MINT JULEP

Steps:
- Make the mint syrup: Bring the sugar and 1 cup water to a simmer in a small saucepan over medium heat, stirring until the sugar is dissolved. Remove from the heat and add the mint sprigs, pressing with a wooden spoon to submerge them. Let cool to room temperature, then remove the mint with a slotted spoon and discard. Refrigerate the syrup until chilled, at least 1 hour. (You will have about 1 1/2 cups syrup; cover and refrigerate up to 2 weeks.)
- Make the drink: Put the mint leaves and 1 ounce of the mint syrup in a small glass or julep cup. Muddle with the handle of a wooden spoon until the leaves start to break apart. Stir in the bourbon. Fill the glass with crushed ice. Garnish with a mint sprig.
MINT JULEP

- Place the mint leaves in the bottom of an old-fashioned glass and top with the sugar. Muddle these together until the leaves begin to break down. Add a splash of seltzer water, fill the glass 3/4 full with crushed ice, and add the bourbon. Top with another splash of seltzer, stir, and garnish with a sprig of mint. Serve immediately.
THE PERFECT MINT JULEP

- To prepare mint extract, remove about 40 small mint leaves. Wash and place in a small bowl. Cover with 3 ounces bourbon. Allow the leaves to soak for 15 minutes. Then gather the leaves in paper toweling. Thoroughly wring the mint over the bowl of whisky. Dip the bundle again and repeat the process several times.
- To prepare simple syrup, mix 1 cup of granulated sugar and 1 cup of distilled water in a small saucepan. Heat to dissolve sugar. Stir constantly so the sugar does not burn. Set aside to cool.
- To prepare mint julep mixture, pour 3 1/2 cups of bourbon into a large glass bowl or glass pitcher. Add 1 cup of the simple syrup to the bourbon.
- Now begin adding the mint extract 1 tablespoon at a time to the julep mixture. Each batch of mint extract is different, so you must taste and smell after each tablespoon is added. You are looking for a soft mint aroma and taste-generally about 3 tablespoons. When you think it's right, pour the whole mixture back into the empty liter bottle and refrigerate it for at least 24 hours to "marry" the flavors.
- To serve the julep, fill each glass (preferably a silver mint julep cup) 1/2 full with shaved ice. Insert a spring of mint and then pack in more ice to about 1-inch over the top of the cup. Then, insert a straw that has been cut to 1-inch above the top of the cup so the nose is forced close to the mint when sipping the julep.
- When frost forms on the cup, pour the refrigerated julep mixture over the ice and add a sprinkle of powdered sugar to the top of the ice. Serve immediately.

- Put the bourbon + sugar into 2 warmed lrg wine glasses in equal amts. Add hot coffee equally & stir to dissolve the sugar.
- Top w/cream by pouring it over the back of a spoon. DO NOT STIR. Garnish w/chopped mint as desired.
- VARIATION NOTE: Can be adapted for use w/other alcohol such as Southern Comfort or Wild Turkey to produce different flavours.

They have a fair amount of Bourbon, but not nearly enough to taste exactly like a mint julep- just enough to make them for the adults only. And no matter who wins the race, I BET you'll enjoy them! - Preheat the oven to 350F, and line cupcake cups.
- In a large bowl, whisk together the flour, baking powder, & salt. Set aside.
- In the mixer bowl, cream together the butter and sugar. Add the eggs one at a time. Once the eggs are combined, add the extracts. Slowly add in half of the flour mixture. Add the milk and liquors to the batter, then the rest of the flour. Mix as little as possible, just until the batter comes together.
- Divide evenly among the cupcake cups. Bake for 15-18 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Let cool.
- For the frosting: Whip the butter & shortening using the whisk attachment (if available). Slowly add in half the powdered sugar. Add in the extracts & bourbon. Add the rest of the powdered sugar. Then slowly add in milk until frosting reaches desired consistancy.
- Once cupcakes are completely cooled, frost and top with mint leaves and green sprinkles (optional, for decoration!).

- To make the Mint Simple Syrup, bring the sugar and water to a boil in a medium saucepan. Boil, stirring often, for 5 minutes or until sugar dissolves.
- Remove from heat, add mint, and let cool completely.
- Pour syrup into a glass jar, then cover and chill 24 hours. Remove the mint and discard.
- To make the drink, place mint leaves and Mint Simple Syrup in a chilled julep cup. Gently press the leaves against the cup with the back of a spoon to release flavors.
- Pack the cup tightly with crushed ice and pour the bourbon over ice. Insert a 4-inch cocktail straw, place mint sprig directly next to straw, and sprinkle with powdered sugar, if desired.
- Serve immediately.
VIRGIN MINT JULEP
I came across this recipe in a newspaper several years ago. Its refreshing and great for those who wish to abstain from alcohol yet join in the festivities, at Kentucky Derby parties, or anytime.

- 1. Rinse mint leaves and remove any thick stems. Set aside. Put ginger ale in refrigerator to chill. Mix lemon juice, sugar and water in a small saucepan. Heat and stir until sugar is dissolved. Chill.
- 2. Pour chilled lemon juice mixture over mint leaves and refrigerate for 30 -60 minutes. In a large pitcher mix lemon juice-mint mixture, ginger ale, and ice. Stir vigorously until pitcher is frosted and serve.
