1 1/2 cups fresh parsley leaves
1 cup fresh mint leaves
1/4 cup extra-virgin olive oil
3 garlic cloves
2 tablespoons lemon juice (freshly squeezed)
1/4 cup feta cheese
Optional: 1/4 cup almonds
Salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • Make sure to wash and dry the parsley and mint leaves well. Add them to a blender or food processor . Add the garlic cloves, lemon juice, feta cheese, and if you are adding them, the almonds. Start processing (use the pulse feature if available) and drizzle in the olive oil through the top access point as it is blending.
  • Once it is completely combined and finely minced, add salt and pepper to taste. Allow the pesto to sit for at least 10 minutes before serving. This allows the flavors to blend.

8 lime rinds, halved and squeezed, juice reserved for another use
1 cup sugar
ice
2 oz white rum
1 oz lime juice
1 oz lime rind simple syrup
4 fresh mint leaves, plus more for garnish
ginger beer, to taste
1 slice lime, for garnish

Steps:

  • In a medium bowl, combine the lime rinds and sugar. Toss to coat the rinds with the sugar, then cover. Let sit, stirring every 45 minutes, for about 4 hours, or until the sugar is completely dissolved and there's syrup in the bottom of the bowl.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much liquid as possible. Store in an airtight container in the refrigerator for up to 3 months.
  • In a cocktail shaker filled with ice, combine the rum, lime juice, simple syrup, and mint leaves. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with ginger beer.
  • Garnish with the slice of lime and mint leaves.
  • Enjoy!
