My son loves corn dogs, but I despise all the additives in store-bought. This recipe makes us both happy!

1 cup yellow cornmeal
1 cup all-purpose flour
¼ cup white sugar
4 teaspoons baking powder
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 cup whole milk
1 large egg
16 large hot dogs
4 cups vegetable oil for frying
16 skewers

Steps:

  • Combine cornmeal, flour, white sugar, baking powder, salt, and pepper in a bowl; stir in milk and egg until batter is smooth. Refrigerate until batter is chilled.
  • Bring a large pot of water to a boil; cook hot dogs until heated through, about 7 minutes. Let hot dogs rest for 10 minutes and dry hot dogs on a paper towel.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Insert 1 skewer into each hot dog.
  • Pour batter into a large drinking glass. Dip hot dogs into the batter until well coated.
  • Fry 2 to 3 hot dogs at a time in the hot oil until lightly browned, about 3 minutes. Drain on paper towels.

A to-die-for switch from commercial corn dogs, made with pre-packaged bratwurst (any flavor, or all) fresh dough (home made is best), corn meal, and garlic.

2 loaves frozen white bread dough (or 1 recipe of white bread dough or 1 recipe of wheat bread dough) or 2 loaves frozen whole wheat bread dough (or 1 recipe of white bread dough or 1 recipe of wheat bread dough)
4 lbs commercial bratwursts
1 cup cornmeal
3 large garlic cloves
shortening, to grease pans with

Steps:

  • In food processor or coffee grinder, grind garlic cloves with corn meal in small batches until well powdered.
  • Sprinkle liberally over counter where dough is to be rolled.
  • Grease two cookie sheets.
  • Separate dough into four equal parts. Roll each section of bread dough out in thin strips, widening out to fit just over the ends of one brat to measure width.
  • Roll one brat at a time, cutting dough and pinching sides together over backs of each brat.
  • Roll again in corn meal on counter, adding more cornmeal sprinkle as needed to coat brats.
  • Arrange double the width of each corn dog on greased cookie sheets. Cover with warm damp towels; place in warm place and let rise until doubled in bulk.
  • Bake at 375 for 30 minutes; brush with butter. Serve.

1 cup flour
2/3 cup cornmeal
2 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon dry mustard
2 tablespoons shortening
1 egg, beaten
3/4 cup milk
8 -10 frankfurters
wooden skewer
cooking oil

Steps:

  • Combine flour, cornmeal, sugar, baking powder, salt and dry mustard in a bowl.
  • Cut in shortening until mixture resembles fine crumbs.
  • Mix egg and milk.
  • Add to dry ingredients.
  • Mix well.
  • Dry frankfurters well with paper towels (this allows the coating to stick better).
  • Insert skewers into the end of the frankfurters.
  • Pour oil into a skillet to a depth of 1 inch.
  • Heat oil to 375 degrees.
  • Coat franks with batter.
  • (if batter is too thick, thin with a little milk).
  • Arrange coated franks 3 at a time in hot oil.
  • Turn franks with tongs after 10 seconds to prevent the batter from sliding off.
  • Cook for 3 minutes, turning again 1/2 way through cooking time.
  • Serve hot with catsup and mustard.

1 cup yellow cornmeal
1 teaspoon salt
2 tablespoons honey
1 cup boiling water
1 egg, beaten
1/2 cup milk
2 tablespoons butter, melted
1/2 cup all-purpose flour
2 teaspoons double-acting baking powder
1 package hot dog, any variety
oil, for deep frying

Steps:

  • Other: 10 bamboo skewers, soaked in water Heat oil to 350 degrees.
  • In a bowl, combine cornmeal, salt, honey and boiling water.
  • Mix.
  • In a separate bowl, beat together egg, milk and butter.
  • Add egg mixture to cornmeal mixture. Sift together flour and baking powder, then incorporate it into the mix until smooth.
  • Insert stick into hot dogs, dip in batter, and place in a preheated fryer until golden brown - approximately eight to 10 minutes.
  • Drain, and serve.

Years of camping with our kids resulted in a severe aversion to hot dogs. My wife and I would cringe when the kids would request grilled dogs for dinner. I spent years trying to find a way to prepare them so we all enjoyed the meal. This is the result. These are REALLY GOOD...please use a good dog like Hebrew National. It makes a huge difference.

8 hot dogs
8 hot dog buns
1 tablespoon red wine vinegar
3/4 cup barbecue sauce (your favorite)
1 tablespoon dehydrated onion
1/4 cup beer
1 tablespoon steak sauce (I like A-1)
1 tablespoon brown sugar

Steps:

  • Cut each canine's skin in a spiral from nose to tail.
  • Place pooches in a glass container.
  • Mix remaining ingredients in a bowl and dump over dogs.
  • Marinate the mutts overnight in the refrigerator or 1/2 hour at room temperature.
  • Grill the growlers over medium heat until done.
  • Meanwhile, boil the marinade.
  • Place the pups in the hot marinade to coat, and coax each curr onto a bun.
  • Serve with chopped onion and desired condiments. We like mustard.

3/4 cup yellow cornmeal
3/4 cup all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
1 1/2 teaspoons baking powder
3/4 cup buttermilk
2 teaspoons vegetable oil
2 tablespoons honey
12 hot dogs
12 skewers
oil (for frying)

Steps:

  • In a large pot heat the cooking oil to 350 degrees on stove top.
  • In a large mixing bowl combine all dry ingredients and whisk together. Add liquid ingredients and mix well. Let batter sit for approximately 1-15 minutes. While batter is sitting pat dry the hot dogs and insert skewers. After batter time has passed pour into a tall tea glass. Dip hot dogs one at a time fully coating all the way to the skewer and place in hot frying oil. Fry for approximately 2-3 minutes or until golden brown. Place on a cooling rack with paper towel underneath to catch any excess frying oil.

Add the wet ingredients to the dry and combine thoroughly. The batter will be thick, but smooth enough to evenly coat the hot dog once it has been dipped.
  • Fill a tall drinking glass with batter. Dip the hot dogs all the way in the glass, going straight down and giving it a twirl in the glass. As you remove the hot dog, twirl it around to avoid leaving any air bubbles. If you see any bubbles or bare spots on the hot dog, dip it again.
