Wondering what the former president liked to eat? Fortunately, the Kennedy Library provides an answer. In March 1961, a handicapped girl named Lynn Jennings wrote to Kennedy asking what he liked to eat. "Please reply to her," Kennedy's secretary advised in a handwritten memo. "She will be extremely happy. Do not mention anything in the letter about her handicap please!" Kennedy passed along the recipe for New England Fish Chowder, one of his favorite dishes.

2 lbs haddock
2 ounces diced salt pork
2 onions, sliced
4 large potatoes, diced
1 cup chopped celery
1 bay leaf, crumbled
1 quart milk
2 tablespoons butter
1 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Simmer haddock in two cups water for 15 minutes, drain. Reserve broth.
  • Remove bones from fish.
  • Saute diced pork until crisp, remove and set aside.
  • Saute onions in pork fat till golden brown.
  • Add fish, potatoes, celery, bay leaf, salt and pepper.
  • Pour in fish stock, plus enough boiling water to make 3 cups of liquid.
  • Simmer for 30 minutes.
  • Add milk and butter and simmer for 5 minutes.
  • Serve chowder sprinkled with pork dice.

2 lbs haddock
2 cups water
2 ounces diced salt pork (or bacon)
2 onions, sliced
4 large potatoes, peeled and diced
1 cup celery, chopped
1 bay leaf, crumbled
1 teaspoon salt
fresh ground pepper
boiling water, as needed
3 cups milk
1 (13 ounce) can evaporated milk
2 tablespoons butter

Steps:

  • Simmer haddock in a fish-poaching pan for 15 minutes. Drain. Reserve fish, broth and bones.
  • In a 10-inch skillet, saute diced pork until crisp. Remove pork with a slotted spoon and reserve.
  • Saute onion in the pork fat until golden brown.
  • Add fish (flaked), bones, potatoes, celery, bay leaf, salt and pepper.
  • Pour in fish broth plus enough boiling water to make 3 cups of liquid and simmer for 30 minutes.
  • Add milk and evaporated milk and simmer for 5 minutes. Correct seasonings and remove bay leaf and ALL the bones.
  • Add butter. Serve in a heated soup tureen and sprinkle top with salt pork.

You'll often find one-pot meals in Gullah cuisine, and this fish stew is definitely that! Creamy, smoky, and slightly sweet, it's packed with corn, potatoes, bacon and cod. It also feeds a crowd as an appetizer or main dish.

8 slices thick-cut applewood-smoked bacon, diced, plus more cooked, crumbled bacon for garnish, optional
3 stalks celery, sliced
1 large yellow onion, diced
3 cloves garlic, minced
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups seafood or vegetable stock
2 cups heavy cream
2 cups fresh or frozen corn kernels
1 pound russet potatoes, peeled and cut into large chunks
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 pounds cod or other firm white fish, cut into bite-size pieces
Chopped fresh dill and chives, for garnish

Steps:

  • Place a large Dutch oven over medium heat. Add the bacon and cook until the fat begins to render but the bacon is still soft, about 5 minutes. Add the celery and onion and cook until the bacon is crisp and the vegetables are tender, about 5 minutes. Stir in the garlic.
  • Add the butter and flour and stir until combined. Cook until the flour is bubbly, about 2 minutes. Slowly add the stock and whisk until combined. Whisk in the heavy cream.
  • Add the corn, potatoes and paprika. Season with salt and pepper. Cover and cook over medium heat, stirring occasionally, until the potatoes are tender, about 15 minutes.
  • Add the fish to the Dutch oven. Reduce the heat to low, cover, and simmer until the fish flakes with a fork, 5 to 7 more minutes. Season with salt and pepper. Spoon into serving bowls and garnish with dill and chives. Sprinkle with additional crumbled bacon, if desired.

