BREAKFAST PIE WITH A HASH BROWN CRUST
Steps:
- Gather the ingredients. Preheat the oven to 400 F.
- Grease a pie tin and press the hash browns into the pie tin, covering the bottom completely and pressing up onto the sides.
- Bake in the preheated oven for 10 minutes until just browned.
- Add the bacon slices to a sheet pan lined with parchment paper.
- Cook in the preheated oven for 10 minutes, or until firm but not crispy.
- While the crust and bacon are cooking, prepare the mushrooms. Add the butter to a sauté pan. Once melted, add the mushrooms and half of the salt and pepper. Cook on medium-high heat until browned, about 3 minutes.
- Whisk the eggs together until completely beaten and the whites and yolks are totally incorporated.
- Whisk the cooked mushrooms, milk, shredded cheese, and chopped scallions into the eggs. Season with the remaining salt and pepper.
- Pour the egg mixture into the hash brown crust. Bake for 25 minutes or until the eggs are mostly set.
- Form the bacon into a lattice crust over the top of the egg. Then brush the bacon with the maple syrup.
- Bake for another 10-15 minutes or until the bacon has finished crisping and the egg mixture is cooked through. You can test by sticking a knife in the center. If it comes out clean, it's ready to go.
- Serve with additional scallions and maple syrup if you wish.

Individual breakfast pies that can be made ahead of time, and microwaved as needed. My 3 year old grandson loves them, and they are finger food for the little ones. The big guys love them too. I fix hash browns and gravy as side dishes for the big guys, and it is a huge hit!

- Preheat oven to 400 degrees F (200 degrees C).
- In a large, deep skillet over medium-high heat, combine sausage, onion and green pepper. Cook until sausage is evenly brown. Drain, crumble, and set aside.
- Separate the dough into 10 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 10 muffin cups. Evenly distribute sausage mixture between the cups. Mix together the eggs and milk, and divide between the cups. Sprinkle tops with shredded cheese.
- Bake in preheated oven for 18 to 20 minutes, or until filling is set.

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside. , In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 5-10 minutes before cutting.

IMPOSSIBLY EASY BREAKFAST PIE
All the usual breakfast ingredients -- sausage, eggs, potatoes, cheese -- are baked into a pie that makes its own crust. - Cook sausage, bell pepper, and onion in a 10-inch skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain.
- Stir together sausage mixture, potatoes and 1-1/2 cups of the cheese. Add Bisquick, milk, pepper and eggs; stir until blended. Pour into baking dish.

- Combine melted butter and hash browns. Press into the bottom and sides of a greased 10" pie dish. Sprinkle potatoes with salt, pepper. (I also use Tony's on the potatoes) Bake at 350 for 30 minutes or until edges are lightly browned.
- Cook sausage and onion until done and drain.
- In large bowl combine cottage cheese, eggs, chedder cheese with sausage mixture.
- Bake at 350 for 40 minutes or until knife inserted into middle comes out clean. Sprinkle some cheese on top and return to oven until melted.
- Let stand apx 5 minutes to cool.

CHEESY BREAKFAST PIE
I had this at my niece's house recently...it's easy to make up and makes a ton, so it's perfect for a family gathering. The original recipe calls for a pie pan, but she just used a 9x13 in pan with great success. Also, she said she said that you can cook the sausage up the night before so that the next morning all you have to do is mix everything together and bake it. Hope you enjoy!

- Heat oven to 400°.
- Grease 10 x 1 1/2" pie plate.
- Cook sausage and onion in 10-inch skillet, stirring frequently, until sausage is fully cooked; drain fat.
- Mix sausage mixture, potatoes and 1 c cheese in pie plate.
- Beat remaining ingredients except 1/4 c cheese with wire whisk or hand beater until smooth; pour over sausage mixture.
- Bake about 40 minutes or until golden brown and knife inserted in center comes out clean.
- Sprinkle with 1/4 c cheese.
- Bake about 2 minutes longer or until cheese is melted.
