Ingredients

1 (12 ounce) can Spam
2 hard-boiled eggs, chopped
1/4 sweet onion, chopped
2 tablespoons pickle relish (optional)
1 -2 tablespoon mayonnaise

Steps:

Grate the spam. (I usually just use my pastry cutter).
Combine all ingredients except the mayo.
Add just enough mayonnaise to hold ingredients together.
Use for sandwich spread or on a bed of lettuce or on crackers for an appetizer.

Ingredients

1 (12 ounce) can ground Spam
1/4 cup onion, chopped fine
1 lb mild cheddar cheese or 1 lb Velveeta cheese, shredded
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

Mix all ingredients.
Spread on hamburger buns.
wrap in foil.
Bake 1/2 hour at 375.
If desired, may spread on bun halves and brown under broiler.
