- Combine baking flour, brown sugar, Anchor Milk Powder, grated coconut, raisins, baking powder and mixed spice in a large bowl. Whisk eggs, add water, vanilla and melted margarine. Make a well in the centre of the dry ingredients and add the liquid. Lightly mix until the liquid is absorbed. Scrape the batter into a greased baking tin and put to bake in a pre-heated oven 180°C (350°F) for about 30 minutes or until a skewer inserted comes out clean. Remove from the oven and put to cool before slicing.Ingredient Note:12 - 16 ounces of water may be used.

- Cream butter and sugar.
- Sift together flour, baking powder, cinammon and nutmeg in a deep bowl. Add lime rind and grated coconut and mix well, until coconut is evenly distributed through the mixture.
- Add to creamed butter and sugar. Mix in egg, vanilla and browning. Add milk slowly, until mixture makes a fairly stiff dough.
- Bake in a greased pan at 350F for 1/2 hour. Cut into squares or slices and serve.

- Mix together in another large bowl, the brown sugar and melted butter. Add the eggs one at a time. Then add the rum (if you are adding it) coconut milk, vanilla extract, almond extract and mix together.
