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
- Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
- Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

- Heat oven to 375 degrees F. Butter a 1 1/2 to 2-quart baking dish and sprinkle with just a bit of the shallot.
- Add the heavy cream to a medium saucepan along with the remaining shallot, garlic, salt and pepper. Place over medium heat and bring to a simmer while stirring. Let simmer until you see the liquid begin to thicken, 2 to 3 minutes.
- Layer 1/3 of the sliced potatoes in the baking dish, cover with some Cheddar and a sprinkling of Parmesan; repeat the layering 2 more times.
- Pour the hot liquid over the potatoes. Add the remaining cheese, cover with foil, and bake for 1 hour, then remove the foil to bake until the cheese is golden and brown, 15 to 20 minutes. Let rest for 10 minutes before slicing so it can settle.

- Butter a 13 x 9-inch casserole dish.
- Cook potatoes in boiling salted water for 8-10 minutes or until tender, drain, set aside.
- In a large bowl, combine the next 10 ingredients, and 1 cup Swiss cheese; mix well.
- Fold in the potatoes.
- Spoon into greased baking dish.
- Bake uncovered for 30-35 minutes, or until bubbly and lightly brown.

- In a large saucepan, melt 4 tablespoons butter. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. - Stir cream of chicken soup, cream cheese, and milk together in a saucepan over medium heat and cook until the cheese is completely melted and the liquid is heated through, about 5 minutes.

CHEESY POTATO CASSEROLE
Sometimes called funeral potatoes, this cheesy potato casserole is the ultimate comfort food. It's delicious any time of year- for holidays, BBQs, and family dinners.

- Preheat the oven to 375˚. Heat a medium skillet over medium heat. Add 2 tablespoons of butter, then add the onion. Cook for 5 minutes, then add the garlic. Cook until the onion are slightly softened, about 2 minutes more. Transfer to a plate and let cool slightly.
- In a large mixing bowl, combine the sour cream, cream of chicken soup, cheddar, hash brown potatoes and the onion mixture. Transfer to a greased three-quart casserole dish. Cover the casserole and bake for 45 minutes.
- Meanwhile, place the remaining 6 tablespoons of butter in a small bowl. Cover and microwave for 45 to 60 seconds until melted. Mix in the breadcrumbs and parsley.
- Top the casserole with the breadcrumb mixture and return to the oven, uncovered, for another 25 to 30 minutes, until the top is golden brown and the casserole is bubbly all over.
KELLY'S BREAKFAST CASSEROLE
This casserole is great when having a large amount of people over, or just for a lazy Saturday morning. I am going to post my original recipe, but I change it up all of the time! I make this on holiday mornings.

- Preheat oven to 350°F
- I use a 9x9 inch stoneware pan, but you can really use any type of square or rectangular pan.
- Unroll crescent rolls, but do not separate! press it into the bottom of the pan, pressing the perforations together to make your crust.
- Brown your breakfast meat and drain on paper towels. Sprinkle evenly over the crust.
- Top with 1/2 of the cheese.
- Scramble the eggs, cream, salt and pepper together and our over the crust.
- Bake for about 30 minutes, or until the eggs set.
- Sprinkle with the other half of the cheese. Let it sit for about 5 minutes when you take it out of the oven to set.
- Variations: Mexican style- use chorizo, green chilies, and pepper jack cheese. Parisian- use steamed asparagus, mushrooms, and parmesan cheese. Italian- use pancetta, sun-dried tomatoes, fresh basil, and parmesan cheese.

SPECIAL GARLIC & CHEESE POTATO CASSEROLE
The recipe doesn't designate a cooking time so I'm guessing. However, cooking time aside, this sounds scrumptious! I'll be making it very soon.

- The Pan:.
- Large oven dish, must be at least 6 inches deep.
- If not this deep, make sure it is large around. I'd say minimum 4" deep.
- A large disposable foil casserole pan should work fine.
- Directions:.
- Peel (or not) and slice potatoes to no thicker than a dime (2-3mm).
- Layer the bottom of your oven dish with 2-3 layers of potatoes.
- Cover potatoes with a thick layer of grated cheese.
- Crush one clove of garlic over the top of the cheese, spreading out evenly.
- NOTE: If you know how much cheese and garlic you WILL use, just crush the garlic and mix it with the cheese to make spreading easier.
- Continue to do this 3-4 times depending on how deep your oven dish is.
- End up with a cheese and garlic layer to finish, not potatoes.
- Mix milk and egg together and pour over the top of the cheese.
- Bake at 180º C (350º F)until potatoes are soft and cheese topping is browned off
- Cooking time will vary depending on number of layers and thickness of potato slices.
- VARIATION: adding meat of your choice to this with the cheese/garlic layer, would make this a great main dish.
- If other ingredients are added, you may have to double the egg/milk mixture, and adjust the cooking time.
