One of my co-workers always brings this to work potlucks, and it is an office fave. Very yummy -- would be perfect for a football watch party also.

Ingredients

2 lbs ground beef, browned
1 lb Velveeta cheese
1 (10 ounce) can hot Rotel diced tomatoes
1 (28 ounce) can armour spicy chili

Steps:

Layer bottom of Crock-Pot with half of the browned beef, then layer of sliced Velveeta, then the rest of beef, then Rotel tomatoes, more sliced Velveeta, then layer the can of chili, then the last of Velveeta.
Cook on low or high, but when top layer of cheese is soft, stir and cook 20 more minutes.
Serve with Fritos Scoops, or other heavy-duty chip.

Ingredients

1 lb ground beef
1 yellow onion, finely diced
2 small jalapeno (seeded and finely minced)
2/3 cup water
2 tablespoons taco seasoning mix (homemade or store bought)
32 ounces Velveeta cheese, cut into cubes
20 ounces rotel (2 cans)

Steps:

In a large skillet, brown the ground beef and onion over medium heat until the meat is no longer pink.
Drain and add jalapenos, water, and taco seasoning. Increase the heat to medium-high to cook, stirring frequently, until the liquid is evaporated. Remove from heat.
In a 4 to 6 quart slow cooker add the prepared beef mixture, Velveeta, and Rotel.
Stir well and cook on low until cheese is completely melted, 1 to 2 hours.
Keep the slow cooker set to warm to serve during a party, giving the mixture a good stir before serving.
