CARIBBEAN JERK CHICKEN WINGS

2 cups store bought mustard-based BBQ sauce (recommended: Cattleman's Gold Sauce)
2 tablespoons soy sauce
1 (6-ounce) can crushed pineapple
Salt and pepper
1/3 cup brown sugar
1 teaspoon ground ginger
Store bought jerk seasoning
18 chicken wings

Steps:

  • Preheat grill to medium-high.
  • Prepare sauce by combining all ingredients together in a saucepan over medium heat. Cook until heated through.
  • Rub jerk seasoning into chicken wings. Grill for 10 to 12 minutes or until cooked through. Brush generously with sauce and serve.

1 teaspoon(s) salt
1/2 teaspoon(s) dried garlic
1/2 teaspoon(s) dried onion
1/2 teaspoon(s) dried thyme
2 pound(s) chicken wingettes and drumettes
2 1/2 tablespoon(s) red hot sauce (frank's)
2 tablespoon(s) unsalted butter, melted
1 teaspoon(s) jerk paste (or more to taste)

Steps:

  • Preheat the oven to 500°. Line a large baking sheet with foil and spray with vegetable oil. In a bowl, mix the flour with the salt, garlic, onion and thyme. Add the chicken and toss to coat. Spread the chicken on the baking sheet in a single layer and spray with vegetable oil. Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.
  • In a bowl, whisk the hot sauce with the butter and jerk paste until combined. Add the chicken wings to the sauce and toss.
  • Serve.

You can adjust the heat in this recipe by the type of pepper you use. I used serrano peppers and thought it was just right, but I like food pretty spicy so if that's not for you, use a milder pepper, such as jalapeno. I found this in the Chicago Tribune 'Good Eating' section. I added the 2 hour chill time to the prep time.

3 lbs chicken wings
3 hot red peppers, chopped (to taste)
2 garlic cloves, crushed
1 onion, chopped
1/2 cup water
1/4 cup vegetable oil
2 tablespoons white vinegar
1 tablespoon fresh thyme, chopped
1 tablespoon sugar
2 teaspoons allspice
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Arrange the chicken wings in a single layer in a large baking pan.
  • Combine remaining ingredients in a blender or a food processor; puree until very smooth. Pour sauce over the wings, coating evenly. Cover the pan with plastic wrap; refrigerate at least 2 hours.
  • Heat oven to 350°. Bake until the wings are brown and crispy, about 1 hour.
