The Best Chili image

There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

4 tablespoons oil
1 cup onion, diced
1 cup celery, diced
1/2 green pepper, diced
1 garlic clove, finely chopped
1 1/2 lbs ground chuck
1 (14 ounce) can stewed tomatoes
1 (10 1/2 ounce) can tomato soup
1 (14 ounce) can tomato sauce
1 (14 ounce) can red kidney beans
1 (10 ounce) can sliced button mushrooms
2 tablespoons chili powder
1 1/2 teaspoons salt
2 1/2 teaspoons sugar
2 tablespoons cold water

Steps:

  • Heat oil in frying pan and partially cook onion, green pepper, celery and garlic. Push to the side.
  • Add ground chuck and brown. Chop into large chunks, and then drain grease.
  • Dump cooked meat mixture and all other ingredients (except kidney beans) into crock pot and mix well.
  • Cook on HIGH for 1 hour, then turn on LOW for 4 hours. Add red kidney beans during last 15 minutes of cooking.

1 (14 1/2 ounce) can stewed tomatoes (14 1/2 ounces)
1 (8 ounce) can tomato sauce (8 ounce)
1 lb kielbasa (I use lowfat turkey blend)
1 onion (chopped)
1 green pepper (chopped)
1 tablespoon chili powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
1 (15 ounce) can kidney beans (drained and rinsed)

Steps:

  • Chop sausage into bite size pieces.
  • In a large skillet, brown meat and add chopped vegetables.
  • Sautee until tender.
  • Add tomatoes, tomato sauce, chili powder, cumin, and cayenne pepper, cover and simmer for 15 minutes.
  • Stir in beans and heat an additional 10 minutes or until heated through.

1 medium onion, diced
2 green chili peppers, diced
1 stalk celery, diced
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper

2 cups water

Steps:

  • Brown the beef and drain the fat off.
  • Crumble the cooked beef into pea size pieces.
  • In a large pot, combine the beef plus the remaining ingredients and bring to a simmer over low heat.
  • Cook stirring every 15 minutes for 2-3 hours.

I can't describe how wonderful the whole house smelled whenever she made this, and all of us kids would fill up on it so much that we couldn't MOVE for the rest of the day! NOTE: She always INSISTED on serving only Vermicelli pasta with this -- No regular spaghetti or thin spaghetti would do...

3 tablespoons oil
1/2 cup onion, diced
1/2 cup celery, diced
1/2 cup green pepper, diced
1 large garlic clove, diced
1 1/2 lbs ground sirloin
1/2 lb ground pork or 1/2 lb ground veal
2 (6 ounce) cans tomato paste
1 (14 1/2 ounce) can tomato sauce
2 (14 1/2 ounce) cans stewed tomatoes, not drained
1 (4 1/2 ounce) can sliced button mushrooms, not drained
1 (4 1/2 ounce) can whole mushrooms, not drained
2 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 teaspoon oregano
4 teaspoons sugar
5 tablespoons chopped parsley
7 tablespoons parmesan cheese, grated

Steps:

  • In a large stockpot or dutch oven, saute' onion, celery, green pepper and garlic in oil until PARTIALLY tender. Push aside in the pot.
  • Add ground meats and brown. Chop meat into rather large chunks -- not too small. Mix meat and saute'd vegetables well.
  • Add tomato paste, tomato sauce and stewed tomatoes and stir, mixing well.
  • Add sliced mushrooms and whole mushrooms with liquid. Stir.
  • Add all the spices including the grated Parmesan cheese. Mix thoroughly.
  • Bring to a boil. Stir and simmer for AT LEAST 1 1/2 hours, stirring frequently.
  • Serve sauce OVER cooked, drained and buttered VERMICELLI pasta. Sprinkle additional grated Parmesan cheese on top, if desired.

JOLEAN'S BUTTERSCOTCH PIE, PENNSYLVANIA DUTCH STYLE

This is a personal, absolute favorite of mine!!! Mom never would tell us where she got this recipe (which always made Dad raise one eyebrow...LOL!) And she never gave us girls the recipe while she was here --- it was something truly special to her as well, although I don't know exactly why. I found the old, yellowed, hand-written recipe hidden deep in her personal recipe box after she passed away... The taste and the texture of this pie is incredible, and I've never been able to match it -- I've tried for 6 or 7 years to find a "quick" fix for this. But nope...Nothing doing. Gotta have this exact recipe!!! Once you have this, you'll never fully enjoy any other butterscotch pie!!! (I sound pretty serious, don't I?) LOL! No, seriously, the recipe looks a whole lot more complicated than it really is -- super simple, just home-made! YUM!

