JOOLS' FISH PIE

This healthy fish pie is a firm favourite in the Oliver household - the kids always ask for it.

1.5 kg floury potatoes
4 large free-range eggs, optional
50 g unsalted butter
50 g plain flour
2 fresh bay leaves
350 ml quality fish stock
350 ml semi-skimmed milk, plus an extra splash
50 g Cheddar cheese
½ a lemon
1 heaped teaspoon English mustard
a few sprigs of fresh flat-leaf parsley, optional
300 g skinless, boneless white fish, such as coley, whiting, haddock, cod, from sustainable sources
200 g skinless boneless salmon, from sustainable sources
200 g skinless, boneless undyed smoked haddock, from sustainable sources
200 g baby spinach
extra virgin olive oil
1 whole nutmeg, for grating

Steps:

  • Preheat the oven to 200ºC/400ºF/gas 6.
  • Peel the potatoes and cut into 2cm chunks, then boil for around 15 minutes, or until tender. Add the eggs for the last 8 minutes (if using).
  • Meanwhile, make the sauce. Melt the butter in a heavy-bottomed pan over a low heat and stir in the flour. Add the bay, then bit by bit, add the stock and the milk, stirring after every addition until you have a smooth, silky sauce. Bring to the boil, then reduce to a simmer and cook for 10 minutes, or until thickened.
  • Stir in the mustard, grate in half the cheese, then squeeze in the lemon juice. Pick, finely chop and stir in the parsley (if using), then keep stirring until the cheese is melted. Season with a little black pepper, then remove from the heat.
  • Get yourself a 25cm x 30cm baking dish. Check that there aren't any stray bones lurking in the fish fillets, then slice into 2.5cm chunks and spread them evenly over the base of the dish.
  • Wilt and add the spinach, then peel, quarter and add the eggs (if using). Remove the bay leaves, then pour over the white sauce and allow to cool slightly.
  • Drain the potatoes well and mash with a little extra virgin olive oil, a splash of milk and a few scrapings of nutmeg. Spoon the potatoes over the pie and scuff up the surface with a fork.
  • Grate the remaining Cheddar over the top and bake in the oven for 45 minutes, or until the fish is cooked through, the sauce is bubbling up at the sides and the top is golden.
  • Delicious served with lots of green veg, or if you're Jamie, with baked beans!

The whole fish pie thing is one of the most homely, comforting and moreish dinners I can think of. This is a cracking recipe which does it for me.

5 large potatoes
2 large free-range eggs
2 large handfuls of baby spinach
1 onion
1 carrot
olive oil
250 ml double cream
mature Cheddar or Parmesan cheese
1 lemon
1 heaped teaspoon English mustard
1 large handful of fresh flat-leaf parsley
450 g haddock, or cod fillet, skin off, pin-boned, from sustainable sources
1 whole nutmeg, for grating (optional)

Steps:

  • Preheat the oven to 230°C/450°F/gas 8.
  • Peel and dice the potatoes into 2.5cm chunks, then put into boiling salted water and bring back to the boil for 2 minutes.
  • Carefully add the eggs to the pan and cook for a further 8 minutes, or until hard-boiled, by which time the potatoes should also be cooked.
  • At the same time, steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze out any excess moisture.
  • Drain the potatoes in the colander. Remove the eggs, cool under cold water, then peel and quarter them. Place to one side.
  • Peel and finely chop the onion, then peel, halve and finely chop the carrot.
  • In a separate pan, slowly fry the onion and carrot in a little oil for about 5 minutes, then add the double cream and bring just to the boil.
  • Remove from the heat and finely grate in 2 good handfuls of cheese, then squeeze in the lemon juice and stir through the mustard.
  • Pick and finely chop the parsley and stir into the cream mixture.
  • Slice the fish into strips then place in an earthenware dish with the spinach and eggs and mix together, pouring over the creamy vegetable sauce.
  • The cooked potatoes should be drained and mashed - add a bit of oil, sea salt, black pepper and a touch of nutmeg (if using). Spread on top of the fish. Don't bother piping it to make it look pretty - it's a homely hearty thing.
  • Place in the oven for 25 to 30 minutes, or until the potatoes are golden.
  • Serve with some nice peas or greens, not forgetting your baked beans and tomato ketchup. Tacky but tasty, and that's what I like.

