Every time there is a party or any type of gathering, I'm asked to bring a loaf of my homemade banana bread. It's always the first to go and I'm always jotting down the recipe afterwards for friends. It's simple, quick and delicious!

¼ cup butter, softened
1 cup white sugar
1 egg
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, cream together butter and sugar. Beat in the egg and mashed bananas. Mix in flour, baking soda and salt just until combined. Pour into prepared loaf pan.
  • Bake in preheated oven for 1 hour. If top begins to brown too quickly, decrease heat slightly. Center should be soft and chewy, while the outside, crisp and crunchy.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

Number Of Ingredients 13

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

Forget the loaf pan; we used the waffle iron to make fresh, warm banana bread in a fraction of the usual baking time. If you like your bread a little chunkier, go easy on your bananas when you're mashing them.

1 1/4 cups all-purpose flour
3/4 cup sugar
1/2 cup chopped walnuts
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon fine salt
1 cup smashed banana (2 to 3 small bananas)
1/2 cup vegetable oil, plus more for brushing waffle iron
1/2 cup sour cream or Greek yogurt
1 teaspoon pure vanilla extract
2 large eggs
Soft unsalted butter and confectioners' sugar, for dusting, optional

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Whisk together the banana, oil, sour cream, vanilla and eggs in another bowl. Fold the banana mixture into the flour mixture until just combined (it's ok if there are lumps).
  • Lightly brush the top and bottom of the waffle iron with oil. Fill each section about three-quarters of the way full (there should still be some waffle iron showing). Close and cook until the waffles are golden brown, 4 to 6 minutes. Keep the waffles warm in the oven or covered with foil on a plate while you cook the remaining batter.
  • Spread with butter and dust with confectioners' sugar if you'd like.

3 bananas, finely crushed (for serious and extreme moist and delicious, try 4 bananas)
1 1/2 cups all-purpose flour
1 teaspoon baking soda

1/2 teaspoon vanilla (optional)

Steps:

  • Remove odd pots and pans from oven.
  • Preheat oven to 350º / 180º.
  • Cream together butter and sugar.
  • Add eggs and crushed bananas.
  • Combine well.
  • Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
  • Mix just until combined. Do not overmix.
  • Pour into greased and floured loaf pan.
  • Bake at 350º / 180º for 55 minutes.
  • Keeps well, refrigerated.

1/2 cup butter
1 cup Splenda sugar substitute
1/2 cup plain fat-free yogurt
1 cup unsweetened applesauce
6 medium over-ripe bananas
2 1/2 cups whole wheat flour
5 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground cloves

Steps:

  • Preheat oven to 350°F.
  • Spray 2 loaf pans with cooking spray.
  • In medium bowl, combine flour, baking powder, cinnamon and cloves. Set aside.
  • In another bowl, cream together butter and Splenda.
  • Blend in mashed bananas.
  • Add flour mixture to wet mixture, stir together just until combined.
  • Spread in pans and level off with knife or spatula.
  • Bake for approximately 1 hour or till toothpick inserted in center comes out clean.

I have been making this banana bread for years now.It comes from the Fanny Farmer Baking Book. I've tried others but none come close to this one. It is moist and flavorful. Wrapped tightly, it can be kept for a few days (If it lasts that long), and freezes well also. My kids like when I add about a half a cup of mini chocolate chips to this also.

2 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 cup vegetable shortening
2 cups sugar
2 cups mashed ripe bananas (about 6 medium)
4 eggs, slightly beaten
1 teaspoon vanilla (my own addition;feel free to omit)
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 9X5 loaf pan.
  • Stir together the flour, salt and baking soda.
  • In a large bowl, mix the shortening, sugar, banana, eggs, and walnuts (and vanilla if using).
  • Add the combined dry ingredients and stir just until the batter is thoroughly blended.
  • Do not overbeat as that will make your bread tough.
  • Pour into a prepared pan and bake for about 65 to 70 minutes or until a skewer inserted in the center of the bread comes out clean.
  • You may have to cover the bread with foil at some point during the baking to prevent over browning.
  • Remove from the oven and let cool for about five minutes in the pan, then turn out onto a rack to finish cooling.

1-3/4 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda

2 large eggs, room temperature
2 medium ripe bananas, mashed (1 cup)
1/2 cup canola oil
1/4 cup plus 1 tablespoon buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts. , Pour into a greased or parchment-lined 9x5-in. loaf pan. If desired, sprinkle with additional walnuts. Bake until a toothpick comes out clean, 1-1/4 to 1-1/2 hours. Cool in pan for 15 minutes before removing to a wire rack.

Yes....here goes another banana bread recipe into the archives. I made this 2 nights ago and it is delicious! I made it into 3 loaves and 12 muffins. The original recipe asks for 2 cups chopped nuts as well, but since I am allergic, I omitted them. It is a recipe from one of of my many church cookbooks that I own and the credit goes to Victoria Lindsay. Thanks!

9 ripe bananas, mashed
3 cups sugar
1 1/2 cups margarine
6 eggs
1 cup buttermilk
6 cups flour
1 tablespoon baking soda
1 tablespoon baking powder
1 tablespoon vanilla

Steps:

  • Grease 4 muffin tins.
  • Cream sugar, margarine, and eggs.
  • Add dry ingredients and mix well.
  • Add mashed bananas.
  • Pour into tins and Bake at 350 for 65-70 minutes, or until toothpick inserted comes out clean.
  • If you want to make muffins, just start checking after 20 minutes.
