BAKED POTATO SALAD
This easy Baked Potato Salad is a guaranteed pot-luck FAVORITE! It's a fun change from a regular potato salad, and instead includes the toppings and flavors you love from a loaded baked potato, including bacon, onions, sour cream and cheese.

Steps:
- Preheat the oven to 400 degrees F. Wash potatoes and prick them with a fork or knife.
- Bake for 50 minutes to 1 hour or until they are fork tender. Remove from the oven and cool completely.
- At this point you can peel all of them, or peel half of them and leave the skin on the other half to get a real baked potato feel. Cut the potatoes into small, pieces.
- Combine the sour cream and mayonnaise in a bowl and stir well.
- Add the potatoes to a large serving bowl. Season well with salt and pepper. Add the sauce (just enough to coat them well--you may not use it all) and gently stir to coat.
- Add most of the bacon, onion and cheese, reserving some for topping at the end, and gently stir to combine.

AMISH POTATO SALAD (OLD-FASHIONED RECIPE)
Steps:
- Place the potatoes in a large pot and fill it with enough salted water to cover them. Bring the water to a boil and continue to cook for 20 minutes, or until the potatoes are fork-tender. Drain and set aside to cool.
- Meanwhile, make the dressing. Whisk together the 2 eggs, sugar, cornstarch, and salt in a saucepan over medium heat. Mix in the vinegar, milk, and mustard. Continue to cook, stirring continuously for about 10 minutes, or until thick.
- Remove from heat and mix in the butter. Allow the dressing to cool in the fridge. Mix in the mayonnaise.
- Peel the potatoes, if desired. Slice them into bite-sized cubes and place them in a large bowl. Mix in the onion, celery, carrots, celery seed, and 4 hard-boiled eggs. Gently toss in the dressing. Refrigerate for at least 1 hour, better if overnight. Serve chilled and enjoy!

KETO POTATO SALAD- NO CAULIFLOWER!

- Start by peeling the rutabagas and chopping them into half inch pieces. Place them in a large pot filled with salted water and place it over medium heat. Bring it to a boil, before letting it simmer until the rutabaga has softened but is still tender. Drain them immediately.
- In a large mixing bowl, combine the remaining ingredients and whisk until smooth. Add the still warm rutabaga and mix until fully incorporated. Cover the bowl and refrigerate for at least an hour.
- Remove the mock potato salad from the refrigerator and transfer onto a serving dish and serve immediately.

KAK'S POTATO SALAD
I used to be one of those that added everything but the kitchen sink to my potato salad, (my dad's fault) but then my sister-in-law gave me this simple recipe and it has been a favorite ever since. It's that old "less is more" thing. Prep and cooking times are approximate, as I just watch my potatoes and use the stabbing with a fork method.

Steps:
- Clean and boil potatoes, using as close to same size as possible. (You can also use White Rose potatoes.).
- While potatoes are warm, but cool enough to handle, peel and chop into good bite size pieces.
- Add sliced green onion and sliced hard boiled eggs.
- In separate bowl, mix mayo, cider vinegar and sour cream and pour into potato mixture, folding until well blended.
- Add salt and pepper to taste.
- Chill 3 - 4 hours, or overnight if possible.