1 lb fish fillet (use a firm fish)
2 tablespoons bacon, chopped
1/2 cup onion, chopped
1 cup potato, diced
2 cups whole milk
3/4 teaspoon salt
1 dash pepper

Steps:

  • Cut fillets into 1/2 - 1 inch cubes.
  • Fry the bacon until it is crisp.
  • Add the onions and brown them slightly.
  • Add the potatoes, and water to just cover, and cook for 10 minutes or until the potatoes are slightly tender.
  • Add the fish and cook until it flakes easily with a fork.
  • Add the milk and seasonings and reheat. Serve immediately with chopped parsley sprinkled over the top.

2 tablespoons butter
2 cups chopped onion
4 fresh mushrooms, sliced
1 stalk celery, chopped
4 cups chicken stock
4 cups diced potatoes
2 pounds cod, diced into 1/2 inch cubes
1 cup clam juice
½ cup all-purpose flour
⅛ teaspoon Old Bay Seasoning TM, or to taste
salt to taste
ground black pepper to taste
2 (12 fluid ounce) cans evaporated milk
¼ cup cooked crumbled bacon

Steps:

  • In a large stockpot, melt 2 tablespoons butter over medium heat. Saute onions, mushrooms and celery in butter until tender.
  • Add chicken stock and potatoes; simmer for 10 minutes.
  • Add fish, and simmer another 10 minutes.
  • Mix together clam juice and flour until smooth; stir into soup and simmer for 1 minute more. Season to taste with Old Bay seasoning, salt, and pepper. Remove from heat, and stir in evaporated milk. Top each bowl with crumbled bacon, if desired.

1/3 cup extra virgin olive oil
1 large onion, chopped
1 1/2 cups chopped celery
1 large carrot, shredded
1/4 cup flour

1 cup heavy cream
1 (1 lb) package frozen cod fish fillet, cut into 1 inch cubes while frozen
1/2 teaspoon thyme
salt and pepper

Steps:

  • In a large saucepan, heat olive oil and saute onion, celery and carrot for 5 minutes or until lightly browned.
  • Stir in flour.
  • Gradually stir in chicken broth.
  • Stir over low heat until soup bubbles and thickens slightly.
  • Simmer for 10 minutes or until vegetables are tender.
  • Stir in cream and cubes of fish.
  • Stir in thyme.
  • Simmer for 5 minutes or until cubes of fish are cooked.
  • Season to taste with salt and pepper.
  • Serve very hot with chowder crackers or a crusty baguette with butter, and fresh snipped lemon thyme for garnish.

4 lbs chowder fish fillets (such as 2 lbs. Cod, 1 lb. Monkfish, and 1 lb. Cusk)
2 cups light cream
1/2 cup finely grated monterey jack cheese
salt
fresh ground black pepper

Steps:

  • Heat the butter in a large saucepan until softened.
  • Add the onions, carrots, and garlic and sauté.
  • Stir frequently, about 5 minutes.
  • Remove from heat and slowly stir in the flour.
  • Return to the heat, and cook, stirring, for about 4 minutes.
  • Meanwhile, begin heating the stock in a large pot.
  • Whisk the stock into the flour mixture.
  • Bring the stock to a boil, whisking constantly, then reduce the heat, and simmer for 10 minutes.
  • Add the fish and simmer about 10 minutes longer.
  • Stir in the cream and cheese.
  • Simmer until the cheese melts, about 5 to 8 minutes.
  • (You won't distinguish the cheese as such; it is incorporated into the chowder.) Reheat the chowder slowly so the cream doesn't boil.

2 lbs haddock
1/4 lb bacon, chopped
6 potatoes, peeled and cubed
1 small onion, chopped
1/3 cup flour
2 cups whole milk
salt and pepper
water

Steps:

  • Cook chopped bacon and onion in large pot.
  • Cook slowly; onion should be soft but not brown.
  • Remove onion and bacon from pot; set aside.
  • Leave 2 tablespoons bacon fat in pot.
  • Put potatoes in same pot.
  • Add just enough water to cover.
  • Cook 5-10 minutes.
  • Add fish to pot.
  • Cook until fish is flaky.
  • Remove skin from fish.
  • Thicken with flour mixed with a little water.
  • Bring to a boil.
  • Reduce heat until no longer boiling.
  • Add milk, bacon and onion.
  • Heat but do not boil.
  • Salt and pepper to taste.
