This recipe has been handed down through the Westfall family for years. My grandfather, James Westfall, made this cake frequently, especially during the holidays. It is a great cake for family get-togethers.

cooking spray
2 ⅔ cups white sugar
⅔ cup butter-flavored shortening
4 large eggs
1 ¾ cups applesauce
⅔ cup water
1 teaspoon baking soda
1 teaspoon vanilla extract
3 ⅓ cups all-purpose flour
2 teaspoons ground cinnamon
1 ½ teaspoons salt
1 teaspoon baking powder
½ teaspoon ground cloves
1 ½ cups raisins
⅔ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a fluted cake pan with cooking spray.
  • Beat sugar and shortening together in a bowl using an electric mixer until smooth and creamy; beat in eggs until incorporated.
  • Combine applesauce, water, and baking soda in a saucepan over medium heat; stir until heated through, about 2 minutes. Stir applesauce mixture into shortening mixture; add vanilla extract.
  • Whisk flour, cinnamon, salt, baking powder, and ground cloves together in a bowl. Gradually stir applesauce mixture into flour mixture until just combined. Fold in raisins and walnuts. Pour into prepared cake pan.
  • Bake in the preheated oven until golden and a toothpick inserted in the center of the cake comes out clean, about 1 hour. Cool in the pan for 10 minutes and transfer cake to a plate.

2 cups sugar
1 1/2 teaspoons baking soda
1/4 teaspoon baking powder
1 1/2 teaspoons salt
3/4 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon allspice
1/2 cup vegetable oil
1/2 cup water
1 1/2 cups unsweetened applesauce
2 eggs

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x13 baking dish.
  • Combine all ingredients; pour in prepared pan.
  • Bake 60-65 minutes or until done.

In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

1/2 cup unsalted butter, room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts
Powdered sugar, optional

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
  • In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

4 Rome apples, cored, peeled and sliced
4 tablespoons water
1/2 cup sugar
1/4 teaspoon cinnamon
1/2 teaspoon chopped lemon peel
Juice of half a lemon
4 ounces softened butter
1/2 cup light brown sugar
1 teaspoon vanilla
1 egg
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
Pinch of salt
2/3 cup chopped pecans
1 cup raisins
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees, and lightly grease an 8-inch cake tin.
  • In a deep saucepan over medium heat, combine the apples, 4 tablespoons water, 1/2 cup sugar, 1/4 teaspoon cinnamon, chopped lemon peel and lemon juice. Barely cover with water, bring to a boil, reduce heat to a simmer and cook, stirring, until the mixture reduces and thickens -- about 20 minutes. Mash the mixture to a smooth consistency.
  • Meanwhile, in a mixing bowl, cream together the butter and brown sugar. Add the vanilla, and beat well; then the egg, and beat well.
  • Add butter mixture to the apple mixture. Into a separate bowl, sift together the flour, baking soda, baking powder and salt.
  • Add the pecans, raisins, nutmeg and cinnamon. Stir well.
  • Add the dry mixture to the apple mixture and stir to make a smooth batter. Transfer to the greased cake tin. Smooth the top with a spatula or knife, and bake for about 1 hour and 35 minutes, or until a toothpick inserted in the middle comes out clean.

1/2 teaspoon ground cloves
1/2 teaspoon allspice

1/2 cup shortening
2 eggs
1 cup raisins
1/2 cup nuts (recipe doesn't say to chop, but I would chop)

Steps:

  • Mix all ingredients together in large mixing bowl.
  • Grease pan; sprinkle with sugar and dust out loose sugar.
  • Bake in loaf pan or square pan at 350 degrees for 50-55 minutes.
