Recipe video above. This dip is a hit with everyone! Particularly terrific served warm, but also fantastic at room temperature, this dip is soft so crackers won't break when you scoop up dip! Quick to make using a microwave, though you can bake if you prefer (it doesn't add anything to flavour, but some like to brown the top, I don't).

400 g / 14 oz artichoke hearts in brine (, drained (Note 1))
250 g / 8 oz frozen chopped spinach (, thawed (Note 2))
250 g / 8 oz Philadelphia cream cheese ((Note 3))
1 tsp garlic powder ((or 2 garlic cloves, minced))
1/3 cup mayonnaise ((Note 4))
½ cup sour cream or yoghurt ((full fat recommended))
1 cup grated cheese (, any with flavour like Cheddar, Colby, Tasty Cheese (Australian) (Note 5))
½ cup grated parmesan cheese
Salt and pepper to taste

Steps:

  • Roughly chop the artichokes.
  • Squeeze excess liquid out of spinach. Either use paper towels or a clean dishtowel, or my method is to use a colander and press liquid out using a wooden spoon.
  • Place cream cheese in a large heatproof bowl. Microwave in 2 x 30 second bursts or until softened. Mix until smooth.
  • Add remaining ingredients. Mix until just combined (don't overmix vigorously, otherwise you'll smush the artichokes and spinach).
  • Warm in microwave to your taste. Adjust salt and pepper to taste.
  • Best served warm but terrific served at room temperature too! Serve with your favourite crackers, vegetable sticks and chips.

Spinach artichoke dip has a way of inciting controversy. Should it be served cold or hot? Is it lowbrow or classic? Should it be served in a bread bowl or with tortilla chips? Well, the good news is that there are no wrong answers here, only delicious, creamy dip. This particular one is best served hot (or at least room temperature), but it is also acceptable to spread it on crackers after being chilled. And with the inclusion of fresh spinach, it could almost be described as classy. Use canned artichoke hearts; they've got a tangier flavor and better texture than the frozen ones. If you want to go a step further, transfer it to a skillet and run it under the broiler after cooking, which gives you bubbling dip with a golden top.

2 tablespoons olive oil
1 large garlic clove, finely chopped
1 12-ounce bunch fresh spinach, finely chopped (or 1 10-ounce package frozen spinach, defrosted, drained and finely chopped)
Pinch of red-pepper flakes (optional)
Kosher salt and black pepper
1 (14-ounce) can quartered artichoke hearts, drained and coarsely chopped
8 ounces cream cheese, cut into 1-inch pieces
4 ounces fresh mozzarella, torn or shredded
4 ounces sour cream or full-fat Greek yogurt
1/4 cup Pecorino Romano or Parmesan, finely grated

Steps:

  • Heat olive oil in a medium pot over medium heat. Add garlic and cook, stirring until it's softened and fragrant, about 30 seconds.
  • Add spinach to pot one handful at a time, letting each handful completely wilt before adding the next. Add crushed red pepper, if using, and season with salt and pepper. Continue to cook, stirring frequently, until most of the liquid from the spinach has evaporated (no need to drain), about 3 minutes. Add artichokes and season with salt and pepper. Cook for a few minutes, just to take the raw edge off the artichokes.
  • Reduce heat to low and add cream cheese and mozzarella. Using a wooden spoon or spatula, stir until all the cheese has melted, about 3 minutes. Stir in sour cream and pecorino, and season with more salt and pepper. You can certainly eat this dip straight from the pot (or transferred to a serving bowl), but running it under the broiler for a crispy top is also an excellent option. To do so, transfer dip to a small ovenproof skillet (6 to 8 inches). Place in oven and broil until the top is golden and the dip is bubbling, 5 to 8 minutes. Let sit a minute or two before serving.

