SPAGHETTI MEAT SAUCE
Homemade Spaghetti Meat Sauce is beefy, juicy and so satisfying. This Meat Sauce recipe comes together fast so it is perfect for busy weeknights, and it's freezer friendly.

Steps:
- Place a pot or dutch oven over medium heat, add 1 lb ground beef and sautee, breaking it up with a spatula until no longer pink (5 minutes).
- Add chopped onion, 1 tsp salt, 1/2 tsp ground cumin 1/4 tsp pepper and sautee until onions are soft.
- Add garlic and sautee another 1-2 minutes until fragrant then pour in 1 jar of marinara sauce, 1/4 cup water and 1 tsp sugar. Cover and simmer over low heat 20 minutes.
- Meanwhile, cook 12 oz of spaghetti in salted water to desired doneness according to package instructions then drain. Serve sauce with cooked pasta.

- In a large pot over medium-high heat, brown the ground beef and sausage until totally browned. Remove the meat from the pot with a slotted spoon and put it into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the onions and bell peppers. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add the crushed tomatoes, marinara sauce and tomato paste. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper if using and bay leaves. Stir, and then add the cooked ground beef and sausage and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the meat sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
KAT'S MOM'S SPAGHETTI SAUCE
Even better the next day! I always make a *big* batch in the crockpot - because when my kids hear that I am making it, they come over to snag a jar or two. If pinched for time, substitute 3/4 TSP of garlic powder and 3 TBL dried minced onions for fresh and cook in a large pot on the stove on low heat for 2 hours (stirring occasionally). When available, I prefer to use meatloaf mix instead of hamburger, but you could use frozen meatballs if you prefer. This sauce freezes well and is always worth the effort.

Steps:
- Place sausage in a frying pan with 1/2 cup water.
- Poke a few holes on each side of the sausage with a fork so that grease will run out.
- Simmer on medium heat for 15 minutes, turning several times until sausage is no longer pink in the middle.
- Set aside to cool.
- In a big crockpot add the first eleven ingredients.
- Clean out frying pan and fry hamburger on medium heat until no longer pink.
- Use spatula to break into small pieces.
- Drain grease and add meat to the crockpot.
- Wipe out frying pan again.
- Chop onion and crush garlic cloves.
- Melt butter in frying pan and saute the onion and garlic until translucent - about 10 minutes on medium heat.
- Add to crockpot.
- Remove casings from cooled sausage and crumble sausage into the crockpot.
- Stir sauce, cover and cook about 8 hours on low.
- About 15 minutes before serving stir in the grated cheese.
- Serve over pasta.
- We like to sprinkle on more cheese and red pepper flakes and serve with a fresh salad and garlic bread.

KAT'S MEAT SAUCE
My own take on meat sauce, used in Kat's Slow-Cooker Lasagna #331772. All quantities are approximate, as I've always done it by taste. May also be done in the slow-cooker.

Steps:
- Brown ground beef in a deep skillet or frying pan and drain off the majority of the excess fat.
- Add onion, garlic and seasoning salt, saute until translucent.
- Stir in peppers, mushrooms, canned tomatoes and tomato sauce.
- Let simmer for 10 minutes.
- Stir in worcestershire sauce and italian seasonings.
- Let simmer covered for 1 hour on low, stirring occasionally.
- Uncover and let simmer until reaches desired consistancy.
- If using slow-cooker, follow steps 1 and 2.
- In large (5 qt) slow-cooker, stir together contents of pan, peppers, mushrooms, canned tomatoes and tomato sauce.
- Simmer on high for 3 hours.
- Stir in worcestershire sauce and italian seasoning.
- Simmer on low for 6-8 hours.

- Heat the olive oil in a large skillet or pot over medium-high heat. Add the ground beef and cook for 3 minutes, breaking it as you go, until no longer pink.
- Add the onion and bell pepper and cook for another 3 minutes until the onion softens. Stir in the garlic, tomato paste, Italian seasoning, sugar, salt, pepper, and red wine. Cook for an additional 3 to 5 minutes or until the wine cooked off.
