Steps:
- Heat oven to 350ºF.
- Cook bacon in medium skillet until crisp. Remove bacon from skillet, reserving drippings in skillet. Drain bacon on paper towels.
- Add peppers to reserved drippings in skillet; cook 2 to 3 min. or until crisp-tender. Remove peppers from skillet; drain on paper towels. Crumble bacon.
- Combine all ingredients except crackers; roll into 36 balls. Place crackers in single layer on baking sheet; top with cheese balls.
- Bake 5 min. or until heated through.

BACON JALAPENO POPPER PUFFS
If you enjoy the gut-bombs that are classic, bacon-wrapped, jalapeno poppers, I think you'll love these shockingly light puffs. All the same flavors are there, especially when served with the easy cream cheese dip, and the prep is much easier.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels. Crumble or finely chop. Drain fat from skillet, reserving 1 tablespoon.
- Mix cream cheese, creme fraiche, green onions, and lime juice together in a bowl. If mixture seems too thick, add enough water to thin it to your preferred consistency.
- Place skillet over medium-high heat. Add cold water, butter, reserved bacon fat, and salt. Bring mixture to a simmer; reduce heat to medium. Pour in flour all at once. Stir to mix and mash with a wooden spoon until dough starts to pull together, 2 to 3 minutes. Remove pan from heat; transfer dough to a mixing bowl and let cool for about 5 minutes.
- When dough is cool, whisk in 1 egg. Mixture will separate slightly. Continue whisking in first egg until mixture pulls back together. Repeat with the second egg. Scrape down sides of bowl. Add diced jalapeno, bacon pieces, shredded cheese, cayenne pepper, and black pepper. Mix thoroughly with a spatula. Wrap dough in plastic wrap and refrigerate until cool, 30 minutes to 1 hour.
- Heat oil in deep fryer to 375 degrees F.
- Using a small scoop, scoop out rounds of dough. Drop rounds of dough into hot oil and cook until golden brown and cooked through, 3 to 4 minutes. Work in batches if necessary. Transfer to a cooling rack.
- serve with dipping sauce garnished with a few green onion slices.

Steps:
- In a pan, cook bacon until crisp, then chop into small pieces.
- Discard excess fat (reserve approximately 2 tablespoons).
- In the same pan, sauté the onions in the reserved fat until they start to become translucent.
- Add the jalapeños. Cook until the onions start to caramelize and remove from heat.
- Preheat oven to 375°F (190°C) and cover a cookie sheet with parchment paper.
- In a large bowl, combine the cream cheese, bacon, cheddar, pepper, garlic powder, and jalapeño mixture. Stir until thoroughly incorporated.
- On a lightly floured surface, gently roll out the puff pastry until the surface is smooth and even.
- Spread the japapeño mixture on the pastry sheet, stopping 1 inch (2 ½ cm) from the top of the dough.
- Starting at the bottom, tightly roll upwards and pinch the top edge to seal into a log shape.
- Cut the roll every 1½ inches (3 ¾ cm). Place the pieces face-up, 2 inches (5 cm) apart on the baking sheet. Sprinkle the tops of the pastries with cheddar.
- Bake for 25 to 30 minutes, or until the cheese is melted and the sides of the pastries are a light golden color.

- In a medium bowl, mix the cream cheese, Monterey Jack cheese, jalapeno peppers, garlic and green onions.
- Fill wonton wrappers with approximately 1 teaspoon cream cheese mixture each. Fold wrappers into triangles and press the edges with a moistened fork to seal.
- In a large, deep skillet, heat the oil over medium high heat. Drop 4 wontons at a time into the oil and quickly fry, turning once. Remove when golden brown and drain on paper towels.

- In a large bowl, cream the cream cheese until smooth and add the salt. Next fold in the jalapeno, Pepper Jack Cheese, bacon bits, and green onion until well combined.
- Turn the puff pastry sheet, one at a time, onto a lightly floured surface. Use a Pizza cutter and cut the puff pastry sheet into 12 squares. Spray a muffin tin lightly with baking spray. Place a puff pastry square into a muffin tin and press into the bottom and along sides. There should be some puff pastry on the outside of the muffin tin If desired, you can trim some of the excess puff pastry if you want. Place the second sheet of puff pastry in the refrigerator until ready to use.
- Once all of the muffin tins have been lined with puff pastry, use a cookie scooper to scoop some of the cream cheese mixture and place inside the puff pastry shells. If you do not have a cookie scooper you can use a tablespoon. Bake for 20-25 minutes until the edges of the puff pastry is slightly golden.
