- to 325 degrees F, ensuring a rack is positioned in the center of the oven.
- Place the seared pork in the center of one of the pieces of banana leaf. Season with the Hawaiian sea salt & 1 tablespoon of the liquid smoke, using your hands to rub the salt & liquid smoke all over the surface of the pork. Arranged the seasoned pork in a small pile at the center of the banana leaf, folding the corners & edges of the banana leaf into the center to encase the pork. Carefully flip & set the wrapped pork seam side down on the second section of banana leaf. Repeat folding with the remaining pieces of banana leaf. Note: The banana leaf may split a little bit as you work, which is okay. Just work quickly & do your best to completely encase the pork in the banana leaf.

HAM, ROASTED PORK, AND SWISS CHEESE SANDWICH ON SWEET BREAD: MEDIANOCHE

- Assemble the sandwich by slicing all the rolls and dividing the meat and cheese equally. Place the roasted pork, ham, and cheese slices on top of 1/2 of the roll. Place pickle slices on top. Spread mustard on the inside of the other half of the roll. Place the top half of the roll over the sandwich, to close. Spread butter on the outside of the top and bottom of the sandwich.
- Cook in a very hot cast-iron griddle, or electric flat top, until heated through and golden brown on the outside.
SPRINGING SHRIMP ROLLS

- In a large pot of salted boiling water, add shrimp and cook for 3 to 5 minutes, until cooked through, but not tough. Set in an ice bath. Slice shrimp in half from tip to tip and set aside. In a small bowl, pour hot tap water over noodles and set aside to soften, about 10 to 15 minutes. While noodles are soaking, prepare vegetables and herbs. Drain the noodles and cut with kitchen shears into 4-inch lengths. Set aside.
- Prepare an area to work easily for assembly of rolls. Line all vegetables and herbs in front of you along with shrimp and noodles. Have a roll of clear plastic wrap handy. A silicone baking sheet works well as a nonstick surface to work on, but you can use a clean cutting board as well. Fill a shallow bowl (a pie dish works great) with warm tap water and submerge 1 rice paper round into water for 10 to 15 seconds to soften.
- Gently remove rice paper sheet from water, place on work surface. In the center of rice paper, place 3 shrimp halves (striped side down) on rice paper. Top with 1/4 cup noodles. Top with 2 sticks cucumber, 2 sticks carrots, 2 sticks jicama, 3 pieces green onion, 3 tablespoons napa cabbage, 4 tablespoons bean sprouts, and a pinch of basil and cilantro. Finish with 3 more pieces of shrimp, striped side up. Fold rice paper up tightly over filling, fold in ends, and continue rolling, finishing seam side down. Place in plastic wrap and roll so that the rolls can set up and not stick to each other. Repeat to create the rest of the rolls. Refrigerate rolls for 20 to 30 minutes, before serving.
- In a small bowl, vigorously whip peanut butter with a fork until easy to stir. Stir in hoisin sauce, pomegranate juice, soy sauce, mirin and sambal until combined well. Cover and let stand at room temperature until ready to serve.
- When ready to serve, evenly spread remaining napa cabbage on serving platter. Remove rolls from refrigerator. Remove plastic wrap and slice in half on the diagonal. Place half the rolls on their sides on the platter and the other half on their ends, standing up. Serve with peanut sauce.
CHICKEN AVOCADO EGG ROLLS
Steps:
- In a saute pan over high heat, add canola oil. Saute red onions and bell peppers until translucent. Add ginger, garlic, bamboo shoots, celery, chicken, and cook for 5 minutes over medium heat. Deglaze pan with soy sauce. Cool mixture.
- In large bowl combine cabbage, carrots and chicken mixture.
- In medium saucepan, heat rice bran oil to 350 degrees F. Oil needs to be deep enough to keep egg roll from touching bottom of pan. Add more oil, if needed.
- To roll egg rolls, layout egg roll skin with corner facing you, place approximately 1/12th of mixture on roll and place 2 pieces of avocado on top of mixture. Fold corner over mixture, and then fold outside corners over the mixture, making a roll, 4 to 5-inches wide. Roll firmly, being careful not to tear wrapper, and seal the final edge with egg wash.
- Dredge the egg roll in egg wash, allow excess to drain off and submerge egg roll in oil. Fry until golden brown, about 3 to 4 minutes. Drain on sheet tray lined with a cooling rack.
OVEN KALUA PORK

- Preheat oven to 350 degrees. Make several slashes along the surface of the pork butt. Rub with salt, then liquid smoke. Prepare ti leaves by removing the rib. Lay out a large piece of heavy-duty aluminum foil, and place 4 ti leaves on top. Place pork on leaves and wrap them around the pork. Cover with remaining leaves in the opposite direction until pork is completely wrapped. Wrap the foil tightly around the pork to make a watertight seal.
- Place package in a large roasting pan. Fill with two inches of water and cover pan tightly with foil. Bake at 350 degrees for 1 hour. Lower temperature to 325 degrees F and cook for 3-3 1/2 hours or until tender. Unwrap pork from package and shred before serving.

- After scoring pork on all sides with 1/4-inch deep slits about 1-inch apart, rub with 3 tablespoons salt, then liquid smoke. Wrap the pork completely in ti leaves, tie with string, and wrap in foil. Place meat in a shallow roasting pan with 2 cups of water and roast for 4 hours. Dissolve 1 tablespoon Hawaiian salt in 2 cups boiling water and add a few drops of liquid smoke. Shred the cooked pork and let stand in this solution for a few minutes before serving.
SAM CHOY'S OVEN-ROASTED KALUA PIG
Steps:
- Preheat oven to 350°F. Using small sharp knife, cut 1/4-inch-deep slits 1 inch apart all over pork roast. Rub 2 tablespoons sea salt all over pork. Unfold 1 banana leaf on work surface and place pork roast atop leaf. Fold up leaf around pork, enclosing completely. Repeat wrapping pork in remaining 2 banana leaves, 1 at a time.
- Tie with kitchen string to secure, then wrap roast in foil. Place pork in roasting pan; pour 4 cups water into pan.
- Roast pork in oven until very tender when pierced with fork, about 5 hours. Unwrap pork and cool slightly. Shred pork and place in large bowl. Bring remaining 2 cups water and remaining 2 teaspoons salt to boil in small saucepan. Add liquid smoke; pour over pork and stir to blend. Let stand 10 minutes to allow liquid to flavor pork. Serve.
