JO'S FABULOUS FUDGE

If you like a smooth creamy luxurious fudge, not at all sugary or hard, and one that is easy to cut into portions without crumbling, then this is the one. Definitely not part of a daily diet. Make for special occasions only.

800 g sweetened condensed milk
2 cups soft brown sugar, firmly packed
250 g butter
100 ml sugar syrup
3 tablespoons golden syrup
400 g white chocolate, chopped
1 teaspoon vanilla

Steps:

  • Spray and line with non-stick baking paper, a 20 x 30 cm, quite deep (at least 4 cm) tin, or 2 smaller tins.
  • Place all ingredients, except the chocolate and vanilla, in a large heavy based saucepan and stir over medium heat until the butter melts and the sugar dissolves. Bring to the boil and boil gently until it becomes very thick and changes colour to a dark caramel brown paper shade - about 6 minutes, to the soft ball stage, 116°C on a sugar thermometer. Stir often to prevent it catching on the bottom - I find a silicon spatula the best gadget to stir with. Remove from heat and stand until the bubbles subside. Stir in the chocolate and vanilla until melted and smooth.
  • Pour into the prepared tin and smooth the surface. Cool to room temperature (about 3 hours) then refrigerate until firm. Cut into squares. Store in an airtight container in the fridge for up to 6 weeks - if you're lucky.

CLASSIC HOT FUDGE

8 ounces semisweet chocolate, chopped
3/4 cup heavy cream, plus more for reheating
4 tablespoons unsalted butter
1/4 cup light corn syrup
2 tablespoons packed light brown sugar
2 tablespoons unsweetened cocoa powder
1/8 teaspoon kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Combine the chocolate, heavy cream, butter, corn syrup, brown sugar, cocoa powder and salt in a small saucepan over medium heat. Cook, stirring often, until the chocolate is melted and smooth, about 5 minutes. (Do not simmer or the chocolate may scorch and taste bitter; reduce the heat if needed.)
  • Remove from the heat and stir in the vanilla. Let cool slightly. Refrigerate up to 1 week; reheat in a small saucepan over low heat or microwave in 30-second intervals, thinning with more heavy cream if needed.
  • Use milk chocolate instead of semisweet along with 1/3 cup creamy peanut butter; increase the heavy cream to 1 cup and the brown sugar to 1/4 cup. Stir in 1/2 cup chopped salted roasted peanuts at the end.
  • Use half semisweet and half milk chocolate along with 2/3 cup butterscotch chips; increase the butter to 6 tablespoons.
  • Add 1/3 cup seedless raspberry jam with the chocolate. Replace the butter with coconut oil and omit the corn syrup and brown sugar. Use coconut extract instead of vanilla.
  • Add 1/3 cup cherry jam with the chocolate. Omit the corn syrup and brown sugar. Use 1/2 teaspoon almond extract instead of vanilla.
  • Add 1/3 cup orange marmalade and 1/2 teaspoon chipotle chile powder with the chocolate. Omit the corn syrup and brown sugar. Add 1/4 teaspoon orange extract with the vanilla.
  • Use milk chocolate instead of semisweet along with 1/3 cup chocolate-hazelnut spread and 1 tablespoon instant espresso powder. Omit the corn syrup, brown sugar and vanilla. Stir in 2 tablespoons hazelnut liqueur at the end.

¼ cup unsalted butter
4 ounces bittersweet baking chocolate (or ⅔ cup semisweet chocolate chips)
8 ounces evaporated milk (or half and half)
¾ cup granulated sugar
6 to 8 tablespoons unsweetened cocoa powder (depending on how chocolate-y you want the hot fudge)
¼ teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Melt butter and bittersweet baking chocolate (or semisweet chocolate chips) together in a small or medium saucepan over medium low heat, stirring frequently.
  • Once the chocolate and butter have melted, slowly whisk in the evaporated milk (or half and half if that's what you're using) until combined.
  • Whisk in the granulated sugar, unsweetened cocoa powder, and salt until combined.
  • Keep over medium low heat, whisking frequently, about 5 to 6 minutes until mixture comes just to a boil. Reduce heat and simmer for another 2 to 3 minutes, stirring continuously.
  • Remove from heat and stir in vanilla extract.
  • Serve hot fudge sauce warm over ice cream or allow to cool, transfer to a heat safe jar or container and store in the fridge for up to 3 weeks.

Steps:

  • Combine the heavy cream, butter, brown sugar, corn syrup and salt in a saucepan. Bring to a simmer over medium heat, whisking. Add the chocolate and cocoa powder, reduce the heat to low and cook, whisking, until the chocolate is melted and the sauce is smooth, 1 to 2 minutes.
  • Whisk in the vanilla. Let cool 10 minutes before serving. To store, let cool completely, then cover and refrigerate up to 2 weeks; reheat before serving.

1 chocolate graham cracker crust
1 c peanut butter
1 pkg (8 ounces) cream cheese, room temperature
(1) 12 oz cool whip, divided
(1)11.75oz jar(s) hot fudge topping, divided ½ cup sugar
1/2 c cup sugar or splenda
TOPPING
2 Tbsp hot fudge
2 Tbsp peanut butter

Steps:

  • 1. In large bowl,beat peanut butter,cream cheese, and sugar until creamy. Fold in 3 cups Cool Whip. Spoon mixture into crust and smooth to edges. Remove 2 tablespoons hot fudge and peanut butter from jars and reserve each in a zip-loc plastic baggie for later.
  • 2. Heat remaining hot fudge according to package directions. Spread on top of peanut butter layer. Refrigerate pie until serving time. At serving time,carefully spread remaining Cool Whip on top of pie.
  • 3. Knead hot fudge in baggie with hands. Cut tiny hole in corner of baggie and pipe over pie. Repeat with 2 tablespoons peanut butter and pipe on pie in opposite direction. Serve.

0.75 cups sugar
5 ounces evaporated milk
1 pinches salt
0.5 teaspoons vanilla extract

Steps:

  • In small saucepan set over low heat, melt butter or margarine. Add cocoa and sugar, blend thoroughly. Add the evaporated milk, salt and vanilla, stir constantly.
  • Put up heat to medium and cook until it bubbles and thickens, about 5-8 minutes.
  • Store in glass covered container in refrigerator after it cools.
