A classic egg mayonnaise recipe to generously spread on buttered white bread - an afternoon tea or lunchbox staple

3 hard-boiled eggs , cooled
1-2 tbsp mayonnaise
4-6 slices white bread
2 tbsp softened butter
cress , to serve

Steps:

  • Peel and finely chop the eggs. Mix with the mayonnaise and some seasoning. Spread the bread with butter and make the sandwiches. Cut into neat fingers and stack on a plate. Scatter with cress so that those who like it can add it.

6 tablespoons unsalted butter, at room temperature
1 to 2 teaspoons dijon mustard
1 to 2 teaspoons anchovy paste
1 baguette, cut into 4 pieces, each halved lengthwise
4 large eggs
Kosher salt and freshly ground pepper
1/4 pound country pate or ham, cut into 4 slices
2 ounces gruyere or comte cheese, thinly sliced
1 cup frisee or other greens
Finely sliced chives, for garnish

Steps:

  • Preheat the broiler to high. Mix 4 tablespoons butter with the mustard and anchovy paste in a small bowl until smooth.
  • Spread the anchovy butter on the cut sides of the bread; place buttered-side up on a baking sheet and broil until toasted, 1 to 2 minutes. Set aside.
  • Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Crack in the eggs; season with salt and pepper and let cook until the yolks just begin to firm up and the edges are slightly crisp, about 3 minutes.
  • Assemble the sandwiches: Place 2 bread halves on each of 4 plates; top with a slice of pate, an egg, some cheese, greens and chives.

NYC BAGEL AND EGG SANDWICH

1 cup Greek yogurt (full fat)
1 cup all-purpose flour, plus more for dusting
2 teaspoons kosher salt, plus more for sprinkling
2 teaspoons honey
1 large egg, beaten
1 tablespoon sesame seeds
6 strips bacon
5 large eggs
1/2 cup grated Cheddar
2 tablespoons creme fraiche (or sour cream)
1/4 cup extra-virgin olive oil
1 tablespoon white wine vinegar (or any white vinegar)
1 teaspoon ground black pepper
1 teaspoon kosher salt
2 cups arugula

Steps:

  • For the bagels: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Mix the Greek yogurt, flour, salt and honey in a large bowl. Mix until it forms a dough (no need to let the dough sit). Place the dough on a floured board and cut into 3 balls. Roll out the balls into a rope shape about 4 inches long and 2 inches thick. Bring the two ends together to form a bagel shape. Place the bagels on the prepared baking sheet. Brush with the egg and sprinkle with sesame seeds and a tiny bit of salt. Bake on the middle rack for 20 minutes. Let rest 5 minutes. You will be transported to NYC.
  • For the bacon: Place the bacon on a baking sheet fitted with a wire rack. Place in the oven top rack for 10 minutes. When the bacon is done, set aside 2 tablespoons bacon grease.
  • For the egg sandwiches: Beat the eggs in a bowl. Then pour in a cold skillet and place on medium-low heat. Wait a minute, then gently stir the eggs until they form soft wet curds. Then add the cheese, creme fraiche, salt and pepper. Mix and immediately take off the heat. The eggs will continue cooking off the heat. Perfect silky buttery eggs!
  • For the arugula salad: Whisk the oil, vinegar, salt and pepper in a medium bowl. Then toss in the arugula. This makes the perfect peppery salty bite.
  • To assemble: Cut the sesame bagels in half and top with some egg. Place 2 strips of bacon on each sandwich. Top with the arugula salad and indulge in comfort food love.

2 teaspoons butter
1 egg
salt and pepper
2 slices whole wheat bread
cheddar cheese
mayonnaise

Steps:

  • Place a small pan on a burner.
  • Add the butter and heat on medium high heat. (Make sure not to heat the pan on high, or else the egg will turn rubbery.).
  • After the butter has melted, crack the egg in the pan.
  • Let sit for about a minute.
  • Pop the yolk.
  • Sprinkle with salt and pepper.
  • When egg is set, flip over and cook other side.
  • Cook egg to your liking.
  • Meanwhile, spread mayonaise on bread and place cheese.
  • Place the cooked egg on top of the cheese, so it will melt.
  • Top with other slice of bread.
  • Enjoy!

Steps:

  • In a large skillet, melt butter over medium high heat. Crack eggs in pan and cook to desired firmness. Just before eggs are cooked, place a slice of cheese over each egg.
  • After cheese has melted, place each egg on a toasted slice of bread. Season eggs with salt and pepper. Spread mayonnaise and ketchup on remaining slices of bread and cover eggs with bread to make 4 sandwiches. Serve warm.
