SPICY CLAM & KALE LINGUINE

Spicy clam & kale linguine image

This easy seafood linguine is the perfect dish to celebrate the start of the weekend. Who could resist clams, kale and an indulgent white wine sauce?

Provided by Sophie Godwin - Cookery writer

Categories     Dinner, Main course, Pasta, Supper

Time 20m

Number Of Ingredients 9

500g clams
200g linguine
2 tbsp olive oil
75g nduja
1 fat garlic clove , finely chopped
100g kale
50ml white wine
½ lemon , zested, then cut into wedges to serve
parmesan , grated, to serve (optional)

Steps:

  • Pick over the clams and discard any that are damaged or stay open when pressed shut, then rinse them in cold water. Bring a large pan of water to the boil, add a pinch of salt and drop in the linguine. Cook for 1 min less than pack instructions.
  • Heat the oil in a large, lidded sauté pan over a medium heat. Add the nduja and cook for 3 mins, breaking up the sausage with the back of the spoon so that it melts into the oil. Stir in the garlic, cook until fragrant, then turn up the heat to high. Add the clams and kale, pour in the wine and put on the lid. Cook for 2-3 mins, shaking the pan occasionally, until the clams open and the kale wilts.
  • Remove any clams that aren't open, then drain the linguine and toss through the sauce. Stir in the lemon zest and season well with black pepper. Serve immediately with parmesan and lemon wedges for squeezing.

Time 1h20m

Yield 6

Number Of Ingredients 9

12 ounces linguica sausage, sliced
1 tablespoon olive oil
1 onion, finely diced
1 pinch salt
3 pounds russet potatoes, peeled and sliced 1/8 to 1/4 inch thick
2 teaspoons salt, plus more as needed
2 quarts chicken broth or water
2 pounds kale - trimmed, chopped, rinsed, drained
1 pinch cayenne pepper

Steps:

  • Slice sausage into 1/4-inch rounds. Heat oil in a pot over medium-high heat. Add sausage and saute until sausage begins to turn brown and renders some fat, 3 to 5 minutes. Transfer with a slotted spoon to a dish. Reduce heat to medium-low; add onions and pinch of salt salt. Stir and cook until softened, 4 to 5 minutes.
  • Transfer potatoes to pot. Sprinkle in 2 teaspoons salt. Pour in chicken broth. Increase heat to high and bring to a simmer. Reduce heat to medium-low; simmer until potatoes are tender, 8 to 10 minutes.
  • When potatoes are tender, carefully mash them in the broth with a potato masher until broken up or completely mashed. Add kale, a handful at a time. Transfer browned sausage to soup. Bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer until greens are tender, about 45 minutes.

Time 1h5m

Yield 6 main-course servings

Number Of Ingredients 13

1/2 cup olive oil
3 large onions, finely diced
4 garlic cloves, minced
2 bay leaves
10 cups vegetable stock
1 (16-ounce) can diced tomatoes
1 (15-ounce) can kidney beans, drained and rinsed well, or 1 1/2 cups freshly cooked beans
1 pound kale, leaves torn from stems and finely chopped (10 cups leaves)
3 medium-size red-skinned potatoes, unpeeled and cut into 1/2-inch dice
2 teaspoons good-quality sweet paprika
Dash cayenne pepper
1 teaspoon salt
Liberal seasoning freshly ground pepper

Steps:

  • Heat the oil in a large stockpot over medium heat. Stir in the onions and garlic, and saute until onions are golden and tender, about 10 minutes.
  • Raise the heat to high, stir in all the remaining ingredients, and bring the soup to a boil. Lower the heat to a lively simmer and cook about 30 minutes, or until the potatoes are tender and the soup has thickened.
  • Discard the bay leaves. Remove about 2 cups of the soup and puree in a blender or food processor. Return it to the soup and stir to blend. This soup?s flavor will intensify with time, so don?t hesitate to make it a few days in advance.

KALE AND CLAM SOUP

CHUNKY VEGETABLE CLAM CHOWDER

Chunky Vegetable Clam Chowder image

My first bowl of Clam Chowder in a quaint little restaurant in San Francisco had me knowing I loved this wonderful chowder. While we have enjoyed a good many recipes since, this one has become not only our favorite but a given for our evening meal on Christmas Eve 'our family tradition in the making' We often add an extra can of clams. The original recipe calls for an optional 1/2 teaspoon Curry Powder which we have yet to give a try. Serving size - a guesstimate!

Provided by Gerry

Categories     Chowders

Time 45m

Yield 6 serving(s)

Number Of Ingredients 13

3 slices bacon (may add an extra slice or two)
2 cups cubed potatoes (I often add more)
1 cup coarsely chopped carrot (I use a very coarse grate)
1/2 cup chopped onion (I like to use leeks)
1/2 cup chopped celery, I add the celery (optional)
1 (10 3/4 ounce) can condensed chicken broth (I use chicken stock)
1 (6 1/2 ounce) can minced clams (drained and liquid reserved)
1 (12 ounce) can evaporated milk (I use half and half or cream)
1/2 teaspoon salt (or to taste)
1/8 teaspoon pepper
2 tablespoons freshly chopped fresh parsley
2 tablespoons shortening (I use Crisco)
2 tablespoons flour

Steps:

  • In a large pot add bacon (I cut into bite size pieces) saute lightly.
  • Add in onions (and the celery which is optional) and saute briefly.
  • Add Chicken broth (I often use two cans of both the broth and the clams) potatoes, carrots, reserved clam juice, salt, pepper and simmer until vegetables are done.
  • Add in the milk, clams and chopped parsley stirring frequently until heated through.
  • You may wish to serve at this point but we make a roux melting shortening in a heavy pan, adding the flour browning to golden brown and whisking into chowder.
  • This can be prepared a day ahead, cool, cover and refrigerate bringing to a simmer (carefully stirring to prevent burning) before serving.

  • Baked Clams with Bacon and Garlic. In this ultimate version of baked clams, chef Daniel Humm includes chopped clams in the filling, doubling down on briny clam flavor.
  • Spaghetti with Clams and Braised Greens. To give spaghetti with fresh clam sauce more flavor, chef Ashley Christensen purees sweet roasted bell peppers into the spicy, briny broth.
  • Clam Risotto with Bacon and Chives. If you buy just-shucked whole clams rather than already chopped clams in a container for this recipe, use their liquid instead of the bottled clam juice; just be sure to strain it first through a paper towel to remove any grit.
  • Clams with Hot Pepper, Saffron, and Tomato Confit. The clams' natural juices, flavored with saffron, make a wonderful broth; a drizzle of basil-scented tomato oil enhances the flavor even more.
  • Linguine with Clams, Bacon, and Tomato. Clams and bacon form a delectable union enhanced by wine-tinged tomato sauce. We recommend chopped clams, which are sold in refrigerated containers in many fish shops and at supermarkets, but you can also use good-quality canned clams.
