BUDDY'S FLAPJACK BISCUITS

Embracing store-cupboard ingredients, these tasty little morsels are sure to go down a treat for grown-ups, big kids and little ones alike. The method is super-easy, the food processor does all the hard work, and the measurements are straightforward, too. Get your kids to help with the weighing - they'll love it.

100 g unsalted butter, (at room temperature)
100 g mixed dried fruit & nuts
100 g porridge oats
100 g self-raising flour
100 g golden syrup

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Line a deep 20cm square baking tin with greaseproof paper and rub with olive oil.
  • Pulse the butter, dried fruit and nuts, oats and flour in a food processor until the mix comes together and away from the sides, then pulse in the syrup until fully combined.
  • Transfer to the lined tin, flattening to the edges. Bake for 15 to 20 minutes, or until golden.
  • Remove from the oven, slice into 16 squares ready to cut, and leave to cool in the tin for 5 minutes.
  • Use the paper to lift out on to a wire rack, and leave to cool completely. Simple, easy, delicious - spread the word!

Deliciously chewy and oh-so buttery, this classic flapjack recipe is a winner every time

250 g unsalted butter, plus extra for greasing
250 g soft light brown sugar
4 tablespoons runny honey
1 pinch of sea salt
100 g mixed nuts, such as hazelnuts and pistachios
150 g mixed dried fruit, such as cranberries, apricots and figs
350 g rolled porridge oats

Steps:

  • Preheat the oven to 150ºC/300ºF/gas 2. Grease and line a rectangular cake tin (roughly 20cm x 30cm).
  • Place the butter, sugar, honey and salt in a medium pan over a low heat, then allow the butter to melt, stirring occasionally. Meanwhile, roughly chop the nuts and any larger dried fruit, then stir them into the pan along with the oats.
  • Transfer the mixture to the prepared tin, smoothing it out into an even layer. Place in the hot oven for 35 to 40 minutes, or until golden around the edges. Leave to cool completely, then cut into squares and serve.

A healthier version of traditional fruit and nut bars packed with seeds, oats and agave syrup - perfect for snacking and lunchboxes

150g ready-to-eat stoned dates
100g low-fat spread
3 generous tbsp agave syrup
50g ready-to-eat stoned dried apricots, finely chopped
50g chopped toasted hazelnuts
3 tbsp mixed seeds
50g raisins
150g porridge oats

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Line an 18cm square tin with baking parchment. Put the dates into a food processor and blitz until they are finely chopped and sticking together in clumps.
  • Put the low-fat spread, agave syrup and dates into a saucepan and heat gently. Stir until the low-fat spread has melted and the dates are blended in. Add all the remaining ingredients to the pan and stir until well mixed. Spoon the mixture into the tin and spread level.
  • Bake in the oven for 15-20 mins until golden brown. Remove and cut into 12 pieces. Leave in the tin until cold. Store in an airtight container.
