JAMAICAN STEAMED CABBAGE
This delicious Jamaican steamed cabbage makes the perfect Caribbean appetiser or side dish.

Steps:
- Melt the coconut oil on medium heat then proceed to sautee the onion, garlic along with the sprigs of thyme until soft and tender.
- Add the cabbage, carrot, bell peppers and scotch bonnet, fold and stir. The pan may seem overcrowded but the cabbage will reduce as it heats through.
- Continue to stir and fold until the cabbage reduces in volume, this should take up to 5 minutes.
- Once reduced, lower the heat and add the water, ready for steaming.
- Cover the skillet with a lid and steam for 15 minutes (10 minutes or less if you want crunchy cabbage).
- Remove the lid and season with the all purpose seasoning, black pepper, butter and salt to taste and stir.
- Serve accordingly and sprinkle the cabbage with additional loose thyme (optional).

JAMAICAN CABBAGE RECIPE
Steps:
- Heat the coconut oil in a pot.
- Add the onion and thyme, and cook for about 5-7 mins till soft.
- Stir in the garlic purée, followed by cabbage, bell pepper, carrot, scotch bonnet if using, vegetable broth, and salt.
- Mix and cover. Reduce and steam for between 10-15 mins or until done to your preference, stirring a couple of times during the process.
- Keep and eye on the liquid. If it looks like it is starting to dry out, add another tbsp or so of broth.

- Remove outer leaves of cabbage, cut in half, using a knife slice thinly discarding the inner core. Shred or thinly slice the carrot.
- Heat oil in a large skillet on medium-high heat. Saute onion, garlic, bell pepper, thyme, green onion, and salt
- Add cabbage and carrots and stir well. Add water or broth and whole Scotch Bonnet pepper.
- Cover and allow to cook for about 10 minutes stirring occasionally.

- Core cabbage and slice thinly.
- In a small saucepan, mix vinegar, fructose, pepper flakes,caraway seeds, salt, a few dashes of pepper and water;bring to a boil. Cook about 4 minutes and remove from heat.
- Meanwhile, fill a large kettle with about 1 inch of water and bring to a boil.
- Place cabbage slices and bell pepper in a steamer basket and place over water.
- Steam, covered,3 minutes.
- Remove to a serving bowl.
- Pour sauce through a strainer over cabbage and toss well.

- Cut the cabbage into four quarters, remove the middle, wash the cabbage leaves, shred and set aside.
- Peel, wash and chop the carrot into thin strips.
- Chop the onion and bell peppers into small pieces.
- Finely cut the garlic or use a garlic crusher
- Heat the oil in a saucepan on medium heat then add the onion, garlic, scotch bonnet pepper and thyme and let it sauté for about two minutes.
- Stir in the bell pepper and tomato
- Stir in to cabbage season with salt and black pepper.
- Cover and steam for 15 to 20 minutes. Add the carrot half way through.

- Remove top layer leaves off cabbage, cut the cabbage in half, then thinly slice. Discard the inner core. Wash the cabbage and set aside.
- Next, cut or chop the carrots and bell pepper. Wash and set aside.In a hot oil (olive oil) skillet over medium heat, sauté the garlic for 30 seconds or until fragrant. Then add the cabbage, bell peppers and carrots. Lightly season with salt and pepper. Toss to combine. Add the water and toss to combine. Cover and cook for about 10 minutes stirring occasionally, or until the vegetables are softened.

- Cut out the cabbage's core and use a knife to shred the cabbage leaves. Alternatively, use a food processor to shred the cabbage quickly. (I also remove the outer layer of cabbage leaves and discard them before chopping.)
- Add the shredded cabbage and carrot and all ingredients (chicken broth, butter, salt, pepper, Old Bay, onion, garlic powder, apple cider vinegar, carrot, and thyme) into the Instant Pot stainless steel inner pot.
- Sink the cabbage and vegetables as much as you can into the liquid broth.
- Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 4 minutes.
- When the cooking time is finished, allow a natural pressure release for at least 4 minutes.
- To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
- Serve Jamaican cabbage warm and enjoy!