1/4 cup real butter
1 cup light brown sugar, firmly packed
4 tablespoons flour (fresh)
2 cups whole milk
3 large egg yolks, separate eggs (reserve whites for meringue topping)
1/2 teaspoon pure vanilla extract
1 pinch salt
1 (9 inch) pie crusts, prepared (baked and cooled)
3 large egg whites (reserved from pie filling recipe)
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
6 tablespoons granulated sugar

Steps:

  • Preheat oven to 350°.
  • Stir brown sugar and butter in a saucepan until butter melts and sugar dissolves. Cook 2-3 minutes longer on low-medium heat, and then remove from fire.
  • Beat egg yolks.
  • In separate large bowl, mix flour with 1/2 of milk, until smooth. Then add beaten egg yolks and salt and mix well. Blend remaining milk with this mixture.
  • Add flour mixture to saucepan with sugar/butter mixture and cook on low/medium heat until thickened (anywhere from 30-45 minutes), stirring CONSTANTLY.
  • Remove from heat and blend in vanilla extract. Stir CONSTANTLY until well blended and slightly warm and then pour into a prepared (baked) 9" pie crust.
  • Top pie with meringue (recipe to follow).
  • After meringue is spread on top, Bake at 350° for 12 to 15 minutes, or until meringue is golden. Cool for 10-15 minutes.
  • MERINGUE: 3 egg whites (reserved from pie filling recipe), 1/2 teaspoons vanilla, 1/4 teaspoons cream of tartar, 6 tablespoons granulated sugar.
  • With a mixer, beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved.
  • Spread meringue over slightly warm filling, sealing to edge of crust. (Then bake and cool as directed above.).

This is a recipe that my Mom always made for us in the 70's, which I found in her original 1970 Crock Pot Recipe Booklet (with the page "dog-eared" and check-marked), and over the years has been tweaked just a bit for our own tastes...Super easy, and since I've been married (and divorced) twice now, I can honestly tell you that it is a "Man-Pleaser" as well as a kid-friendly recipe. I make this at least a couple of times every month, and they always ask me when I'm going to make it again! Really tasty, and easy too, since you dump everything in the crock pot in the morning and when you all come home from work or school, the house smells amazing!!!

4 boneless skinless chicken breasts
1 (6 ounce) can tomato paste
3/4 cup beer, Budweiser is my choice
1 (6 ounce) jar Spanish olives with pimento (with liquid)
1 teaspoon paprika
1/2 teaspoon garlic powder
salt & pepper
1 (16 ounce) bag wide egg noodles, cooked according to pkg. directions, drained and buttered VERY WELL

Steps:

  • Wash chicken breasts, drain, and season on both sides with salt, pepper, paprika and garlic powder.
  • Place seasoned chicken breasts in crock pot.
  • Mix tomato paste and beer together and pour evenly over chicken breasts.
  • Add olives with liquid.
  • Cover and cook on low for 7-9 hours.
  • Serve each chicken breast over a small mound of prepared noodles, and dish sauce (with olives) over each serving. YUM!
  • NOTE: You can also substitute 3/4 cup (6 oz.) chicken stock instead of beer. Makes it a bit more savory and seems to be more tasty for kids that way -- .

2 pounds lean ground beef
2 tablespoons olive oil
1 green bell pepper, diced
6 cloves garlic, minced
3 tablespoons ground cumin
1 tablespoon chili powder, or more to taste
salt and ground black pepper to taste
1 (28 ounce) can diced tomatoes
4 cups water

Steps:

  • Heat a large skillet over medium heat and add ground beef; cook and stir until meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Heat olive oil in a soup pot over medium-high heat. Cook and stir green pepper in the hot oil until it starts to soften, 5 to 7 minutes. Reduce heat to low, stir in garlic, cumin, and chili powder, and season with salt and black pepper to taste.
  • Mix cooked ground beef and tomatoes into green bell pepper mixture, breaking up tomatoes with a spatula. Add 4 cups of water or enough to cover the ingredients, reduce heat to low, and simmer at least 2 hours to blend flavors.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.
