WEST INDIAN LAMB CURRY
Curried goat is a popular dish in the West Indies, but lamb makes a fine substitute here in the United States, where goat meat is hard to find. This version, by the chef Martin Maginley from the Round Hill resort in Jamaica, is deeply flavored with allspice and Scotch bonnet peppers, but not overwhelming spicy. If you have time to make it the day before, it gets better as it sits, and gives you a chance to scoop some of the fat off the top of the stew before reheating over a low flame. And if you can procure goat, use it here in place of the lamb.

- Pat lamb dry with paper towels and place in a large bowl. In a small bowl, combine 1 tablespoon curry powder, the salt, the ground ginger and the black pepper. Add spice mix to large bowl and toss with lamb.
- Combine onion, scallion, garlic, fresh ginger, allspice, thyme leaves and 2 tablespoons oil in a blender; purée until smooth. Scrape mixture over lamb and toss to combine. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
- Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Stir in 2 teaspoons curry powder and heat until fragrant, about 30 seconds. Working in batches to avoid overcrowding the pot, brown the meat on all sides. Drizzle in additional oil, if needed, to prevent meat from sticking to the bottom of the pot. Transfer browned meat to a plate as it browns.
- Once all the meat has been browned, return it to the pot, along with any juices on the plate. Add enough water to just cover meat. Bring liquid to a simmer, covered, then uncover the pot and cook gently for 45 minutes.
- Stir potato, carrot and pepper into pot. Simmer until vegetables are fork tender and meat is cooked through, about 30 to 45 minutes longer.
- Using a slotted spoon, transfer meat and vegetables to a bowl. Simmer cooking liquid until it has reduced and thickened to a saucy consistency (to taste), about 15 minutes. Taste sauce and add more salt if needed. Pour sauce over meat. Serve over rice, topped with a squeeze of lime, a dollop of mango chutney or pickle and fresh cilantro.

JAMAICAN PATTIES; BEEF, CHICKEN, OR LAMB
These are delicious curry-flavored pastries found in the Caribbean islands, particularly in Jamaica. Great as a snack or as a Jamaican meal compliment. I also enjoy them with a spinach, corn, and bean salad. I have used pre-packaged Crescent rolls (2 cylinders rolled out and cut into 10 circles or phyllo dough (15 sheets cut lengthwise to make 30 triangles) as a time saver. Not as good or as spicy as the handmade pastry, but sometimes there's just not enough time. Store in the fridge for up to 5 days an reheat in microwave on medium heat.

- FILLING:.
- Heat oil in skillet over medium heat.
- Add onions and cook for 10 minutes stirring occasionally until soft and translucent.
- Add garlic, cook 2 minutes.
- Add beef, curry, cumin, salt, and pepper.
- Cook until browned stirring constantly.
- Stir in stock and breadcrumbs.
- Simmer until liquid is absorbed. (aprox.10 minutes) Texture should be soft and moist. Add green onions.
- PASTRY:.
- In a large bowl, combine flour, turmeric, curry, and salt.
- Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs.
- Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections.
- Roll each section into a six inch circle (approximately 1/8 inch thick). Cover with damp towel.
- Spoon equal amounts of filling into each pastry circle. Fold over making a half circle and press edges together. Use a fork to press edges, and brush the top of each patty with beaten egg.
- Cook for 25- 30 minutes.

JAMAICAN CURRY CHICKEN
I couldn't find a recipe I liked, so here is my family's version of 'curried' chicken. It brings back memories of a childhood spent enjoying food there, where there were very few dishes I wouldn't eat, vegetables or not. This dish is traditionally served on white rice or in a roti, but feel free to get creative!

- Whisk 2 tablespoons curry powder, garlic powder, seasoned salt, onion powder, salt, thyme leaves, allspice, salt, and pepper together in a bowl. Add chicken and coat with curry mixture until curry mixture is wet and sticks to chicken.
- Heat oil and 2 tablespoons curry powder in a large cast-iron skillet over high heat until oil is hot and curry powder changes color, 2 to 3 minutes. Add chicken to the hot oil mixture and reduce heat to medium. Add water, potato, carrots, scallions, ginger, and chile pepper to skillet.
- Cover skillet and simmer until chicken is no longer pink in the center and gravy is thickened, allowing chicken to cook undisturbed for last 15 minutes of cooking, 30 to 40 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove chicken to a serving dish; continue simmering gravy, uncovered, to thicken (if needed). Serve chicken with gravy.

JAMAICAN CURRY POWDER
An authentic Jamaican curry powder without hot pepper, which should be added separately to any dish. You can also use powdered versions of any of the ingredients, but for better flavor use whole seed. For authentic Jamaican flavor, you will usually add Scotch Bonnet or Habanero peppers to your recipes. However, if you want to add heat directly to the powder, add 2-4 tablespoons cayenne powder to the mix, depending on your taste.

- Combine the coriander seeds, cumin seeds, mustard seeds, anise seeds, fenugreek seeds, and allspice berries in a skillet. Toast over medium heat until the color of the spices slightly darkens, and the spices are very fragrant, about 10 minutes. Remove the spices from the skillet, and allow to cool to room temperature. Grind the spices with the turmeric in a spice grinder. Store in an airtight container at room temperature.

I picked this up while living in the US Virgin Islands. Very tasty! Can be made with goat or lamb meat.

- Fry mutton, onions, and garlic in oil to which was added the curry powder.
- Once mutton is lightly browned and the onions are clear, add the rest of the ingredients except the carrots. Add enough water to cover and simmer for 1 1/2 hours.
- Add the carrots and simmer til carrots are tender.
- Serve with rice and fresh fruit salad.

- The next day, rough chop the onion, garlic, ginger and habaneros, then pulse in a food processor and reserve, be careful not to touch the habaneros, or just use gloves. The onion mixture should be coarse, not too fine, not too large.
- Brown the goat pieces in a dutch oven in the fat, being careful not to burn the curry coating. When the meat is browned, add the onion mixture and cook for two minutes, then add the tomato paste, stock, cover and simmer on low heat for 2 hours or until the meat is just about fork tender.
- While the meat is cooking, peel the potatoes and cut into large pieces, add to the pot, and cook until tender. Double check the seasoning, adjust as needed and serve in bowls, with the coconut rice on the side, and a separate bowl for discarding bones.
