Homemade Chocolate Sauce image

Homemade Chocolate Sauce is incredibly easy to make and rivals anything you'll buy at the store. Whip up a batch in only 5 minutes and then drizzle it on all your favorite desserts!

1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/8 teaspoon kosher salt
1/2 cup cold water
1 1/2 teaspoons vanilla

Steps:

  • In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium-medium high heat.
  • Reduce to a gentle simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add in the vanilla.
  • Pour into a glass jar and allow to cool. {The chocolate sauce will be very thin when it finishes boiling, but it will thicken quite a bit as it cools.}
  • Refrigerate until needed.

This is a super easy sauce that I whipped up tonight on the suggestion of a friend who brought over ice cream and cookies. It's easy to mod, but I'll tell you how I made it. Serving size depends on how you use it.

1 tablespoon butter
1/4 cup heavy cream
1/4 cup 2% low-fat milk
1 -2 tablespoon turbinado sugar
4 ounces semisweet chocolate, chopped (I used chips, but that's not ideal because of the emulsifiers...worked fine though)
1 teaspoon vanilla extract

Steps:

  • place butter, cream, milk and sugar in a pan over medium high heat.
  • stir constantly.
  • allow to come to rolling boil and take off heat.
  • add chocolate and allow to sit for about a minute - to melt.
  • stir until integrated.
  • add vanilla extract, stir.
  • serve over ice cream, dip cookies in it, eat it from the spoon.
  • *you can add dark rum instead of vanilla, 1/2 of light cream instead of the 1/4 and 1/4, white sugar instead of turbinado, etc.

1/2 cup half-and-half cream
1 tablespoon unsalted butter
2 tablespoons granulated sugar
4 ounces semisweet chocolate, finely chopped
1/2 teaspoon espresso powder
1 teaspoon pure vanilla extract
1 tablespoon coffee liqueur

Steps:

  • Place the chopped chocolate in a medium bowl. In a small saucepan, bring the half and half, butter, and sugar to a boil, stirring constantly. Pour the heated mixture over the chocolate.
  • Let stand for 1-2 minutes, then stir until the chocolate is completely smooth. Add the vanilla, espresso powder and liqueur (if using), and stir to combine. Serve warm. If serving cool, sauce can be thinned with water--one teaspoon at a time. Cover and refrigerate for up to 2 weeks. Reheat over a low heat or in the microwave.

6 ounces unsweetened chocolate, cut into chunks
3 cups confectioners' sugar
6 tablespoons unsalted butter, cut into small pieces
1 teaspoon vanilla

Steps:

  • Bring the cream to a boil. Remove from heat and add chocolate. Cover and set aside for 10 minutes. Scrape into a food processor and add the confectioners' sugar, butter and vanilla. Process until smooth, then 1 minute more. Set aside at room temperature until thickened into a spreadable consistency.

1/2 cup butter
1/2 cup sour cream (I used light)

Steps:

  • Put chips in a microwave safe saucepan with butter on top. Microwave on medium for 2 minutes, then stir.
  • Continue cooking at medium heat for 20 second increments then stirring until smooth.
  • Add a spoonful of sour cream and stir well (this tempers the chocolate mix).
  • Stir in the rest of the sour cream till well blended.
  • Spoon over ice cream. YUM!

1/3 cup water
1/4 teaspoon salt

  • Combine everything except the flour in a small saucepan stir and let boil for about 5 minutes over a medium/low heat.
  • Stir constantly and never leave alone.
  • Stir in flour and let boil for another 1-2 minutes.
  • Let cool.

This recipe for a classic hot fudge sauce came to The Times in 2004, from Kay Rentschler. "A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

2 cups heavy cream
4 tablespoons unsalted butter
1/2 cup light brown sugar
3/4 cup granulated sugar
1/4 teaspoon fine sea salt
2 ounces bittersweet chocolate in small pieces
1 1/4 cups sifted high-fat Dutch-process cocoa like Valrhona, Pernigotti or Droste (sift, then measure)
1/2 teaspoon vanilla extract

Steps:

  • In medium saucepan, combine cream, butter, sugars and salt. Bring to a simmer over medium-low heat. Simmer 45 seconds. Add chocolate, and whisk to dissolve. Remove from heat, add cocoa, and whisk until no lumps remain.
  • Return pan to low heat, and simmer sauce until glossy, whisking constantly, 20 seconds. Remove from heat, and stir in vanilla. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.
