MAMA'S FRUIT COBBLER
Fast and easy. Very unusual topping made with bread- but you can't tell! Use whatever fruit you would like. My family says this is THE best cobbler EVER! I like it bc it is made with things that I always have on hand and can be thrown together in minutes yet it looks pretty enough to serve company.

Steps:
- Mix first 4 ingredients together and set aside.
- Place drained fruit in a buttered 8x8 pan and top with bread strips.
- Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
- Bake at 350 degrees for 35-45 minutes or until golden brown.
- Great topped with ice cream or whipped cream on top.
- Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

JAY'S MAMA'S COBBLER
Though my mom calls it 'homemade peach cobbler'; I understand that its use of store-bough crust might call that name into question. Note: If you use frozen peaches, make sure to thaw first. Voilà! :-)

Steps:
- Melt butter in a shallow 2-quart baking dish. Mix together flour, sugar, and milk to make a batter; pour over the hot melted butter. Do not stir. Arrange peaches evenly over sauce on bottom of a 10x6x2-inch baking pan.Sprinkle with cinnamon, nutmeg and salt. Make sure the sauce does not cover peaches.
- Crust: Take crust out of refrigerator and bring to room temperature. Roll out and cut into strips for basket weave. Top peaches with basket weave crust.
- Topping: Mix ingredients and sprinkle atop crust.
- Bake cobbler until bubbly and slightly browned (at 375 to 400° for about 40 to 50 minutes). Serve warm with vanilla ice cream or whipped cream.

Steps:
- Preheat oven to 350˚F (180˚C).
- In a medium saucepan over low heat combine peaches, cornstarch, water, lemon zest, lemon juice, and ½ cup sugar in a medium saucepan. Raise the heat to medium and cook until thick and bubbly, stirring often.
- Add the flour, cinnamon, nutmeg, and baking powder to a sieve and sift into a large bowl.
- In a small bowl, combine sugar, milk, vanilla extract, almond extract, and 1 tablespoon of melted butter and stir to combine.
- Pour the wet ingredients into the dry and mix well.
- Grease a 12x8 inch (30x20 cm) (4.8 quart) baking dish with the remaining butter.
- Pour the batter into the bottom of the greased baking dish and smooth into an even layer with a spatula.
- Transfer the peaches gently by placing them on top of the batter. Do not stir.
- Bake for 50 minutes to 1 hour or until golden brown.
- Serve warm and enjoy!

NOT YOUR MAMA'S APPLE COBBLER
I cant remember where I found this recipe, but it is super yummy. Its fairly easy to make, and seems to me that if you had unexpected company, this would be a way to WOW them. :)

Steps:
- Heat oven to 400 degrees. Coat a 2-quart baking dish with nonstick cooking spray.
- Heat apple juice in a medium-size sauce pan. Add raisins and cook 1 minute. Add apple pie filling and bring to a simmer. Stir in walnuts. Spoon filling into prepared baking dish.
- Unroll puff pastry on a lightly floured surface. Cut out 12 circles with a 2-inch cutter. Place circles over top of apple mixture and brush with egg-water wash. Sprinkle with sugar.
- Bake at 400 degrees for 20 minutes, until pastry is browned. Remove from oven:cool slightly.