I always thought I didn't like spinach... until I tried my best friend's spinach-artichoke dip to be nice. Now this is my favorite recipe and I have to limit myself to making it just once a month! I usually serve it with tortilla chips. I like to experiment with different cheeses but have listed it here just as she gave it to me. I prefer a smoother textured dip, so I mix the ingredients in my food processor; Jen uses her stand mixer and the spinach stays stringier. I like the Green Giant brand of frozen creamed spinach, which is more spinach and less cream; Jen prefers Stouffer's Side Dishes, which is more cream and less spinach. Times and servings are approximate. Enjoy! :)

1 cup packed fresh basil
3/4 cup canned cannellini beans, drained and rinsed
6 ounces Neufchatel cream cheese
1 clove garlic, smashed

1 14-ounce can artichoke hearts, drained, squeezed dry and finely chopped
1/4 cup grated parmesan cheese
3/4 cup shredded low-fat mozzarella cheese

Nonstick cooking spray
Baked chips, for serving

Steps:

  • Preheat the oven to 450. Bring a pot of salted water to a boil and prepare a bowl of ice water. Stir the spinach and basil into the boiling water and cook until bright green, about 30 seconds. Remove with a slotted spoon and immediately plunge in the ice water. Drain and squeeze dry, then roughly chop.
  • Puree the beans, cream cheese, garlic and chicken broth in a food processor until smooth, scraping the sides as needed. Transfer to a medium bowl and fold in the spinach and basil, artichokes, parmesan and 1/2 cup mozzarella. Add the cayenne, Worcestershire sauce, 1/2 teaspoon salt, and black pepper to taste.
  • Mist a deep 1-quart casserole dish with cooking spray. Spread the dip mixture in the dish and top with the remaining 1/4 cup mozzarella. Bake until golden and bubbly, 20 to 25 minutes. Serve warm with baked chips.

8 tablespoons (1 stick) butter, plus more for buttering the casserole dish
1/4 cup minced garlic
One 10-ounce bag fresh baby spinach
Kosher salt and freshly ground black pepper
Two 14-ounce cans artichoke hearts, rinsed, drained and quartered
3 tablespoons all-purpose flour
1 1/2 cups whole milk, plus more if needed
One 8-ounce package cream cheese, softened
3/4 cup grated pepper Jack cheese, plus more for topping
1/2 cup crumbled feta
1/2 cup grated Parmesan
1/4 teaspoon cayenne
Salted Pita Wedges, recipe follows, for serving
6 pita breads
1/2 cup olive oil
1 tablespoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-inch round casserole dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir the spinach around and cook for a couple of minutes until it wilts; season with salt and pepper. Transfer the spinach to a mesh strainer set over a bowl to drain. Set aside.
  • Melt 2 tablespoons butter in the same skillet, throw in the quartered artichokes and cook over medium-high heat until the artichokes start to get a little color, about 3 minutes. Transfer the artichokes to the strainer with the spinach.
  • In the same skillet or a different pot, melt the remaining 3 tablespoons butter and whisk in the flour until it makes a paste. Cook over medium-low heat for a minute or 2, then pour in the milk. Stir and cook until slightly thickened, about 3 minutes; splash in more milk if needed. Add the cream cheese, pepper Jack, feta, Parmesan and cayenne and stir until the cheeses are melted and the sauce is smooth. Chop the artichokes and spinach and add them to the sauce. Stir to combine.
  • Pour the mixture into the prepared casserole dish. Top with extra grated pepper Jack and bake until the cheese is melted and bubbly, about 15 minutes. Serve with the Salted Pita Wedges.
  • Preheat the oven to 375 degrees F.
  • Cut the pita breads into 6 wedges each. Lay the wedges on a foil-lined baking sheet and brush both sides generously with the olive oil. Sprinkle both sides with salt, then bake until they're golden brown and crisp, 15 to 18 minutes.

It started as a lowly side dish in the mid '80s, after Houston's first opened in Nashville, and it came dangerously close to disappearing from the menu altogether until chefs at the restaurant's Chicago outpost noticed customers ordering it with chips and eating it like a dip. 250g soft cheese
150ml soured cream
100g mayonnaise
