JEN'S SUPER GROUPER
I love grouper, and this is my favorite way to make it! *****Note: I just wanted to note (based on a couple of reviews) that this fish is not supposed to have a crispy breading on it, so if that is what you are looking for or expecting, you might want to try something else or alter it to suit your tastes. As written, the breadcrumbs are meant to be soft, almost like a thin coating of stuffing.

Steps:
- Preheat oven to 350°.
- Mix lemon juice, butter and garlic; set aside. Mix together spices and breadcrumbs.
- Rinse grouper and pat dry; place into 9x13 baking dish. Sprinkle all of breadcrumb mixture over fish and drizzle with all of butter mixture.
- Bake until fish flakes, about 12-15 minutes.

PAUL'S GRILLED GROUPER
This is a South Louisiana secret ... and a great way to grill fish that leaves you worry-free. Not only does this make for easier fish cleaning, but the scales keep the fish from drying out while on the grill. Fish cooked this way consistently results in juicy, moist fillets.

Steps:
- Preheat the grill to medium-high.
- In a small bowl combine the butter, garlic, Parmesan, Essence, and olive oil and whisk to combine.
- Lay the fillets on the grill, scale side down, and brush generously with the melted butter mixture. Close the grill cover and cook for 3 minutes. Open and brush again with the melted butter mixture. Repeat this process until the flesh is firm and opaque, for a total cooking time of about 12 to 15 minutes for this size fish. The last minute of cooking time, sprinkle with the fresh herbs. Remove from the grill and serve immediately with Arugula and Orange Salad.
- Combine all ingredients thoroughly and store in an airtight jar or container.

- In a large salad bowl, combine the arugula, spinach, red onion, and orange segments.
- In a small bowl, whisk together the mustard, orange juice, and vinegar. While whisking, slowly drizzle in the oil. Whisk until emulsified and season with salt and pepper.
SUPER GROUPER
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
- Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
- Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

BROILED GROUPER PARMESAN
Fresh grouper is my absolute favorite. It is a mild fish and this recipe may entice even those who don't like fish to make it a favorite. The recipe is super easy and can be served with a minimum preparation and cooking time. Perfect for a warm summer evening supper. Garnish with lemon twists and parsley before serving.

- Preheat the oven's broiler.
- Place the grouper fillets on a greased baking tray. Brush them with lemon juice. In a small bowl, stir together the Parmesan cheese, butter, mayonnaise, hot pepper sauce, salt and pepper. Set aside.
- Broil the fillets for 4 to 6 minutes, until they can be flaked with a fork. Remove from the oven and spread the cheese mixture on top of fillets.
- Return to the broiler for an additional 30 seconds, or until the topping is browned and bubbly.

BAKED GROUPER CREOLE/PARMESAN
I bastardized this recipe from Emeril - I love grouper, reminds me of our honeymoon in the Bahamas. And, it's been cheap lately.

Steps:
- Add essence ingredients together and mix well, can keep in well sealed jar for 3-6 months.
- Heat oven to 400.
- Mix butter, oil, parmesan and essence in small bowl, whisk till smooth.
- Brush generously on fillets.
- Bake for 15-20 minutes, basting fish with sauce a couple of times.
- Top with herbs in last 5 min of cooking, cook till fish is flaky.
- Sprinkle with lime juice.
- Serve.
LEMON BLACKEN GROUPER
I like this because you know when you're eating fish it's hard to get enough lemon on there. You either put too much or not enough. This way seems to make it just about even all over the fish.

Steps:
- In large skillet melt butter.
- Add garlic salt and pepper
- Let this cook over medium heat for 1 minute, then add grouper or whatever fish you like.
- Let the fish cook until about 3/4 the way done, then put a little butter on top of fish and add blackening seasoning. When fish is done, put on a plate and move to the side and keep it warm.
- Stir in lemon juice into pan drippings. If you need a little more butter and garlic, put some in pan. Then add green onions and mushrooms. Let cook until green onions and mushrooms soak up lemon juice or until done.
- Taste mushroom and if it makes you make a sour face, then you know it's done. If not, add a little more lemon juice.
- Spoon over fish and enjoy.

- PLACE FISH IN A LARGE DISH.
- COMBINE TEQUILA, TRIPLE SEC, LIMEJUICE, SALT, GARLIC AND 1 TABLESPOON OIL AND POUR OVER FILETS AND RUB INTO FISH.
- COVER AND MARINATE FOR 1/2 HOUR AT ROOM TEMPERATURE, TURNING FILLETS ONCE.
- COMBINE TOMATOES, ONIONS, CHILES, CILANTRO, SUGAR AND SALT TO TASTE.
- HEAT THE GRILL TO VERY HOT.
- REMOVE FILLETS FROM MARINADE, PAT DRY AND RESERVE MARINADE.

- GRILL FOR ABOUT 4 MINUTES PER SIDE.
- MEANWHILE,BOIL MARINADE IN SAUCEPAN FOR 2 MINUTES, REMOVE GARLIC CLOVES AND SPOON A LITTLE OVER FISH.
- SPOON SALSA OVER FISH AND SERVE.
