JESSICA SEINFELD'S CAULIFLOWER PUREE
Use Jessica Seinfeld's creamy cauliflower puree to make the Bird's Nest pasta recipe from her cookbook "Double Delicious!"

Steps:
- Fill a pot 1-inch high with water. Add a steamer basket, cover, and bring water to a boil over medium-high heat.
- Place florets in steamer basket in 1 to 2 even layers; cover and steam 8 to 10 minutes. Drain and transfer to the bowl of a food processor or jar of a blender; process until smooth, add water, a teaspoon at a time, if necessary.
- Measure cauliflower into 1/2-cup portions and transfer each portion to a resealable plastic bag. Purees may be kept refrigerated up to 3 days and frozen for up to 3 months.
CARROT CAKE MUFFINS (WITH CARROT AND CAULIFLOWER)
This is an amazing 'muffin' recipe (I think they're almost like cupcakes when you add the frosting) from Jessica Seinfeld's book "Deceptively Delicious". I get rave reviews everytime I make them. I prefer to use applesauce in place of the pureed cauliflower.

Steps:
- Preheat oven to 350 degrees. Coat a 12 cup muffin tin with cooking spray, or line with paper baking cups.
- In large bowl, use a wooden spoon to beat the sugar with the butter (or margarine) until smooth.
- Stir in purees, egg, orange juice, vanilla; then add fruit.
- Add powders and stir until just combined; do not overmix - there will be lumps in the batter.
- Pour batter into muffin cups. Bake 12-15 minutes or until toothpick comes out clean and muffins are lightly browned. Cool.
- Frosting: Beat frosting ingredients together in a medium bowl until smooth. Spread onto cooled muffins.
- Store in air tight container 2 days at room temperature - or keep in fridge!

JESSICA SEINFELD HEALTHY BROWNIES
These are the HEALTHY brownies from Jessica Seinfeld's new book, Deceptively Delicious. She made them on Oprah last week and they looked great. The only change here is I made them with a mixture of wheat & white flour instead of oat flour and I used butter instead of trans fat free margarine as the original recipe calls for because that's what I have in my kitchen! To puree veggies, I used microwave then ran through the food processer. I would guess about 1 1/4 cups of carrots made the 1/2 cup puree and almost a whole bag of pre-washed baby spinach for the spinach puree. They are not overly sweet OR chocolatey but for being healthy, they are not bad! My 11 year old just came in and said YUM, BROWNIES!

- Stir 1st 8 ingredients into large bowl.
- Whisk dry ingredients together then add to wet.
- Mix wet into dry
- Pour into baking dish sprayed with pam.
- Bake 30-40 minutes.
- Let cool and dust with powdered sugar if desired.

Steps:
- Preheat the oven to 350°F Coat a 9 x 5 inch loaf pan with cooking spray.
- In a bowl mix the flours, baking soad, baking powder, salt, and cinnamon then set aside.
- In another large mixing bowl, combine sugar and oil until well combined. Mix in the egg whites, bananas and cauliflower purees, and the vanilla.
- Add the flower mix to the wet mix.
- Pour the batter into the loaf pan and bake for 55 - 60minutes, or until it passes the toothpick test.
- Let cool on rack for 5 minutes and then turn the bread out of the pan to cool further before serving.
