ORIGINAL JOE'S SPECIAL
There are many different versions of this, and we love to eat this with tabasco sauce and sometime along with ketchup drizzled over it. The kids like this with ketchup (of course). I've always eyeballed the seasonings, and relied on the hot sauce, so do adjust to your taste (add more seasonings if you don't use hot sauce or ketchup)!

Steps:
- Heat skillet, sautee chopped onions until softened, add garlic.
- Meanwhile, in another skillet, heat and add olive oil, add mushrooms and sautee a few minutes. Season with some salt and pepper, add red wine. Simmer with lid slightly open.
- Add ground meat to the onions, season with salt, pepper, Italian Seasonings, garlic powder, and brown the meat.
- When meat is almost cooked through, add spinach and the entire skillet of mushrooms and juices, add worchestershire. Cook through. Turn heat to low and add eggs, stir and cook until set. Adjust seasonings to taste.

- Slice off the root and top ends of the onions, peel the onions. Cut the onions in half. Lay them cut side down and slice the onions lengthwise to desired thickness.
- I use a cast-iron skillet to saute'. Coat the bottom of the skillet with olive oil about (1-teaspoon per onion). Heat the skillet on medium high heat. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. After about 10 minutes, sprinkle some salt over the onions and or any seasonings such as (fajita or cajun), and if you want to, you can add some sugar to help with the caramelization process.Add a little water to the skillet if they start to dry out. You can use butter instead of the olive oil, or a mixture of the two.
- Let cook onions for 30 minutes to an hour or more, stirring every few minutes. As soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn. After the first 20 to 30 minutes you may want to lower the temperature a little bit, and add a little more oil, if you find the onions begin to start burning. A fork will help you scrape up the browned bits from the bottom of the skillet as they begin to caramelize. As the onions cook down, you may find you need to scrape the skillet every minute or so. Continue to cook and scrape, cook and scrape, until the onions are a rich, browned color.

- In a large skillet over medium-high heat, saute the ground beef for 5 minutes. Add the onion and red bell pepper; saute for 5 more minutes, or until onion is tender. Drain the fat.
- Mix in tomato paste and water, stirring until paste is dissolved. Stir in garlic, chili powder, paprika, cumin, vinegar, brown sugar, oregano, salt and pepper. Continue to heat for 5 to 10 minutes, or until mixture is thick and stewy.

- In a small saucepan, cook onions and brown sugar in butter over medium-low heat for 8-10 minutes or until onions are tender. Stir in the apples, salt and pepper; cover and simmer for 10 minutes or until apples are tender.

- Crack the eggs into a small bowl and add the Tabasco, salt, basil, and pepper. Whisk just enough to combine; you should still see large bubbles. Set aside.
- Warm the oil and butter in a large skillet over medium heat until the butter melts. Add the onion and sauté until soft but not beginning to brown, about 4 minutes. Add the ground beef and continue cooking until uniformly brown, breaking the meat into small pieces as it cooks. Cover with the spinach, place a lid over the mixture, and cook for about 3 minutes, just until the spinach wilts. (If using frozen spinach, cook, covered, for 1 minute, just to take off its raw edge.)
- Stir the spinach into the meat, cooking briefly to eliminate excess liquid if the mixture seems watery. Pour the egg mixture over all, stirring with a spatula from the bottom until the eggs begin to set. Remove from the heat and stir a few more times, as the eggs cook through from the residual heat. Serve immediately.
