- Preheat oven to 350 degrees. Spray an 8" square baking pan, or 6 muffin cups, with non-stick spray.
- Combine wet ingredients and add dry ingredients. Spread in prepared baking pan, or spoon into prepared muffin cups.
- Bake square pan for 35-45 minutes, or muffin cups for 25-30 minutes. Keeps well in refrigerator or freezer. Good cold or warm.

- Mix together oil, brown sugar, and beaten egg.
- Add oats, baking powder, salt, milk, cinnamon, and raisins, and mix well.

- Pre-heat oven to 350 degrees.
- Combine water, milk, oats and salt in casserole.
- Let stand for 5 minutes.
- Stir in remaining ingredients.
- Bake covered for 45 minutes.
- Uncover for last 5 minutes of baking.
- Allow to stand for 5 minutes before serving.
BAKED OATMEAL
This is a healthy and delicious way to serve your oatmeal in the morning. With the first taste, you will wonder if it is actually breakfast, or should be served as dessert! Steps:
- Preheat oven to 350 degrees with rack in the center of oven.
- Lightly oil 8" square glass baking dish.
- In a large bowl, stir together oats, raisins, granulated sugar, baking powder, 1 1/2 tsp cinnamon, and salt.
- In another bowl, whisk together applesauce, yogurt, milk, oil eggs, and vanilla, until smooth.
- Stir into oat mixture, then pour into baking dish.
- Stir together brown sugar with remaining 1/4 tsp cinnamon and sprinkle over oatmeal, then bake until a wooden pick inserted into center comes out clean, about 30 to 40 minutes.
- Cool to warm in pan on a rack 20-30 minutes, then cut into squares.
- **Note: Baked Oatmeal can be made 1 day ahead and chilled, covered. Blot away any moister from surface, then reheat in a preheated 325 degree oven, covered with foil, until heated through, about 15 minutes.

JENNY'S BAKED OATMEAL
One of my dear friends shared this recipe with me. It has become a favorite in our home, especially on chillier mornings.

- Mix all ingredients (except the additional brown sugar & additional milk) together.
- Pour into a greased square glass baking dish and bake at 350 F for 40-45 minutes, or until a toothpick tests clean.
- Scoop each portion into a small bowl, then pour a splash of milk over each- it should be just enough to be absorbed by the oatmeal (not soupy).
- Sprinkle each with some brown sugar to taste and serve warm.

- Preheat oven to 375F with rack in top third of oven. Butter an 8x8 inch baking pan.
- In a bowl mix together oats, half the walnuts, sugar, if using, baking powder, cinnamon. In another bowl, whick together maple syrup, if using, milk, egg, half the butter and vanilla.
- Arrange bananas in a single layer in bottom of prepared dish. Sprinkle two thirds of berries over top. Cover fruit with oat mixture. Slowly drizzle milk mixture over oats. Gently give baking dish a few thumps on the counter to make sure milk moves through oats. Scatter remaining berries and walnuts on top.
- Bake 30-45 minutes until top os golden and oats have set. Remove from oven and drizzle remaining butter on top. Serve with extra sugar or syrup!
