1 medium onion, chopped
1 clove garlic, chopped
1 tablespoon olive oil
2 (14 1/2 ounce) cans vegetable broth or 2 (14 1/2 ounce) cans chicken broth
2 (14 1/2 ounce) cans diced tomatoes
1 (14 1/2 ounce) can green beans (undrained)
1 (14 1/2 ounce) can corn (undrained)
1 (14 1/2 ounce) can mixed vegetables (undrained)
1 (14 1/2 ounce) can beans (undrained, whatever is in the pantry that day)
1/4 cup rice
1 -2 bay leaf
dried basil, to taste
dried thyme, to taste

Steps:

  • Saute the onion and garlic in the olive oil.
  • Add the rest of the ingredients while seasoning to taste with the basil and the thyme.
  • Bring to a quick boil, and then cover the soup and reduce the heat to let it simmer for a good 20 minutes to let the rice fully cook.
  • for the beans, kidney beans works very nicely, but whatever your preference is will work.
  • it goes really well with some crusty bread or buttered cornbread.

I have been making this a long time. It can't be beat. Yummy and so good for you. When I was on weight watchers I lived on this. You can put in whatever vegetables you have in the fridge, and add whatever canned ones you like. This is my basic recipe. You can use what ever vegetables you like. I like to add a little Cajun spice to my bowl.

6 cups water
4 chicken bouillon cubes
4 cups potatoes
2 cups carrots
1/4 head cabbage
1 (28 ounce) can chopped tomatoes
1/2 teaspoon salt
1/2 teaspoon pepper
15 1/2 ounces corn
1 (14 1/2 ounce) can green beans

Steps:

  • Add water and bouillon, bring to a boil.
  • At this point add whatever vegetables that needs to cook, carrots, potatoes, cabbage, broccoli, cauliflower, squash, zucchini, (good time to clean out the fridge); slow boil for 15-20 minutes, until potatoes are done.
  • Add tomatoes (or tomato juice), salt and pepper and canned vegetables (its a good time to clean out cabinets).

1 garlic clove
1 leek
2 carrots
1 potato
3 sticks celery
1 turnip
1 parsnip
3 florets cauliflower
1 courgette
2 tomatoes
handful mushroom
vegetables
2 slices bacon
2 tablespoons oil
1 (14 ounce) can tomatoes
2 pints vegetable stock
1 teaspoon mixed herbs
salt
pepper
1 dash Tabasco sauce
handful parsley

Steps:

  • Peel and wash the chosen vegetables and slice or cut them into 1/2 in (1cm) dice according to type. Peel the marrow but leave the skin on the courgettes. Cut the fresh tomatoes into quarters. Rinse and slice any large mushrooms, leave small ones whole. De-rind and chop the bacon.
  • Heat the oil in a large saucepan over a moderate heat, and fry the sliced onion, chopped garlic and bacon for 4-5 minutes until the onion is softened but not brown, and the bacon is just crisp.
  • Add the prepared chosen root vegetables (leeks, carrots, potato, celery, turnip, swede and parsnip) and fry for a further 4-5 minutes, turning them over gently in the hot oil. Add the canned tomatoes, pour on the stock and gravy, add the herbs, stir well and bring to the boil, then reduce the heat and simmer with the lid on for 20-30 minutes, until the vegetables are soft.
  • Add the remaining fresh vegetables (cauliflower florets, courgettes, marrow, tomatoes, mushrooms) and continue to simmer for a further 15 minutes, adding the left-over cooked vegetables for the last 10 minutes of cooking time.
  • Season well with salt, pepper and a dash of Tabasco. Sprinkle with fresh snipped parsley or chives if available and serve nice and hot.

8 cups beef broth or 8 cups vegetable broth
3 medium onions, chopped
2 cups chopped celery (about 2 stalks)
2 medium potatoes, diced
1 cup chopped tomato (canned is fine)
3 cups cabbage, coarsely chopped
1 cup canned green beans or 1 cup frozen green beans
2 cups canned corn (more if desired) or 2 cups frozen corn (more if desired)
1 1/2 cups carrots, chopped
1 1/2 teaspoons black pepper, freshly ground
1 cup water (if needed)

Steps:

  • Add broth to a large soup pot.
  • Add onions, celery, potatoes, tomatoes, cabbage, green beans, corn, and carrots.
  • Bring mixture to a simmer.
  • Add black pepper.
  • Simmer for 20-30 minutes, or until potatoes and carrots are tender.
  • Add water if necessary to thin out soup.
  • Tastes even better the next day.
  • For Vegetarian use the vegetable broth.

2 tablespoons olive oil
3 stalks celery, chopped
3 carrots, chopped
1 onion, chopped
3 cloves garlic, minced
3 cups vegetable stock
1 tablespoon Italian seasoning, or more to taste
1 teaspoon kosher salt
⅛ teaspoon ground black pepper
1 (14.5 ounce) can diced tomatoes with basil and garlic
2 potatoes, diced
1 (15 ounce) can kidney beans, drained
1 cup bite-sized pieces kale

Steps:

  • Heat olive oil in a large pot over medium heat. Cook and stir celery, carrots, onion, and garlic in the hot oil until the onion is translucent, 7 to 10 minutes.
  • Pour vegetable stock over the vegetable mixture; season with Italian seasoning, kosher salt, and black pepper. Stir tomatoes, potatoes, and kidney beans into the stock mixture; bring to a simmer and cook until the potatoes are tender, about 40 minutes. Add kale and continue cooking until the kale wilts, about 5 minutes.
