JACKFRUIT TACOS
Steps:
- If the jackfruit is not already shredded, use a knife to roughly chop, or pulse a few times in a food processor.
- Add the olive oil to a medium skillet over medium-high heat. Stir in the jackfruit, chili powder and garlic salt and let cook 3 minutes. Stir in the salsa, then season with salt and pepper and turn the heat to low. Let cook for an additional 3 minutes. Serve on tortillas or taco shells with desired toppings.

- Heat oil in a small saucepan over medium heat. Add jackfruit; cook and stir for 2 to 3 minutes. Add 1 tablespoon water and taco seasoning; stir until well combined, about 1 minute. Add additional water 1 tablespoon at a time as needed.
- Place a small amount of jackfruit in each taco shell; add 2 tablespoons salsa.

- In a large skillet, cook onions in 2 tablespoons oil over medium-low heat until tender and lightly browned, about 10 minutes. Add mushrooms; cook until liquid evaporates and mushrooms are tender, 8-10 minutes. , Meanwhile, in a blender, process chipotle peppers and next 6 ingredients with 4 tablespoons of water until smooth. Add jackfruit and sauce to onion mixture; cook, stirring occasionally, until sauce darkens in color and starts to caramelize onto jackfruit, about 15 minutes. Reduce heat to low; stir in pumpkin seeds and nutritional yeast. Cook 10 minutes. Serve jackfruit mixture in tortillas; add toppings as desired.

- Start by prepping the jackfruit. Open the can and pour the jackfruit into a strainer; rinse well. Go through the jackfruit and remove all of the seeds and the compartments around the seeds (see photo for an example).
- Go through the jackfruit and use your fingers to pull it into "shreds". Set aside any pieces that do not shred easily - generally the thicker stem pieces (see photo for an example). Use your knife to finely chop these pieces and mix them back in with the shreds.
- In a large skillet, heat the olive oil over medium heat until shimmering. Add the white parts of the scallions, garlic, habanero pepper, and ginger, along with a pinch of salt. Cook, stirring frequently, for about 5 minutes or until the scallions are translucent.
- If needed, use a towel to pat excess liquid from the prepped jackfruit. Then add the jackfruit to the pan and stir. Continue cooking, stirring occasionally, for another 5-6 minutes or until the jackfruit has dried out somewhat.

- Make the mango-avocado salsa. In a medium bowl, combine the mango, avocado, onion, cucumber, orange juice, lime juice, and cilantro and mix gently. Season to taste with salt.
- Prepare the jackfruit: Drain the canned jackfruit and lightly rinse under water, shaking off excess water. Use your fingers to remove any thick cores and pull the pieces apart so that it resembles shredded pork.
- In a large pot, heat the oil over medium heat. Add the the scallions and cook until browned, 1 to 2 minutes. Add the garlic, ginger, and chile pepper and cook for 1 minute, stirring frequently to prevent burning. Add all of the Jamaican jerk seasoning, stir to coat, and cook for 30 seconds, stirring constantly, until very fragrant.