1 kg potatoes (peeled and chopped into large chunks)
400 g frozen peas
2 tablespoons butter
zest of 1 lemon
salt & pepper to taste
500 ml 2 cups milk
1 bay leaf
200 g frozen hake fillets
200 g frozen smoked haddock fillets
200 g frozen shelled prawns
2 onions (finely chopped)
2 carrots (finely chopped)
2 garlic cloves (finely chopped)
3 tablespoons flour
1 heaped teaspoon English mustard
40 g 1/2 cup mature cheddar, grated
juice of 1 lemon
salt & pepper to taste
2 onions (finely chopped)
2 carrots (finely chopped)

Steps:

  • Place the potatoes in a large pot of boiling water or in a steamer and cook until soft.
  • Pour boiling water over the peas to de-frost them then blend in a food processor.
  • Mash the potatoes then mix in peas, butter and lemon zest. Season to taste.
  • Pre-heat the oven to 200°c.
  • To make the fish pie, poach the fish in the milk with the bay leaf. When the fish is cooked, remove the fish and flake into large chunks. Reserve the milk.
  • In a large, oven-proof frying pan fry the onion and carrot in a splash of olive oil until soft and fragrant. Add the garlic and fry for another 30 seconds.
  • Add the flour and stir then add the milk the fish was poached to create a creamy sauce.
  • Add the English mustard and fish and stir well then add the cheese and lemon juice and stir.
  • Season to taste.
  • Top the fish filling with the mashed potato and create indents with a spoon which will become nice and crispy in the oven.
  • Place the pie in the oven and allow to bake for 30-40 minutes until the top is golden brown and crispy.
  • Remove from the oven and allow to cool for 10 minutes then serve.

1 kg potatoes
1 carrot
2 sticks celery
150 g Cheddar cheese
1 lemon
½ a fresh red chilli
4 sprigs of fresh flat-leaf parsley
300 g salmon fillets, skin off, pin-boned, from sustainable sources
300 g undyed smoked haddock fillets, skin off, pin-boned, from sustainable sources
125 g raw peeled king prawns, from sustainable sources
olive oil
1 good handful of baby spinach, optional
2 ripe tomatoes, optional

Steps:

  • Preheat the oven to 200°C/400°F/gas 6.
  • Peel the potatoes and cut into 2cm chunks, then cook in boiling salted water for 12 minutes, or until tender.
  • Peel the carrot. Stand a box grater in a deep baking tray or dish, then coarsely grate the carrot, along with the celery and Cheddar.
  • Switch to the fine side of the grater, and grate in the lemon zest and chilli. Pick and finely chop the parsley (stalks and all), and add to the tray or dish.
  • Slice the salmon and smoked haddock into bite-size chunks and add to the tray with the prawns.
  • Squeeze over the lemon juice (no pips please!), drizzle lightly with olive oil and add a good pinch of sea salt and black pepper. If you want to add any spinach or tomatoes, roughly chop and add them now. Mix everything together really well.
  • Drain the potatoes, and return them to the pan. Drizzle with a couple of good lugs of olive oil and add a pinch of salt and pepper, then mash until nice and smooth.
  • Dot and spread the mash evenly over the top of the fish and grated veg.
  • Bake in the oven for 40 minutes, or until cooked through, crispy and golden on top, then serve piping hot with tomato ketchup, baked beans, steamed veg or a lovely green salad.

salt & freshly ground black pepper
2 free range eggs
200 g fresh spinach
1 onion, finely chopped
1 carrot, halved and finely chopped
extra virgin olive oil
600 ml cream
200 g cheddar cheese
1 lemon, juice of
1 teaspoon English mustard
100 g flat leaf parsley, finely chopped
500 g haddock or 500 g cod fish fillets, skin removed pin boned and sliced into chunks
nutmeg (optional)

Steps:

  • Preheat the oven to 230°C/450°F/gas 8.
  • Put the potatoes into salted boiling water and bring back to the boil for 2 minutes.
  • Carefully add the eggs to the pan and cook for a further 8 minutes until hard boiled, by which time the potatoes should also be cooked.
  • At the same time steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze any excess moisture away.
  • Then drain the potatoes in the colander.
  • Remove the eggs, cool under cold water, then peel and quarter them. Place to one side.
  • In a separate pan slowly fry the onion and carrot in a little olive oil for about 5 minutes, than add the double cream and bring just to the boil. Remove from the heat and add the cheese, lemon juice, mustard and parsley.
  • Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce.
  • The cooked potatoes should be drained and mashed - add a bit of olive oil, salt, pepper and a touch of nutmeg if you like. Spread on top of the fish. Don't bother piping it to make it look pretty - it's a homely hearty thing.
  • Place in the oven for about 25-30 minutes until the potatoes are golden.

