JAMBALAYA (RED)
This a great recipe for the red version of Jambalaya and is easy to make. You can use just about any meats you want,but I prefer chicken and smoked sausage. I'm from the deep South and when I first made this for my Kentucky family (where I now live) they ate it up! It is bon (good)!!! I hope you enjoy making this as much as I do and I hope your family will enjoy it...

Steps:
- In a frying pan, sauté chicken in 2 tablespoons butter, sprinkling with Cajun seasoning , until thoroughly cooked (about 5~7 minutes). Set aside when done.
- Brown the sliced smoked sausage and pour off fat.
- In a large cooking pot, sauté the onions, bell pepper, celery, and garlic in cooking oil until onions get a bit transparent.
- Once the onions are transparent, add the 3 cans tomato paste and let it brown a little (pince'), but don't let it burn. The tomato paste will get a deep mahogany color.
- Pour 2 cups of the chicken broth into the pot to deglaze the tomato paste and stir until smooth.
- Add Bay leaves
- Add Cajun seasoning, can of diced tomatoes. Cover and cook over Medium-low heat for about 10 minutes.
- Add Meats and cook for another 10 minutes.
- Check your seasonings to see if it's salty or spicy enough for you as it will be too late after you add the rice.
- Add the rest of the chicken broth and stir in the rice, combining thoroughly. Cover and cook for about 20-25 minutes or until very thick.

JAMBALAYA
This is my own recipe. Probably not very authentic, but it's tasty, my family loves it and there's never any left! Also great for potlucks, it can be prepared in a crockpot. Feel free to make your own additions. Enjoy!

Steps:
- Prepare Rice-A-Roni Red Beans and Rice according to package directions. While it is cooking, prepare the onions, celery and garlic and saute in a skillet in a small amount of oil until soft.
- Open the can of tomatoes and dump into a large stockpot or crockpot. Add the sauteed veggies, cooked chicken and pepper strips to the pot as well. Heat the contents to simmering (or set the crockpot to low if you will be gone all day or high for a few hours).
- Using the same skillet from before, saute the thinly sliced sausage and add that to the pot also.
- When the Rice-A-Roni is done, remove the lid from the pot and continue to cook and stir until most of the liquid is evaporated, then add to the pot as well. Mix everything up well.
- Add hot sauce to taste. If using shrimp, add them close to serving time, so they will heat through but not be overcooked. Heat through and serve.

RICE COOKER JAMBALAYA
By making this in a rice cooker, you can avoid burning the rice and having to watch the pot. Make sure your rice cooker is at least a 6 cup capacity or cooked product won't fit. If you like your vegetables crisper or don't want to take the time, you can skip the sautéing step; just melt the butter before adding to the rice cooker. Also, if you don't like diced tomatoes increase the chicken broth to 4 cups and use a 5 oz can of tomato paste in place of the diced tomatoes.

Steps:
- If using sausage, cut into small pieces.
- In a medium frying pan, over medium heat, sauté garlic, onion, bell pepper, and mushrooms if using, in butter or margarine for 5-10 minutes or until the onions are translucent. Add sausage and cook another 1-2 minutes.
- Add rice, sausage or shrimp, vegetables, chicken broth, diced tomatoes, and cayenne pepper to pot.
- Stir briefly to evenly distribute all ingredients.
- Set rice cooker to cook. Let sit 10 minutes after rice is cooked.
- Stir and enjoy!

JAMBALAYA
Really good. I do cook the rice separate, that way I don't make glue, and you can make it hotter-I do!

Steps:
- Melt shortening in a large/huge saucepan over medium heat.
- Cook chicken pieces until brown on all sides and cooked about half way through, around 20 minutes or so.
- Remove and add onion, green pepper, celery and garlic.
- Cook slowly stirring now and again until onions are tender.
- Add sausage and cook 10 min more.
- Return chicken and add all remaining ingredients EXCEPT rice and stir together well.
- Cover and simmer for 30 min stirring now and again.
- Remove cover and continue to cook until broth cooks down a bit-you don't want it too thick as the rice will soak up the juice.
- Serve up the rice in bowls and ladle the Jambalaya on top, and offer more cayenne or Tabasco at the table.
- ***I know that cooking the rice on the side and not in the dish will cause some to have a heart attack, but I've found the flavor much better this way, IMHO.

Steps:
- Sauté onion, bell pepper, celery, and garlic in a large pot with margarine or butter for 8-10 minute.
- Add chicken, pork, and sausage to the pot. Season with salt and pepper; cook 10 minutes.
- Add tomato paste plus 1 can of water and Crystal hot sauce; simmer 5 minutes.
- Add water, chicken base, bay leaves, parsley, ground thyme, and rice.
- Bring to a boil; turn heat down to low and simmer 20 minutes, stirring occasionally.
- Enjoy!

- Cook sausage in hot oil in a Dutch oven over medium-high heat, stirring constantly, 5 minutes or until browned. Remove sausage with a slotted spoon.

Cover and freeze. To serve, remove foil, return casserole to original baking dish; cover and thaw in refrigerator 24 hours. Let stand at room temperature 30 minutes. Bake at 350° until thoroughly heated.
