EASY BAKED STICKY APRICOT SALMON



Easy baked sticky apricot salmon image

Apricot salmon baked until sticky and glossy is the most delicious, easiest dinner recipe served with broccoli and is perfect for meal prep.

800 g (1,7lbs) salmon ((trimmed into 4 skin-on fillets) )
¾ cup (180ml) apricot jam/preserves
1-2 tbsp (15-30ml) soy sauce
2 tbsp (30ml) lemon juice
pinch of chilli flakes/red pepper flakes ((optional) )
½ tsp garlic powder
2 tbsp (30ml) water
salt and pepper (to taste )

Steps:

  • Pre-heat the oven to 220ºC/430ºF.
  • Combine all the glaze ingredients and bring to a simmer in a small saucepan. Allow to cook for a few minutes until the glaze has thickened and coats the back of a spoon easily. Adjust seasoning (add more soy or lemon juice if necessary) and allow to cool slightly.
  • Line a baking tray with foil and grease with a little oil/cooking spray. Place the salmon fillets on the tray, skin-side down. Pour over the glaze and place in the oven.
  • Allow to bake for 7-10 minutes, spooning the glaze over the salmon every 2-3 minutes, until the salmon is cooked to your preference, and is glossy and sticky.
  • Remove from the oven and allow to rest for a few minutes before serving with sides of your choice.

4 (3 ounce) fillets salmon fillets, or more to taste
ice cold water to cover
1 pinch salt
4 drops lemon juice
¼ teaspoon garlic powder
¼ teaspoon salt
2 tablespoons jerk marinade, or more to taste
3 bunches scallions, chopped
½ yellow onion, thinly sliced
5 sprigs cilantro, chopped
1 teaspoon chopped ginger
2 tablespoons vegetable oil

Steps:

  • Place salmon in a large bowl with ice cold water and 1 pinch salt. Let soak, about 10 minutes. Run a knife along the skin to remove all scales.
  • Rinse salmon in ice cold water and lemon juice. Pat dry with a paper towel.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Combine garlic powder and 1/4 teaspoon salt in a small bowl. Sprinkle lightly over both sides of each salmon fillet. Rub jerk marinade over both sides of salmon.
  • Place salmon fillets in a large bowl. Add scallions, onion, cilantro, and ginger; mix well to combine.
  • Heat oil in an ovensafe skillet over medium heat. Cook salmon fillets skin-side down, in batches if necessary, until skin is golden, about 2 minutes. Flip and continue cooking until flesh is pale pink, 1 to 2 minutes more. Place skillet in the oven.
  • Bake salmon in the preheated oven until flesh flakes easily with a fork, about 2 minutes. Remove skillet from oven and allow salmon to rest before serving, 3 to 5 minutes.

1/4 cup apricot preserves
1 Tbsp unsalted butter
1 Tbsp honey
1 1/2 Tbsp dijon mustard
2 lb salmon filet (cut into 6 equal portions)
1/2 tsp sea salt
1/4 tsp black pepper
1 1/2 lbs broccoli (cut into medium florets)
2 Tbsp olive oil
1/2 tsp sea salt (or to taste)
1/4 tsp black pepper (or to taste)
1 Tbsp Chives or green onion, chopped (to garnish)

Steps:

  • Preheat Oven to 450˚F. Line a large baking sheet with parchment paper or silpat.
  • Place broccoli florets on lined baking sheet and toss with 2 Tbsp olive oil, and season with 1/2 tsp salt and 1/4 tsp pepper, or to taste. Roast broccoli by itself at 450˚F for 5 minutes to soften, since broccoli needs a little more time to cook than salmon then remove from oven.
  • Meanwhile, in a small saucepan, combine all glaze ingredients, bring to a simmer and cook 1 minute then remove from heat and set aside.
  • Push broccoli to the long sides of the baking sheet and arrange salmon (skin-side-down) in the center, leaving a little space between each filet. Season salmon with 1/2 tsp salt and 1/4 tsp pepper, or to taste. Divide glaze evenly between each filet, spreading to coat the top and sides. Bake uncovered at 450˚F for 6-10 minutes*, or until flakey and just cooked through.

1/2 cup roasted garlic olive oil
1/4 cup freshly squeezed lime juice
1/8 cup freshly squeezed lemon juice
2 cloves freshly chopped garlic
1 jalapeno, chopped
1/2 cup diced sweet onion
3 green onions, chopped
2 tablespoons grated ginger
2 tablespoons brown sugar
1/2 cup juice nectar (recommended: Four Seasons)
1 tablespoon chopped thyme leaves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground clove
1 teaspoon allspice
1 teaspoon kosher salt
1 1/2 teaspoons freshly ground black pepper
1 mango, pitted and diced
1/2 red bell pepper, seeded and chopped
1 fresh salmon fillet, skin-on, (2 to 3 pounds)

Steps:

  • Add all of the sauce ingredients to bowl. Mash to combine and crush the ingredients into a marinade. Let stand for 25 minutes.
  • Preheat a grill to medium, and the coals have a light grey ash color. Cook low and slow.
  • Put the salmon fillet on the grill, skin side down. Spread the jerk sauce over the fillet and grill for approximately 15 minutes, depending on the heat. Flip the fillet, remove the skin, then spread it with jerk sauce. Let it grill for an additional 15 minutes. Flip the salmon 1 more time to seal in the flavors. Remove the salmon from the grill to a serving platter and serve.

1 salmon fillet
1 tablespoon jerk seasoning
salt
1 tablespoon apricot preserves
1 tablespoon prepared horseradish
1 tablespoon olive oil or 1 tablespoon canola oil

Steps:

  • Heat oil in an oven proof skillet.
  • Season salmon fillet with jerk seasoning. Eyeball it because this stuff can get spicy and overpower the fish.
  • Salt to taste.
  • When pan is hot, place fish skin side down in skillet. Do not move.
  • About 3 minutes later depending on the thickness of the salmon, flip.
  • Move to oven preheated to 350 degrees.
  • While salmon is cooking heat 1 tbls preserves and 1tbls horseradish in microwave proof dish until it melts and stir.
  • Remove salmon from oven when done to your likeness.
  • Slather salmon with apricot mixture.
  • This recipe can easily be triple/quadrupled.

4 (6-ounce) skin-on salmon fillets, about 1 to 1 1/2 inches thick
2 tablespoons olive oil
2 tablespoons jerk seasoning paste (hot or mild)

Steps:

  • Position an oven rack 6 inches from the broiler and set the broiler to high. Line a rimmed sheet pan with aluminum foil or lightly coat with cooking spray.