I saw a similar pie on a jamie Oliver program, and decided to give it a try when I was given a fish last night. The results were pretty tasty. I oven baked our fish in foil, saving the juices, and replacing a little of the wine with them.

750 g potatoes
2 tablespoons butter
2 tablespoons sour cream
1/4 cup milk
salt and pepper
2 tablespoons butter (extra)
1 small onion, finely chopped
2 tablespoons flour
1/2 cup milk (extra)
1/2 cup white wine
400 g cooked flaked fish
1 (310 g) can whole corn kernels, drained
1/2 cup frozen peas, defrosted,drained
2 tablespoons capers
1 tablespoon lemon juice
1/2 teaspoon dried dill
1 tablespoon chopped fresh parsley
salt and pepper
2 hard-boiled eggs, quartered
1 cup grated tasty cheese

Steps:

  • Preheat your oven to 190c.
  • Cut up the potatoes, and boil in lightly salted water until tender; drain, add the butter, sour cream and milk, mash until smooth, seasoning with salt and pepper.
  • Meanwhile, melt the extra butter in a saucepan, and saute the chopped onion until soft-about 5 minutes.
  • Add the flour and cook over low heat about 2 minutes before adding the extra milk and wine.
  • Bring to the boil and stir until thickened.
  • remove from the heat and add the fish, corn, peas, capers, lemon juice, dill, parsley and salt and pepper.
  • Mix well, then fold the egg quarters through very gently.
  • Pour into a large casserole dish, top with the mashed potatoes, then sprinkle over the grated cheese.
  • Bake in the oven for about 30 minutes or until the filling is bubbling, and the top golden brown.

This is a pretty simple take on fish pie, by Jamie Oliver, which doesn't involve any poaching of fish or making a bechamel sauce. You can use whatever fish you choose. If you like your fish pie to be creamier, feel free to add a few tablespoons of creme fraiche or heavy cream. This is great served with a fresh, green salad or steamed veggies. Make it yours!

2 1/4 lbs potatoes
1 carrot, peeled
2 celery ribs
6 ounces cheddar cheese, grated
1 lemon, zest and juice
1/2 fresh red chili pepper, finely chopped
4 sprigs fresh Italian parsley, stems and leaves finely chopped
10 ounces salmon fillets, skin off and bones removed
10 ounces cod fish fillets or 10 ounces finnan haddie, skin off and bones removed
1/4 lb large shrimp, raw, peeled
3 tablespoons olive oil, divided (or more, to your taste)
fresh spinach, handful, chopped
2 ripe tomatoes, quartered

Steps:

  • Prep the fish pie:.
  • Preheat oven to 400 degrees F. and bring a large pan of salted water to boil.
  • Peel the potatoes and cut into 3/4 inch chunks.
  • Once the water is boiling, add the potatoes and cook for about 12 minutes, until soft. (stick a knife or fork into them to test).
  • Meanwhile, grate the carrot, celery and cheddar cheese right into a large, deep baking dish. Add the zest of the lemon, chile and parsley.
  • Cook and serve the fish pie:.
  • Cut the salmon and cod, or finnan haddie, into bite-sized chunks and add to the pan with the shrimp.
  • Squeeze the juice from the zested lemon (take out seeds) and drizzle with approximately 1 T. olive oil, use your judgement. Add a good pinch of salt and pepper.
  • *If you want to add spinach and/or tomatoes, do so now.
  • Mix everything together well.
  • By now the potoates should be cooked, so drain them in a colander and return them to the pan. Drizzle with some olive oil, aprrox. 2 T. using your judgement, and add a pinch of salt and pepper. Mash until smooth.
  • Spread the mashed potoates evenly over the top of the fish and grated veggies.
  • Put in your preheated oven and cook for about 40 minutes, or until cooked through, crispy and golden on the top.
  • Serve it up!
